one of my favorite breakfast - weekend cooking

Weekdays mostly we eat toast ,cereal for breakfast but on weekends its different its most of the time parantha with some vegetable or stuffed paratha .
Sharing with you all one such meal which we had few days back on weekends  at home ya this one is my fav. too .The meal has plain paratha,alloo bhujia,boondi rata and a glass of orange juice.

Weekend Baking - Chicken Shami Kabab Pizza

This weekend I read a good book

baked Shami kabab Pizza

and relished Chicken  Biryani

Saturday evening
6:00pm planned menu for dinner -dal ,chawal and chicken shami kabas which were being thawed
6:30 pm changed  the menu for dinner ,with thawed  shami kababs ,pizza cheese thought of preparing Chicken Shami Kabab pizza
,kneaded the dough for pizza base and kept it for resting .
7:00pm started with the sauce preparation and fried the thawed kababs
8:00 started with the rolling of pizza base and baking
8:30 Dinner Ready :-)
its not the first time I baked pizza at home but I was always disappointed by the base
few months back when I saw the recipe of The Best Pizza Dough on Eat Live Run Blog
I thought of trying out the same recipe and ya for me its The Best Pizza Dough Recipe .....
and the best part is the leftover dough can be freezed and can be used later
before baking keep it out for an hour thats all,..:-)

For the Pizza sauce 
Ingredient 
garlic clove two minced
onion one chopped
tomato pureed two
olive oil one tbsp
salt as per taste
black pepper crushed half tsp
dried italian herb one tsp
tomato ketchup one tbsp
Procedure
heat oil in non stick wok ,once oil is hot lower the flame
add garlic clove followed by chopped onion
keep stirring till the onion becomes brown ,add pureed tomato
followed by salt ,pepper and italian herb
once oil is seen along the sides ,add tomato ketchup and half cup of wtaer
let it simmer and thicken .keep aside.
crumble the fried kababs and keep aside

baking temperature 100 degree centigrade 
baking time seven to ten minutes
toppings for the pizza 
pizza sauce
pizza cheese
onion rings
crumbled kabab
how I did
divided the pizza dough into four pieces
rolled out the pizza dough
topped it with pizza sauce,followed by the crumbled kabab ,cheese and onion rings
baked in a preheated oven for 10 mins
I topped my pizza with mint and green mango chutney ,bit tangy but luved it ;-)

Chicken Biryani recipe is blogged here,prepared the same way
the only difference after the layering didnt cook the biryani dum way
instead covered the dish with a foil and kept it in preheated oven for 5 minutes
served it warm with boiled fried egg and plain curd,

so baking ,cooking ,reading and doing others unlimited chores my weekend was gone

Weekend Meal - Palak Thepla and stir fried green pea and potato

Its been so long since i prepared Thepla at home ,I have tried Thepla with Andhra Vankya Kothimeera Karam kura ,with Gujarati style bhindi fry and Chawal Thepla with Mushroom Do pyaza so for this weekend meal i thought of preparing Palak Thepla and paired it with curd,pickle and stir fried green pea with potato.

For stir fried green pea with potato / Aloo matar /Matar Ghughni
Recipe source my mother
Ingredient
Potato sliced one
green pea half cup
onion one chopped
green chili two
garlic clove crushed one
salt as per taste
oil to cook
asafoetida pinch
cumin seed half tsp
bay leaves
garam masala powder one tsp
Preparation
soak frozen green pea in water for 10 mins
drain and keep aside
Procedure
Heat oil in non stick wok
add cumin seeds,asafoetida and bayleaves
lower the flame and add chopped onion,green chili and garlic
keep stirring till onion becomes mushy
add salt followed by potato
fry for 3 minutes and add drained green pea
followed by garam masala powder
cover and cook on low flame
add few drops of water if it starts sticking
serve warm with paratha or thepla.

