Coming back to todays post this one is simple recipe of Cheese Paratha
,Advay likes to eat parathas a lotz so i keep experimenting with different fillings.
Follow the same procedure as given for alloo paratha ,for filling i have used shredded mozarella cheese.
we enjoyed the paratha with cucumber raita and crispy karela fry , recipe blogged here.

300th post with ...:-)
When i write today i feel as if its just yesterday i started this small space of mine,but this isnt true its been almost two years and some 4 months since i started writing :-) now thats a pretty long time i knw ,
with my blog i have grown up too,met some beautiful people,made some lifelong friends and with each post i learned something thats the best part of blogging so thanks a ton guys for inspiring me ,motivating me to keep this on ,without your support this wouldnt have been possible.
Prepared vision board today
,wrote my dinner plan for today evening which had three options tomato rasam/tomato rice or dal ,rice and fried okra..within few minutes my neighbour calls me up to tell me she has prepared tomato rasam for me,now waht do u call this mere coincidence or law of attraction ;-)
Enough of musing i guess for todays post ,had craving to eat Matar Paneer yesterday night ,didnt had cottage cheese at home so i prepared paneer at home
,have already blogged recipe of Matar Paneer here ,this one is slightly modified version of the same
,i omitted the use of garlic and green chili,
didnt fry cottage cheese before adding to the gravy
didnt add much water as wanted the gravy to semi dried,

Winter Special Breakfast of Matar Ghugni with Mooli Parantha
Yesterday while going for my evening classes I was struck in traffic for some time ,I could see work going on everywhere for the approaching common wealth games in 2010 ,there’s broadening of road, several flyovers are being built, landscaping, better signage facilities, restoration of monuments and god knows so many other things,…I am amazed at the rate the work is going on, it’s on tremendous speed but then it has to because time left for games is less than a year. While pondering over all these work going on I thought what was government doing from the past few yrs, I mean just because there’s common wealth games approaching is that the reason to improve the facilities for us the common people better known as aam aadmi or to show off others that India is indeed developing. If we were not hosting games I guess Delhi would have been the same with no beautification or makeover this is totally different story that Delhi in itself is beautiful. This is a bitter truth that we INDIANS act only when we are forced to otherwise everything is fine for us. I feel so good and happy and very proudly tell everyone that by next year Delhi wont be same but at the same time sad too that the reason behind all this is Common wealth Games not the need of the people…..;-(
Coming back to todays post I am sharing another warm breakfast for winters Hara matar Ghugni with Mooli Parantha and Curd.Matar Ghugni is staple breakfast at our place specially during winters ,on Nehas demand mother prepared this today morning for breakfast,thanks Pallavi for reminding me to mention this,.;-)
For Mooli /Radish parantha –
Preparation for the filling
Wash , Scrub and Grate Radish and keep aside. Squeeze before using.
Mix salt as per taste , pinch of red chili powder, pinch of garam masala powder and carom seeds a pinch to the grated raddish.Mix well and keep aside.
Knead the dough and keep aside.
Procedure
Divide the dough into small balls.
With the help of rolling pin shape out the small balls into thick chapattis.
Place the filling in the centre and shape into small ball.
Sprinkle few drops of oil on non stick tawa, and once the tawa is hot lower the flame and place the parantha and keep turning till it be becomes brown from both side.
Serve hot with curd and pickle ,we had with matar ghugni and curd.
For Matar Ghugni-
In gradient needed
Fresh green pea half cup ie approx 250 gm
One onion chopped
Green chili chopped one
Garlic clove chopped two
Ginger paste one tsp
Salt as per taste
Potato peeled and cubed one
Oil to cook
Coriander powder half tsp
Garam masala powder half tsp
Turmeric powder half tsp
Cumin seeds half tsp
Asafoetida a pinch
Procedure
In a non stick wok add one tsp of oil
Once oil is hot add half tsp of cumin seeds and pinch of asafetida.
Once it starts spluttering add chopped onion, garlic, ginger and green chili.
Once the onions start changing colour add chopped potato , fresh green peas and sprinkle salt as per taste ,followed by coriander powder and turmeric powder
Stir well add few drops and cover and cook on low flame.
Once done check for tenderness and sprinkle garam masala and simmer for a minute.
Serve hot with parantha, or with warm toast both ways this tastes good.

