Sankranti special comfort food - Khichdi

Wish all the Readers of Asan Khana Happy Makar Sankranti ,Pongal,Khichdi,Bhogali Bihu and Uttarayan
As it is a ritual to  prepare Khichdi for lunch ,Prepared this simple Khichdi with rice and chilke wali urad dal.

ingredient needed
Chilke wali Urad dal 50gm
Rice 50gm
salt as per taste
turmeric powder a pinch
ghee pne tsp
ginger grated half tsp
pinch of asafoetida
Procedure
heat ghee in pressure cooker
lower the flame and add asafoetida and ginger
followed by rice and urad dal
fry for a minute or two
add salt,turmeric and water and pressure cook for 3 to 4 whistles.
Serve hot with curd,pickle and Chokha.

quick fix meal - rice with veggies

Bowl of leftover rice,few veggies ,dash of salt and pepper,pinch of dried chives and few drops of olive oil thats how i prepared this Veggie fried rice,these days i am not giving much time to cooking because of my exams,:-( thats the sad part thats why my posts are flooded since past few days with quick fix meal specially when i am alone  in the kitchen cant help ....

Coming to this recipeof Veggie Rice
Ingredient needed
Leftover rice one bowl
mushroom 3-4 chopped
brussel sprout two chopped
cabbage chopped handful
olive oil half tsp
salt and pepper as per taste
dried chives a pinch

procedure
heat oil in non stick wok
lower the flame
add the veggies followed by salt and pepper
stir fry till the veggies are tender
add left over rice,mix well,followed by addition of chives
Serve hot .

Perfect day with perfect meal of Tehri,grilled tomato chutney and pickled green chili

Comfort food at home
,,..this wasnt planned but with Neha my sis around plans can be made anytime,..so today finally we decided to watch   this movie called Ajab Prem Ki Gazab Kahani,i was bit wary about the movie but still took the chance,i needed much needed break from books and thesis too,..so after sipping cofee at Barsita and some chit chat  

we headed straight foR the movie ,again something which makes u feel good,..decent love story in a small town ,loved all the numbers too of the movie and ya both Ranbir and Katrina share really good chemistry on screen,..;-)
Our lunch back home was of Tehri with char grilled tomato chutney,fresh curd and home made pickle of green chili.

Tehri is prepared quiet frquently at our place during winters,..enjoy the platter frens

Good old days are back again,...




Good old days are back again, ya guys my younger sis is back with bag and baggage from London, so now I wont be sighing  and feeling bad that I don’t have company ,I know  I can count on her for the monthly trip to the parlour, or can catch Friday night movie, go for coffee break and do so many other things,I guess sisters are the best gift god has given us isn’t it,…I prepared kheer for her the day she arrived,here goes the recipe
Ingredient needed- rice half cup, milk two cup, mithai mate three tbsp, saffron strands a pinch, cardamom two, ghee one tbsp,two tbsp coconut powder blanched almonds to garnish
Procedure- Heat ghee in non stick wok, add green cardamom, and the soaked rice fry for a minute or two, add milk and keep stirring on low flame once the milk boils add amul mithai mate, followed by saffron strands and coconut powder, let it simmer for 15 to 20 mins till the kheer thickens. Consistency can vary depending on ur need I usually like thick consistency.Once done remove from flame and serve garnished with blanched almonds.

Glutinous Black Rice Pudding for my Mom

 

This post is specially for my Mom as today is her birthday, couldn’t plan anything special for her as I was really dead tired after yesterdays Karva Chauth Fast for which I had gone to my inlaws place ,evening thought of giving her surprise by preparing something sweet as dinner was already prepared I thought of preparing pudding for her and thus tried my hands in preparing   Glutinous Black rice pudding,


Ingredient needed

Small bowl of black rice

Water to cook the rice

Amul mithai mate two tbsp

Blanched almonds few

Procedure

Heat water in non stick wok and cook rice

Once rice is semi cooked add mithai mate and keep stirring

Lover the flame and cover and cook for some time

Once done serve warm or chilled garnished with blanched almonds,…

Teekha kori rotti or bari chutney thande raitha or lassi ke sath.