Cheese Paratha with crispy karela fry and cucumber raita

Some random questions are always going on in my mind,
answers to which i gonna get in the coming time ,
some of these questions are silly i know
but then i am desperate to know
Whenever i am alone ,or with thou
some random questions are always going on in mind

i guess this happeens with everyone or its just me ...? ;-)
Coming back to todays post this one is simple recipe of Cheese Paratha

,Advay likes to eat parathas a lotz so i keep experimenting with different fillings.
Follow the same procedure as given for alloo paratha ,for filling i have used shredded mozarella cheese.

Lemony Creamy Chicken Fry

I prepared this simple chicken fry with some leftover ingredients from my fridge,so there is no specific mesaurement of the ingredients ,


Recipe Name Lemony Creamy Chicken Fry
Preparation time 10 mins


for the recipe heat oil in non stick wok fry sliced onions and 2 to 3 cloves of garlic,in the time being in a mixing bowl place the chicken pieces approx two to three pieces,green coriander chutney,cream ,lemon juice,mix together,crush two cherry tomatoes and a green chili and transfer this mixture to the wok once the onions are half done,keep stirring and once chicken is semi tender ,season with salt,cumin powder,red chili powder ,turmeric powder and mix well,no need to add water as this one is dry recipe,before removing from flame sprinkle garam masala and remove from flame.Serve warm with anything,i had with wholewheat bread,...and what a meal it was,..ya its true there was no one at home with sisters out for shopping with advay i had to just cook for myself ,thus i truly both cooking and eating and ya its true sometimes cooking really acts like therapy for me,...:-),,,cee you guys soon enjoy the weekend,...till thn happy bloggin...

Bachpan ki yad Ghugni ke sath




Kala chana ghughni with poori or parantha reminds me of the frequent Sunday brunch during our childhood days . Easy to prepare and good to taste this simple dish of black chickpeas tastes good with poori ,and the side dish are curd and pickle.I still remember how eagerly we used to wait for this particular breakfast. When on nehas demand mother prepared this I had to ask her  the recipe for two simple reasons reason one being I needed the recipe and the second reason I wanted to  share the  recipe with you guys,…so here goes the recipe of GHUGHNI up style,..:-) prepared in pressure cooker.



Ingredient needed
Soaked black chick pea one cup approx. 250gm
Onion three chopped
Garlic cloves chopped three
One tsp ginger
Green chili three
Cumin seeds one tsp
Asafetida pinch
Mustard oil one tbsp
Salt as per taste
Red chili powder a pinch
Turmeric powder half tsp
Coriander powder half tsp
Garam masala powder half tsp
Procedure
Heat oil in the pressure cook .
Once hot add cumin seeds and asafetida and let them splutter for a minute
Add all the ingredients together stir fry for a minute or two till everything mixes well.
Once done add one cup of water and pressure cook till 2 to 3 whistles.
Check for tenderness and serve hot with Poori or Parantha.

Thili Dosai from Lakshmis kitchen and Wholewheat Walnut Bread

Since past two months,life has been really busy with so much to do and just 24hrs in a day, sometimes i feel i need more time to catch up with the pending work,yet whenever i feel like like cooking or get the opportunity to cook i dont miss it,first half of the day i am busy in hospital doing projects and the second half is for home,Advay,sudying,cooking and so many other things,its tough managing both home and work but i am doing the best i can,Advay has become very naughty,he keeps me on my toes,evening is spent running after him and as soon i am back from work he gets his books out from his school bag for revision,ya he luvs alphabets and is in luv with them ,he has started conversing in his own language and tries to catch up with us not to miss he luvs chatting with his father on Skype which is our daily routine these days,coming back to cooking

I tried Thili Dose
from Lakshmis space which is yum i am going to make this again,perfect for beakfast and brunch we enjoyed this with mango pickle ,thanks Lakshmi for the recipe gonna try ur moong dosai soon,..;-)




and ya i did bake whole loaf of Walnut Bread
from my baking dairy ,this is ow the recipe goes,...

