Last weekend was long weekend for us due to Chinese New Year celebration ,long weekend for me means no time for me time and that's how it went ,today I thought of taking some break from cooking and baking which has been going on since past few days and sharing with you all these delicious cookies which I baked yesterday inspired from a book which I got from library
Recipe name - Lemon and Almond Shortbread Cookies
Recipe source cookbook
Ingredient
Unsalted butter half cup
Sugar half cup
Egg one
Vanilla extract half tsp
Finely grated zest of one lemon
All purpose flour one cup +one fourth cup
Almond finely grounded half cup
milk one tbsp to brush
two tbsp raspberry preserve
Preparation
line the baking sheet with parchment paper and keep aside
preheat the oven to 100 degree centigrade
Procedure
Beat the butter and sugar in a bowl till pale and creamy
add egg ,vanilla essence and lemon zest and beat again
add the flour and the ground almond
shape the dough into two flattened disc
wrap in cling film and chill till firm
roll out one piece of the dough on the floured surface
stamp out desired shape with help of cookie cutter
continue doing the same process till all the dough is used
transfer the heart shaped cookies on the prepared baking sheet
brush with the milk ( i forgot this step)
place one fourth tsp of raspberry preserve in the middle of the cookies
place the remaining cut out shape on the top
press around the edges to seal
sprinkle with sugar and almonds
bake for 10 mins till light brown
let the cookeis cool on the baking sheet ,till they harden a little
transfer to rack and let it cool.
I baked some plain one too without the filling of the raspberry preserve they were delicious too
Next time maybe i gonna try these cookies with orange zest ,i guess they gonna be equally delicious too ,

Preparation for the weekend ,...
Today I baked bread
prepared kalonji masala
and kneaded dough and kept in freeze
for the weekend
Friday is busy day for me as I have to plan for the weekend ,so most of the time I do some preparation for the weekend and that's what I did today,sharing some make ahead preparation
dough for paratha /spinach paratha
had spinach paste in freeze which I had prepared by boiling spinach leaves for 10 mins and then running the leaves through the blender.
In a mixing bowl add two cup wholewheat flour,salt,red chili powder,carom seeds and the spinach paste and knead to a smooth dough if needed add few drops of water and half tsp of oil.once done keep in an air tight in freeze.
For the Kalonji Masala/Bharwa Masala
Ingredient
cumin seeds one tsp
fennel seeds one tsp
carom seeds one tsp
nigella seeds one tsp
fenugreek seeds four to six
asafoetida pinch
Procedure
Dry roast all the ingrdients listed above for five to seven minutes
let it cool and then run through the blender
store in air tight box .
this masala can be used to stuff brinjal,ladysfinger,bittergourd or for potatoes
Ingredient
potato sliced two
onion one chopped
garlic clove grated two
green chili chopped one
salt as per taste
kalonji masala one tbsp
red chili powder half tsp
turmeric powder half tsp
coriander powder half tsp
garam masala powder one fourth tsp
mustard oil one tbsp
asafoetida pinch
cumin seeds half tsp
Preparation
mix kalonji masala with salt,red chili powder,turmeric power and coriander powder ,
add few drops of water ,keep aside.
Procedure
heat oil in non stick wok/kadai/pan
once oil is hot add asafoetida followed by cumin seeds and let it splutter
lower the flame and add chopped onion followed by garlic and green chili
keep stirring till onion starts turning brown and add kalonji masala paste
fry for a minute and the potatoes followed by garam masala powder
cover and cook till the potatoes are done.
serve warm,tastes best with plain rice and dal,..

Weekend Baking - Vanilla Cake with Rose Butter Cream Icing
Last week was spent in baking ,
baking and baking ,...;-)
and icing the baked goodies
and celebrating life and everything good,
baked vanilla cake after a long time
way back in Feb 2009 ,
I baked this simple cake from Chams space
last week I baked the same cake with altered ingredient
and frosted it with rose butter cream icing and added some sprinklers
and relished like anything ,..;-)
Recipe name Vanilla Cake with Rose Butter Cream Icing
Ingredient for the cake
dry ingredient
All purpose flour one cup
salt pinch
baking powder one tsp
wet ingredient
sugar half cup
butter one fourth cup
vanilla essence one fourth tsp
milk two tbsp
egg one
Preparation
grease a 8 inch cake pan and keep aside
preheat the oven to 100 degree centigrade
Procedure
In a mixing bowl stir all the dry ingredients and keep aside
In another mixing bowl beat the sugar and the butter till creamy
add vanilla essence followed by egg and milk
mix to a smooth mix
and mix the dry ingredient
pour the batter into the prepared tin
and bake till its done
let it cool and do the frosting.
Rose Butter Cream Icing
one cup icing sugar
pink colour one drop
rose essence one fourth tsp
unsalted butter three tbsp
milk one tbsp
Procedure
In a mixing bowl mix butter and sugar till creamy and fluffy
gradually add milk,rose essence followed by pink colour
and mix to a spreadable consistency
spread on the cake with help of spatula
sprinkle edible silver balls and let it set for few minutes.
baked this eggless coconut cake for my friend's birthday
and this eggless chocolate cake with rose butter cream frosting for another friend,..:-)