.
Since past few days our meal was just salad and fruits, so today thought of preparing something spicy for lunch, further there were guests coming home for lunch, which was another reason for me to prepare a spread, I wanted to try something regional, so browsed through the net for the recipes and finally zeroed in for Kori Roti recipe which is taken from here,

traditionally eaten with roti in Managlore which is crisp rice flake preparation, but we enjoyed spicy curry with cranberry flavoured fried rice,onion tomato raita and bari chutney.

For Cranberry flavoured rice- prepare rice the usual way or leftover rice can be used to,heat oil in a nonstick wok,add pinch of cumin seeds, handful of chopped onions, half of chopped green chili,pinch of salt, keep frying till the onions start changing colour, I fried till the onions were brown ,now add cooked rice ,mix well followed by pinch of pink colour and dried cranberries. Mix well and serve warm with curry of your choice

This is how I  prepared chutney
Mix togeter one or two spiced bari, coriander leaves chopped ,garlic 3 cloves, salt  as per taste,run through the blender, Chutney is ready.
onion tomato raita- beat curd ,mix chopped onion and tomato.add pinch of salt and red chili powder.
These days my morning cup of tea is replaced by glass of Lassi,I keep experimenting with different ingredients which I can add in curd and run through the blender,but one thing which remains most of the time same is Malai wali lassi.
This lassi reminds me of a small market in my hometown where this kind of Lassi was sold in large kulhad topped with malai and so thick that we needed spoon to finish it off,I tried to recreate the same at home,but couldn’t prepare that thick which we get in the market .
This is how I did,- add almonds,sugar, kewra water essence to curd and run through the blender,once done transfer to the serving glass and top it with fresh malai.
Malai wali lassi is ready to be indulged,..enjoy,..

Moroccan Rice Pudding

Never thought could prepare kheer in Badam milk,when i saw the recipe of Moroccan Rice Pudding in my mediterranean cookbook i thought of giving it a try,preparation is quiet simple and easy,..i have varied the ingredient depending on my need ,the measurement below is the exact measurement given in the book,


ingredient needed

25gm blanched almonds chopped

450gm pudding rice

25gm icing sugar

7.5cm cinnamom stick

50gm butter

pinch of salt

1.5ml almond essence

175ml milk

proceudre

Step 1 to extract the Badam milk

Put the almonds in the food processor with 4 tbsp of hot water,process and push through a sieve in a bowl,return to the blender ,add further 4 tbsp of hot water and process again.Push through the sieve into a sauce pan.

Step 2

add 300ml water to the almond milk and bring to a boil,add rice,sugar,cinnamon and half the butter,salt,almond essence and half the milk.

Step 3

Bring to boil,then simmer,covered for 30 minutes,adding more milk if necessary.

Continue to cook the rice ,stirring and adding the remaining milk until it becomes thick and creamy.

Step 4

Pour the rice pudding into a serving bowl, and serve warm or if desired chilled.

up ka paratha, hyderabad ki biryani, lassi tarbooj ki or soup hai badami,...






















Urad kachori is a must prepared delicacy during Holi festival ,but i didnt knew that parathas could also be prepared with kachori mixture,last year when i prepared Kachodis in Singapore i asked my mother what to do with left over filling,she told me to prepare parathas with them,so this year when there was leftover filling in the fridge,i thought of making Parathas and ya they turned out delicious and crispy,procedure is same as allo ka paratha reipe which i have blogged earlier its just that instead of allo mixture kachori mix has to be filled in,we enjoyed crispy urad dal parathas with allo gobhi tamatar sabji and bharwa lal mirch ka aachar.
ingredient needed for Allo Gobhi Tamarar Sabji
cauliflower florets chopped and kept in boiled water for 5 minutes drain and keep aside -one cup
potato peeled and cubed one
tomato chopped one
onion chopped one
cumin seeds half tsp
salt to taste
oil one tbsp
turmeric powder a pinch
red chilli powder a pinch
garam masala a pinch
procedure
heat oil in non stick wok
add cumin seeds and once they start spluttering add chopped onions
once the onions start changing colour add tomatoes and mix well
followed by addition of salt ,red chilli and turmeric powder
keep frying till oil is seen along the sides
now add chopped potates followed by cauliflower
if needed sprinkle few drops of water and cover and cook.
before removing from flame sprinkle garam masala powder mix well and simmer for 2 to 3 mins
serve hot with parathas.