Ingredient needed

420gm wholewheat flour

150gm whitebread flour

12.5ml salt

550ml lukewarm water

15ml clear honey

15ml active yeast

150gm walnut pieces

1 beaten egg to glaze


Procedure

STEP 1

Combine wholemeal and whiteflour and salt in a large bowl,make well n the centre and add 250ml of water ,honey and yeast.

set aside until yeast dissolves and becomes frothy.

STEP 2

Add more water,and mix to form smooth dough.

STEP 3

Transfer to a floured board and knead,adding flour is necessary,until the dough is smooth and elastic.Place in a greased bowl and roll the dough around in the bowl to coat thoroughly on all sides,cover with clear film and leave in warm place until it doubles in volume for about one and half hrs.

STEP 4

Knock back ( punch down ) the dough and knead in the Walnuts evenly.

STEP 5

Grease a baking sheet,shape the dough into a round loaf and place on the baking sheet .Press in walnut pieces to decorate the the top.Covel loosely with a damp cloth or clear film and leave to rise in a warm place until it doubles in size .

Step 6

Preheat the oven to 220 degree centigrade,bake for 15 minutes,lower the heat to 190 degree centigarde and bake until the base sounds hollowwhen tapped for about 40 minutes.

I had baked this loaf for my sis,..and ya she did liked it,..

hope u guys r doing good,weather is quiet pleasent from past few days,so feeling good,otherwise i guess we had the longest summers this year,.

Brunch of green pea fry and dinner of pizza enjoy,..:-)

Few days back i was not in mood to preapare dinner ,because Advay was down with cold and cough to cut things short i decided to go ahead with pizza,didnt want to work much on topping so for topping i used tomato onion paste,capsicum slices,garted cheese and cottage cheese flavoured with chives.
to prepare Cottage cheese flavoured with chives i mixed half tsp of chives in one cup of chopped cottage cheese ,kept them aside for 10 minutes, after 10 minutes shallow fried them in one tsp of oil,once done keep aside .
assemble everything on pizza base,and keep in preheated oven for less than 10 minutes,mine was done in 8 minutes.
Most of the times when i am alone at home i skip breakfast and go ahead with brunch ,to satisfy hunger pang i prepared for myself egg toast and fresh green peas fry
For fresh green pea fry-
heat one tsp of oil in non stick wok add half tsp of cumin seeds followed by coarsely pounded one red chili and finely choped onion keep frying till onions start changing colour,once done add salt and green peas if possible cover for some and keep checking,once green peas start chnging their shape ad dhlf tsp of garam masala powder and half tsp of lemon juice,stir for a min or two and remove from flame,serve hot.
For egg toast
i have used Dalia bread which was quiet filling,i carved out heart shape from centre of the bread,kept it aside,in non stick pan add few drops of oil,once oil becomes hot keep the carved toast on the pan and fill the centre of the bread with egg yolk,once brown from one side,change the side to toast the other side,once done remove from flame nd keep aside,.
to serve place egg toast,carved out heart and green peas enjoy platter with hot tea of cofee,..

HOME MADE RICOTTA CHEESE AND CORIANDER CHUTNEY PIZZA WITH THAI NOODLES AND TOFU...,..

REMEMBER CHICKEN MUSHROOM PIZZA,..PREPARED FEW DAYS BACK,,,,THE PIZZA WHICH I PREPARED YESTERDAY WAS TOTALLY OPPOSITE TO THAT,..IT WAS AROUND 2pm i guess..i started feeling hungry,..checked in freeze ,..bad luck no leftover,..saw pizza base,..but for topping i had no mood to do the preparation,..i saw coriander chutney too..shredded cheddar cheese,and home made ricotta cheese,..thought of playing with these ingredients to create topping for pizza,.i took out Tabasco garlic pepper sauce too from fridge,..
procedure for topping
applied coriander chutney evenly on the base
followed by home made ricotta cheese
finally shredded cheddar cheese and few drops of Tabasco garlic pepper sauce
microwaved it for two minutes
first bite of the pizza and i just loved it,..
easy to prepare in less then five minutes

