Refreshing Aam Panna with Sweet mango cranberry smoothie,crispy salad with tangy potato in coriander chutney

Summer is incomplete without MANGOES ,infact summer is announced by the arrival of Amiya in the vegetable market,which is used to make pickle,chutney,dal and so amny other things,but i guess the best use of Amiya is Aam Panna which is the most refreshing drink in summer apart from smoothies and shakes,prepared specially to beat the heat specially after coming back from outing in the noon,one glass of Aam Panna and all your tiredness is gone ,it cools down body temperature too.I keep stock of mint leaves and amiya in my fridge always as the temperature here in Delhi is soaring like anything...:-( Dadi used to prepare this drink during my childhood days,yesterday when i couldnt bear the heat after comin from my driving lessons i googles for the recipe

Prepared mango smoothie for dinner day before yesterday,just blended mago pulp,curd,milkand cranberries ,and ya i didnt add sugar ,perfect and filling ,quenched our thirst and hunger pang too,,;-)
These days we wait for evening thinking evening will be fine but its the same as noon,,with no mood to eat dinner is replaced by bowl of salad and mug of milk
for the salad ingredient needed
almonds 6
tomato one finely chopped
cucumber one chopped
carrot one chopped
coriander flavoured cottage cheese
pinch of salt and pepper
half tsp extra virgin olive oil
procedure
just mix everythin together
toss well
serve chilled.
Today prepared Dhania alloo after quiet a long time ,brought back many memories of Sunday lunch during summer vacations,preparation is very simple
ingredient needed
boiled potatoes (as per need )
dhania chutney ingredient
coriander leaves one cup
tomato one chopped
garlic cloves two
green chili three
salt as per taste
procedure
blend chutney ingredients together .
mix the chutney with finely chopped potatoes
serve chilled.
Dhania alloo serves as a good side dish to Tehari,and together with fresh curd and mango slices meal was complete.

Meal of Italian bread with mediterranean curry ,chinese chicken and fresh mixed fruit salad

Not always we feel like preparing a spread for dinner ,now with hubby gone and with just me and my sister around i have to think twice before preparing such spread for dinner,when hubby was around had prepared Piadine ,cashew noodles and olive chicken for dinner  pallavi had preapred mixed fruit salad in grated coconut powder and orange rind dressing .
Yesterday for dinner had mango shake and fried fara and breakfast was thandai with cottage cheese sandwhich,temperature is also rising day by day in Delhi ,yesterday it was 41.5 degree C,so that is another reason for not eating full fledged meal.
This spread was prepared about two weeks back but since i was really busy packing and arranging for MUNDAN ceremony i didnt had time to publish this post,...
here goes the recipe of Piadine which is soft unleavened Italian Bread,cooked directly on a griddle.

ingredient needed
all purpose flour one and a half cup
salt one tsp
olive oil one tbsp
water seven tbsp
italian herb one tsp
procedure
sift the flour and salt in a bowl,make a well in the center
add the olive oil and water to the center of the flour
followed by addition of one tsp of italian herb
and gradually mix to form a dough
Knead on a lightly floured surface for 4 to 5 minutes until smooth and elastic
place in a lightly oiled bowl,cover with oiled plastc wrap and let it rest for 20 minutes.
heat a griddle over medium heat
divide the dough into 4 equal pieces and roll each into 7 inch round
lightly oil the hot griddle
add one or two piadine and cook for about two minutes
or until they start to turn brown
Serve warm .
Served Piadine with Olive Chicken