i have got yummy dinner platter for you all ,thanks to Usha of spicy kitchen for sharing recipe of Hyderabadi Mutton Biryani,i was searching for the recipe on net and saw on her blog,she has given detailed description how to prepare authentic hyderabadi biryani,i followed her recipe except for the last part,in the last part of the recipe she has baked ,which i didnt do,i did the last part on stove top,if u guys r crazy about hyderabdi biryani do go through her blog,..:-) we enjoyed biryani with onion cucumber raita and spicy avocado,cucumber onion and onion salad in lemon and pepper dressing.
for the cucumber raita-beat curd well ,mix chopped cucumber and onion.sprinkle freshly ground pepper and pinch of salt,mix well .Serve chilled.
for spicy salad- finely chop onion,cucumber,avocado and yellow pepper,in another dish squueze out lemon juice,add pinch of salt and pepper.mix the dresing in the chopped salad ingredients ,toss well.Serve chilled.

In Delhi heat is on,so frequently prepared tea and soup at home is replaced by lassis,kulfi,smoothies and chilled soup,so u guys gonna see more of summer coolers recipe in my blog today i am going to share Watermelon Smoothie and Chilled Almond Soup
Recipe for Watermelon and almond smoothie
ingredient needed
chopped watermelon one cup
almonds seven
curd one cup
sugar as per taste
ice cubes four
procedure
Blend everything together to a smooth mix.Serve chilled.
Chilled Almond Soup i prepared from my Mediterranean Cook Book
here goes the recipe
ingredient needed

115gm fresh white bread
1 cup blanched almonds
garlic cloves two sliced
5 tbsp olive oil
one and half tbsp sherry vinegar
salt as per taste
pepper a pinch
tp garnish toasted almond flakes and seedless sliced grapes.
procedure
mash the bread in bowl add 150ml of water and keep aside for five minutes
blend almond and garlic in a food processor to a smooth paste
add soaked bread to the almond mix followed by oil,sherry vinegar and two and a half cup of cold water
process till smooth paste
transfer to serving bowl and season with salt and pepper
before serving scatter with toasted almonds and grapes.

Chatpta kathal ka achar khichdi ke sath,..and ya i need ur help,..;-)

 
I have already blogged about Khichdi being our regular saturday meal but on Monday i just felt like having this comfort food,forgot to add turmeric thats why u see pale white colour but taste wise it was perfect and together with plain curd,grilled tomato chutney,kathal achar and sago papad the whole platter was yummy,i guess sometimes HAPPINESS IS EATING WHAT U LIKE and thats how i felt Happy and satisfied.:-)

Kathal Aachar is home made prepared by my mom
ingredient needed for Jackfruit Pickle
Raw jackfruit one kg chopped
mustard oil
salt as per taste
for masala
50gm each of coriander seed ,cumin seed,fennel seed,carom seednigella seed and mustard seed
one tbsp fenugreek seeds
turmric powder one tsp
red chilli powder one tsp
asafoetida half tsp
dry fry on slow heat coriander,cumin,fennel,carom ,nigella and fenugreek seeds
to the fried masala add mustard seed,asafoetida,red chilli powder and turmeric powder
run through the blender
pickle masala is ready
preparation
heat water in wok,once wate starts boiling add chooped jackfruit for two minutes ,drain and keep aside.
spread the drained jackfruit on a plastic sheet and let it dry in sun
procedure
in a dry and sterile preferably glass jar add the sun dried jackfruit followed by prepared masala
add required amount of salt and stir well
add mustard oil in the jar and shake well
cover and keep.
Pickle is ready to use,..enjoy with paratha,khichdi or whatever u like,..:-)

is off for Sanghis event Fall in Love with tomato ,i prepared tomato chutney as the chutney add extra flavour to the plain khichdi and moreover i luv this chutney specially with parathas its mine all time favourite.