TOFU WAS SOMETHING I HAD NEVER TRIED,..MY SIS AND HUBBY DIDNT LIKE IT MUCH,..BUT AFTER SEEING SUCH NICE RECIPES WHILE BLOG HOPPING I WANTED TO TRY TOFU ATLEAST ONCE,..FINALLY TO CURB DOWN MY ANXIETY HUBBY GOT SILKEN TOFU...I HAD SEEN BIG CHUNKS OF TOFU BEING SOLD HERE IN GROCERY STORE,,,BUT THIS WAS SOMETHING LIKE CHEESE...FINALLY ON ONE LAZY SUNDAY...I THOUGHT OF TRYING TOFU..I HAD THAI NOODLES AT HOME,,.I CHOPPED ONE ONION TWO GREEN CHILLIES,..TOOK OUT THE TOFU FROM THE BOX,..AS THEY WERE IN SEMILIQUID STATE IT WAS DIFFICULT TO CUT THEM ,..
PLACED WOK ON BURNER AND BOILED THE THAI NOODLES,..
ONCE DONE KEPT THEM ASIDE
ADDED HALF TEASPOON OF OIL IN ANOTHER WOK,..
ADDED ONIONS AND GREEN CHILLIES,..FRIED FOR FEW MINUTES
FOLLOWED BY TOFU..SALT AND PEPPER,..
TOPPED WITH TABASCO GARLIC PEPPER SAUCE,..
REMOVED FROM FLAME,...
EATING FOR THE FIRST TIME I WAS REALLY APPREHENSIVE ABOUT THE TASTE BUT I LIKED IT,..AND WILL TRY AGAIN SOON...;-)

A SWEET SURPRISE WITH SWEET CRANBERRY RABDI AND EGG MASALA IN WHEAT WRAP

Few days back ADVAY had pulled grocery bag from dining table which had eggs in it,..10 eggs got cracked ,..so i took out the egg yolk from the cracked egg shells and kept them in the fridge,..since then once a day we are having egg in any form,..got bored of making bhurji and omelette i thought of using wheat wrap roll..remember wheat wraps which i had used for chicken ..yesterday made something similar to that,...here goes the recipe for
masala egg with cheese stuffed in wheat wrap
ingredients needed
three eggs beaten with one tbsp milk
one onion chopped
half tomato chopped
one fourth ofcapsicum chopped
cumins seeds half tsp
salt according to taste
half tsp red chilli powder
half tsp turmeric powder
shredded cheddar cheese one tbsp
tabasco garlic pepper sauce one tsp
wheat roll one
procedure
heat half tsp oil in wok
add cumin seeds
once they start spluttering add chopped onion ,capsicum and tomatoes,
once onions start changing colour,..add salt, red chilli and turmeric powder
keep stirring till masala blends well with the onion and tomato
now add beated egg mixture to the fried masala
stir well for few minutes and remove from flame
spread out the wheat bread
add egg mixture in the middle
top it up with shredded cheddar cheese and tabasco garlic pepper sauce
roll it in the form of roll
microwave for a minute
enjoy hot with tea or coffee,...

felt like eating something sweet,..yesterday night it was already 11pm,.but couldnt control myself,..had cranberries in fridge dried ones
so thought of making cranberry rabdi
ingredients
milk half litre
cranberry dried half cup
sugar according to taste
procedure
heat milk in wok
keep stirring till it becomes thick in consistency
while milk is on flame make paste of cranberry and sugar
add few drops of water to make smooth paste
once milk attains the consistency needed
remove from flame and add the cranberry paste
garnish with chopped cranberries
keep in freeze to chill
it was yummylicious,..rabdi with a twist...
both hubby and advay liked it,..