ingredient needed
Olive oil 2 tbsp
Chicken 1.5kg
onion sliced one
grated ginger one tbsp
garlic cloves crushed three
paprika one tsp
chicken stock one cup(for chicken stock i used maggi chicken cubes)
saffron starnds 2 soaked in 1tbsp water
spring onions 4 chopped
15-20 pitted black and green olives
juice of half lemon
salt and ground black pepper
procedure
step one
heat oin in non stick wok
and fry the chicken on all sides till golden
step two
add onion ,ginger ,garlic paprika and seasoning and continue frying
over moderate heat ,coating the chicken with the mixture
step three
add the chicken stock and saffron and bring to boil
cover and simmer for 45 minutes till the chicken is done
step four
add the spring onions and cook further for 15 minutes
till the chicken is well cooked and the surrounding sauce is reduced to half
step five
add the olives
stir in the lemon juice
cook over medium heat for further five minutes .
Serve hot with rice or flat bread.
For Chinese Chicken with Cashew nuts
ingredient needed
skinless chicken breast fillet 175gm each
garlic clove crushed three
soya sauce 4 tbsp
cornflour 2tbsp
egg noodles 225gm
oil 3 tbsp
roasted cashew nut one cup
onion one cut lengthwise
procedure
step one
slice the chicken into strips ,place in a bowl and stir in
garlic,soya sauce and cornflour.
cover with clear flim and chill in refrigerator for 30 minutes.
step two
boil egg noodles,drain and keep aside
step three
heat oil in non stick wok
add chilled chicken and stir fry
over high heat for 3-4 minutes or until golden brown
step four
add the cashew nuts and spring onion to the pan
and stir fry for further 2 to 3 minutes
step five
add the drained noodles and stir fry for 2 minutes more
toss the noodles well and serve imediately.
For Mixed Fruit Salad  in coconut and lemon juice dressing
mix together the chooped fruits such as orange,grapes,musk melon and and cranberries
add coconut powder followed by grated rind of orange and lemon juice
toss well
serve chilled.

A tear and a Smile

 I would not exchange the sorrows of my heart for the joys of the multitude.And i would not have the tears that sadness makes to flow from my every part turn into laughter .I would that my life remain a tear and a smile.

Last year celebrated Advays first birthday in Singapore with Satyanarayan pooja at temple and dinner at Ananda Bhawan,but this year his birthday was different,with relatives around,both my parents and inlaws,there was more joy and fun,24th was his birthday and the same day was his head shaving ceremony better known as Mundan Ceremony which most of u had guessed right when i had showed u guys his pic in my previous post,hubby managed him well,
Advay was in all tears,screaming at the top of his voice,once done we could see his bald head shining :-),
i had prepared Cranberry Muffins to give to my friends on his birthday here goes the recipe
recipe source  my cake book
ingredient needed
115gm all purpose flour
1tbsp baking powder
pinch of salt
65gm light brown sugar
1 egg
175ml milk
3tbsp oil
1 cup frozen or thawed cranberries
procedure
preheat the oven to 190 degree C/375 degree F/gas 5,
lightly grease eight deep muffin cups
beat all the ingredient together except the cranberries
stir in the cranberries when the mixture is smooth
spoon in to the muffin cups
bake for 25 minutes or until lightly coloured
leave in the cup for five minutes
then transfer to a rack to cool.
this is how i had packed them in small cane baskets...
Life is not the same now ,with hubby gone to Singapore,its really difficult to manage everything on my own,today for the first time dropped Advay to his school alone,was bit nervous while driving to his school but still managed well,..12:30am will have to go again to pick him up,..so now can understand how difficult it is to manage  home and other chores,Advay is busy in his own colourful world of toys and his playschool,i guess too busy to realize that his father is not there with him,..:-) as per me i am finding it difficult to adjust to this new life,but i guess slowly i will adjust.....and ya frens i have missed reading ur posts i will be catchin with u all soon,...till thn tk cre...;-)

Nutty Cashew Icecream to beat the heat with blueberry cheesecake

Its just mid april but DELHI is already hot and hot wind called loo has already started in the noon time,only thing which is pleasent here is morning and evening,so morning first thing i do when i wake up is to open the balcony door to feel the cool breeze,just like winters i will be facing summer after some 9 yrs,winters were fine last yr though i was scared as it was first winter for Advay just like this being his first summer,...but now i feel  i have to take more care of him in this weather,...when travelling with Advay i have to take special care that sun rays dont fall on him directly or he gets irritated and starts crying,he is not used to of the scrotching heat,...:-(
Now lunch is replaced by lassi,ice creahe  and other coolers,...i just dont feel like eating anything in the noon time,..i guess its the weather effect,:-),
coming to todays post i will be sharing recipe of Cashew and Orange Icecream and Blueberry cheesecake,..perfect for the weather right,..
while going through my icecream book i saw the recipe of Cashew Icecream as i had all the ingredient in my pantry i thought of giving it a try,..
serves 4 to 6
ingredient needed
4 egg yolks
6 tbsp sugar
1 tsp cornflour
300ml semi skimmed milk
300ml whipping cream
150 gm cashewnut chopped
15ml orange juice (i have used minute maid)
grated rind of orange
procedure
step 1
whisk together eggyolk,sugar and cornflour in a bowl till it is foamy
in a pan gently boil the milk and gradually whisk into egg mixture
return to the pan and cook over a gentle heat ,stirring constantly until smooth
pour back into the bowl ,cool and chill
step 2
heat the cream in saucepan ,when it boils stir in the chopped cashewnuts,leave to cool
process the nut cream in a food processor until it forms a fine paste.
step 3
stir in orange juice and grated orange rind into the chilled custard followed by addition of creamy cashew mix
step 4
pour the mixture into freezeproof container and freeze upto 6 hrs beating twice with a fork to break up the ice crystals.
Before serving decorate each portion with orange rind curl,i didnt do this because as soon as i took ice cream out of the freezer i started to digin ,...:-)