Khichdi ,grilled tomato chutney and kathal pickle to her event,this thali is typical uttar pradesh thali so my entry is under uttar pradesh cuisine,..

Kathal pickle is also off for lakshmis SWC food on wheel event, kathal pickle goes well with plain poori and parathas.

thoda thoda khatta thoda thoda teekha chola kulche ke sath or babycorn salad hai saath


Its been a very long time since i prepared chickpea in my kitchen so today when i got the opportunity again to experiment in kitchen thanks to Advays afternoon nap,i thought of preparing chickpea curry,salad and ginger rice  ,though i have tried sindhi style and punjabi style and have my own chola recipe i wanted to try something different this time,,something which is spicy and tangy too,..i could imagine the taste while i was thinking what to add and what not,..sounds strange na,..i know but thats how i cook whenever i am experimenting,..:-)most of the time i start the tadka with cumin seeds but this time i thought of going ahead without them,and ya for the first time i used chola masala so the ingredient needed for
khatta and teekha chola curry-
boiled chickpea two cup
onion three chopped
garlic six cloves chopped
ginger one inch chopped
salt to taste
red chili powder one tsp
catch chola masala three tsp
cloves half tsp
black pepper half tsp
dried red chili three
bay leave two crushed
black cardamom two
tamarind pulp two tbsp
procedure
heat one tbsp oil in non stick wok
once oil is hot lower the flame and add clove,black pepper,red chili,crushed bay leaves and black cardamom,
once they start spluttering add chopped ginger,garlic followed by onion
keep frying till onions start changing their colour,once done add catch chole masala and red chili powder
fry further till oil is seen along the sides,now add tamarind pulp and fry further for a minute,.
add boiled chickpea and mix well with the masala
once done add one cup of water and cover and cook
remove from flame and serve hot s with kulcha or pulao
i served with ready made kulcha and ginger rice and salad
Ginger rice-
for ginger rice heat one tsp oil in non stick wok,add half tsp of cumin seeds once they start spluttering add one tbsp of grated ginger,once ginger starts changing colour add cooked rice and fry to mix well ,once done add orange colour and mix properly to attain uniformity.
for Salad
steam chopped mushroom and babycorn in microwave for two minutes,once done drain and keep aside,mix salt,pepper,chopped lemon leaves and chopped tomato ,toss well and serve chilled,guys thanks to my memory loss i have really forgotten what these herbs are known as they have lemon like flavour,when i bought them yesterday i saw the name but as soon as i reached the home i was blank,..:-(do let me know if u guys know the other name of these leaves...
Hubby is big fan of chola curry and i knew he was missing chola since  long time because at one particular time before our marriage chola curry with rice    was his regular meal so tangy and spicy chola curry is dedicated to him , chola curry  off to Alka of sindhi rasoi where she is on with Just for you event.
  Lakshmi is on with SWC salad where she is asking everyone to prepare quick and healthy salad within 15 minutes so steamed salad is off to her space
Chola bhatura combo is famous pair but chola also goes equally well with rice too,..so i am sending  Khatta and teekha chola curry with ginger rice combo to made for each other event hosted by Asvadha.

And the yellow parade continues,..:-)

Life is not the same as it was before,now i dont get time to do few of my favourite things :-( but then i know that with time things change and our priorities too,..since past few days i was not able to post as so many things were keeping me busy,..weekend was busy meeting relatives..and then once Monday is there theres no looking back,..with the daily chore of preparing breakfast,packing tiffin,and other stuff,..time just flies away...and by evening i just feel like winding up everything nd going straight to bed,..my cousion asked my today before leaving whether i will be able to meet her on Sunday,..i told her its not possible as saturday i will leave at 9:30 in the morning and be back by 9:30 in the evening,..because of the part time classes so Sunday i just want to relax and then my younger sis told her,...this is "Life in Metro"its not easy,..i couldnt help smiling when i heard this from my younger sis,..but then she is so right,..back in Singapore though i was at home doing everything on my own ,  i could take out time quiet easily for reading books,paintaing and so many other things but here though there is someone to help with daily chores still i get tired ,i dont get much time for my own things,..but one thing is there i am happy,..;-) i was happy back there too by doing things which kept me busy and now here daily grind of going to work,managing home,is keeping me busy,.
Coming back to this post Tehari is one of the regular one pot meal prepared in uttar pradesh specailly during winters,..i prepared Tehari
and paired with plaintain fry,mix veg salad,poopadum and red chilli pickle ya the same about which Sunshinemom has written in one of her post,..this one is prepared by mom and ya this one tastes best with any version of rice,..specially with plain rice,..