todays special - Pear Cake for Mothers Day
Today was just like any other day or any other weekend
the only difference was that i paired my morning coffee with coconut cake
smeared the coconut cake with a rich layer of kaya
and sipped the coffee and relished the cake till the last crumb
and thus started the day sipping coffee,reading Blogs and teaching Advay ...
Today was just like any other day ,the chores were the same
i didnt had a minute to spare or breath
still I managed to bake this cake
just because today was Mothers Day,,,:-)
Wish all the Gorgeous Moms out there in Blogosphere A very happy Mothers Day ,..
Few days back i was discussing something about Mothers Day with Hubby,
Advay who was sitting there said ," I know what happens on Mothers Day"
Me - "how come ?"
Advay - " flower and card is given to Mummy "
Me - " But who told you ,i never discussed Mothers Day with you "
Advay - "Mam told ."
Me - " so will u get card for me ."
Advay - " yes i will..."
and thus he got this sweet card on Friday which he did in the craft class in his school this sweet card really made my day,..

Baking time 20 mins
Baking temperature 100 degree centigrade
followed the recipe without any change,
altered the quantity of sugar from three fourth cup to half cup,

weekend baking - garlic rolls
Its been so long since i baked bread at home
or worked with yeast ,
but when i saw my sister baking bread almost everyday
in New delhi
i was inspired to bake again
yesterday while Bloghopping i saw
garlic rolls blogged by Prema
i had tried them earlier from Raks space
and thus i tried again
and ya i luved them and
will be baking them soon again...;-)

today is the day ,...:-)
today when i got up,i had a smile on my face

Vanilla Cupcakes for A decade has passed we bake to remember 11-09-2001
10 yrs back i was not that mature
10 yrs back i didnt realise what happened
on 11th September 2001
when twin towers were attacked by two planes in Newyork
first i thought that it was an accident
then later heard that it was deliberate attempt
Now its gonna be 10yrs since that incident
10 yrs back i was in first year of my college
i had my own problems ,my own inhibition
i was to busy to realise what was happening
i was occupied with so many other things
10 yrs back internet was just used to exchange mail
or to connect with friends
but now things have changed
i am glad with time i have become more aware
and more mature
Marla of Family Fresh Cooking
has asked us to Bake a Cake
or a cupcake or muffin
in rememberance of 9/11

I baked simple Vanilla Cupcakes
baking temperature 100 degree centigrade
baking time 5 to 7 mins
yield 12 mini cupcakes
INGREDIENT
all purpose flour one cup
salt pinch
sugar half cup
baking powder one tsp
butter one fourth cup
vanilla essence half tsp
milk one fourth cup
egg one
Preparation
Line a muffin tray with liners ,keep aside
Procedure
In a mixing bowl mix all purpose flour,salt ,sugar and baking powder
add butter,vanilla essence and milk and mix everything together for a minute
add egg and mix with hand blender to a smooth mix,
scrape the sides of the bowl with spatula
spoon the mixture into the cupcake liners
bake for five to seven minutes
remove the cupcakes and place on wire rack to cool
once completely cooled ,ice or decorate.
For decoration
Royal icing
red colour
sprinkles

Weekend Baking - Double Chocolate Muffin from Soma of Ecurry
Most of the time when i am blog hopping i get inspired to prepare the dish the same day
yesterday i was inspired by two recipes,one traditional and the other of baked goodie
i went for both and i am so glad i did
will be sharing one today and the other tomorrow
Thanks Soma of Ecurry for sharing the Double Chocolate Walnut Muffin recipe
i followed her recipe without any change
substituted
walnut with pistachio
orange liquer with vanilla essence
vinegar and applesauce with egg
mixed ,baked and enjoyed warm
with my favourite coffee...:-)

Back with Eggless Sponge Cake from Sunitas Space.
I know i just dissapeared from blogosphere,reason being my unexpected trip to India as my mother was sick,last month was preety hard for all of us but thanks to God everything is fine now,she is feeling much better now and got discharged from hospital yesterday.
Coming back to todays post sharing with you all simple cake which i prepared from Sunitas Blog .

Baking time 10 mins
Baking temperature 100 degree centigrade
Procedure
Followed the recipe as given in her space without any change.

once baked ,cut the cake into square pieces.
placed thin layer of blueberry preserve in between two pieces
thin layer of cream cheese on the top and some sprinklers ,
serve chilled.