Next day i enjoyed the icecream with blueberry cheesecake ,...mmmm combo was yummy,
....this i how i prepared
Baked Blueberry Cheesecake
ingredient
175gm cottage cheese
150gm natural yogurt
15ml all purpose flour
25gm sugar
1 egg
1 egg white
200gm fresh or frozen and thawed blueberries
finely grated rind and juice of half lemon
procedure
step 1
preheat the oven to 180 degree C/350 degree F/gas 4
lightly grease shallow round cake with baking parchment
step 2
place the cottage cheese in a food porcessor and process until smooth
place in a bowl and add yogurt,flour,sugar,egg and egg white and mix
add the lemon juice,rind and blueberries reserving a few for the decoration
step 3
transfer the mixture to the prepared tin and bake for 30 mins till it sets,
turn off the oven and leave the cake there for 30 mins
step 4
run a knife around the edge of the cheese cake and turn it out
step 5
decorate with reserved blueberries and serve warm.
I tried for the first time cheese cake and ice cream,i have tried ice candies before,..so friends please feel free to put down tips for both in the comment section,..as i feel i am still in the learning phase and my best teachers and guides are u guys my frens,..

Coconut Drops for Suyash,...and join in the guessin game,...

Days are going quiet fast this month,with so many activities and celebration time just flies away,..today is Pallavis fiances birthday,i thought of gifting him something prepared at home along with the gift coupons,since long i had wanted to prepare coconut macaroons ,so yesterday i thought of giving them a try but my sis was not happy with the shape,.:-( as macaroons are supposed to be dropped directly on the baking sheet with the help of spoon,..she told me to give them a shape,..i tried hard with rolling pin,..but failed then she shaped out the macaroons with the help of small cap,...once baked they looked more like Coconut drops,..this is how i prepared Coconut Macaroons which turned out to be coconut drops,..;-)

ingredient needed
40gm plain flour
1.5ml salt
225gm dessicated dry unsweetened coconut
170ml sweetened condensed milk
procedure
preheat the oven to 180 degreeC/350degreeF/Gas4
grease the baking sheet and keep aside
sift the flour and salt into a bowl and then stir in the coconut
pour in the condensed milk and mix stirring from the centre ,to form a thick mixture 
drop tablespoon of the mixture 2.5cm apart on the baking sheets,bake until golden brown for 20 minutes.

Yesterday our breakfast was of Thandai ,left over pav bun,plain omelet and red chili flavoured cheese
which i got from Cafe Amigos which is a German bakery in Manali near Mall road, they had plain and pepper flavoured cheese too along with cookies,buns and pies,..in my previous post i forgot to mention about this german cafe which is a must go place whenever u visit Manali,...heres a glimpse of delicacies available there,...

Virtual delight of delicacies of Manali,...

Hi frens,i know i had disapperred from blogosphere for some days reason being my exam on 4th of april and then trip to Agra at my inlaws place followed by holiday in Manali
i will be back soon with the recipes  till then enjoy the virtual treat of these local delights which we had during our stay there,
First pic is of morning tea in our resort balcony
Maggi is available everywhere there in all the eating joints and dhaba,we had at Solang valley
Another delicacy not to miss in Manali is Momo at tibetean eating joints,
we had chicken momo and shabaklay in Chopstick at Mall road
and ya spicy and tangy chana chat at gulaba where we went for skieing
and on our return journey from Manali to Delhi we enjoyed allo paratha with curd
at Raja dhaba in Sundernagar ,all thanks to our driver who guided us throughout to good eating joints,and ya our next halt was in Maruthal which is 44 km from  delhi ,we had paratha again with white butter
and ya lassi,...at Mangla dhaba,..recommended by our drivr again
I missed clicking snap of grilled fresh water trout with salad and finger chips ,if u guys ever go visiting Manali dont miss this delicacy of Manali,;-)