Plaintain fry-rub turmeric na dred chilli powder to sliced plaintain,heat one tsp of oil,once hot slide the spiced plaintain,sprinkle salt and and keep frying till brown from both sides,enjoy hot
Mix Veg Salad in low fat curd - in a mixing bowl add finely chopped cabbage ,carrot and capsicum,add pinch of salt and pepper ,mix well,add one two tbsp of low fat curd,serve chilled.
The below Thali has Masala dal fry ,chapati,baingan bhartha and palak panner
Dhaba style Masala dal fry- after preparing arhar dal the usual way,mash properly and keep it aside,in another non stick wok add half tsp of ghee followed by finely chopped one onion ,half of tomato,one clove of garlic and half of green chilli ,keep frying once done add dash of red chilli powder and coriander powder,fry further for a minute or two, add mashed dal and keep stirring ,remove from flame and garnish with finely chopped coriander leaves before stirring.
Below thali consists of dry veg sabji Allo methi dal and coriander chutney

Dhania chutney - coriander leaves one cup,garlic cloves two,half of tomato ,green chilli one,salt according to taste,mix everything together and run through blender,hot and spicy dhania chutney is ready.
Below thali consists of Makki ki roti with tava fry paneer and kathal sabji
Recipe for Makki ki roti is adapted from here ,
for tava fry panner just marinate thick slices of cottage cheese with turmeric,red chilli and salt for few minutes,heat half tsp of oil on non stick tava ,once oil is hot slow down the flame and place the marinated pieces on the tava,once brown from both sides remove from the flame and serev hot with any chutney,..
Below thali consists of Sprouts salad with carrot and brinjl subji with pea,..
For sprouts salad just mix sprouts finely chopped onion and carrot,..add hlf tsp of lime juice and salt,..
Dhania chutney if off to Ramyas mane adige where she is on with Chutney /dip Mania event.

Republic Day Special salad,..:-) and virtual treat of past posts in Yellow,..enjoy,..

These days morning is very busy after preparing morning 6am tea which i share with my sis,,.my next agenda is to pack tiffin for both of us,..most of the time its Salad and we keep trying different dressing or it becomes too monotonous,..;-) Tody i will share recipe of Mix Veg Salad in Red Wine dressing

to prepare the Mix veg Salad i have used chooped cabbage,carrot,capsicum,and other leftover ingredients from fridge which included torn pieces of bread,boiled egg white,cottage cheese,
mix all the veggies together with egg,bread pieces and cottge cheese,half tsp each of salt,pepper,sprinkle few drops of red wine vinegar ,add dash of oregano..:-),chopping veggies is the only time it takes to prepare this Salad,..;-) as all the three colours orange,white and green are there and Republic day is round i hve named this Salad Republic Day special-tricoloured Salad

Prepared Vangi bhath from Vanis blog  recipe here,..paired it with onion raitha,allo fry,bharwa mircha and chana fry

for alloo fry just heat one tsp of oil in non stick wok ,add cumin seeds once they start spluttering add chooped potatoes,salt ,turmeric powder and pinch of red chilli powder,..keep fryin potatoes till done,..serve hot with rice...
for kala chana or desi chana fry-heat half tsp oil in non stick pan ,add half tsp cumin seeds ,once they start spluttering add chopped onion and green chilli,followed by sprouted black gram,add dash of black pepper and salt,keep stirring,..serve hot...