Chana dal paratha aam aachar or gobhi sabji ke saath
When I blogged about Bakheer, I had mentioned about Chana dal parantha which is prepared every year on the auspicious day of Ramnavami,as mother is here for wedding preparation,I asked her to prepare the same paranthas and together with instant khatta meetha aam achar, gobhi sabji and drumstick pickle meal was awesome.
Ingredient needed for chana dal parantha
Kneaded wheat dough as per requirement
Ingredient needed for filling
Chana dal 150gm
Asafetida a pinch
Cumin seeds half tsp
Dried red chili two crushed
Salt as per taste
Turmeric powder a pinch
Oil one tsp
Water
Procedure
Soak chana dal for 3 to 4 hrs in water,drain and keep aside
Heat one tsp oil in wok
Add pinch of asafetida,cumin seeds and dried rd chilli
Once they start spluttering add drained chana dal
And keep stirring now add required one cup of water
Followed by salt and turmeric powder, stir well
Cover and cook on low flame.
When the chana dal becomes tender,
Remove from flame and let the mixture cool
And run through the blender to get a coarse mix without adding water.
Add half tsp of garam masala.
Mixture for parantha is ready.
Roll out parantha of the desired size
Fill in the chana dal mixture and
Place on a lightly oiled tava
Keep turning till it becomes brown from both side.
Serve hot with chutney and sabji.
Note- for chana dal poori,make the same in small size with thick edges ,place on lightly oiled tava and then deep fry.
Mother prepared both drumstick and mango pickle the same day,here goes the recipe.
Instant Drumstick Pickle
Ingredient needed
Garlic cloves 6
Yellow mustard two tsp
Green chilli three
Salt as per taste
Turmeric powder a pinch
Mustard oil one tsp
Drumsticks 4
Procedure
Chop ,wash and boil drumsticks,drain and keep aside.
For the paste
Make paste of yellow mustard,green chili and garlic cloves ,keep aside
Heat oil in wok
Add boiled drumsticks and fry for two minutes
Add masala paste followed by salt and turmeric powder
Fry for two minutes
Remove from flame and let it cool.
For khatta meetha aam aachar
Ingredient needed
Green mango four peeled,cubed and wash aand keep aside
Jaggery 250gm
Cumin seeds a pinch
Fennel seeds a pinch
Ajwain seeds apinch
Nigella seeds a pinch
Fenugreek seeds a pinch
Dried red chili two crushed
Salt as per taste
Procedure
Heat oil on wok
Add spice mixture and salt
Add chopped mango,fry for two minutes and remove .
In another wok add one cup of water followed by jaggery and keep stirring
Till it gains syrup like consistency
Add mango mixture and keep on low flame for few minutes.
serve warm with parathas.
For allo gobhi tamatar sabji

ingredient needed
chopped cauliflower
chopped potato one peeled and cubed
tomato one cubed
onion one cubed
green chili one
cumin seeds half tsp
salt as per taste
red chili powder half tsp
turmeric powder half tsp
oil to cook
procedure
heat oil in wok
add cumin seeds once they start spluttering
add chopped onion and green chili
keep frying till onions start changing their colour
now add cubed potatoes and mix well
add salt,turmeric and red chili powder
mix well followed by addition of cauliflower
keep stirring till oil is seen along the sides
now add chopped tomato,mix well and cover and cook.
once done serve hot with chapati and dal.

Tangy Appe huli from Deeshas kitchen with plain rice and Jeera alloo
When I saw Appe huli
at Deeshas place,I couldn’t stop drooling over looking at the pic,new for me, I thought of giving the recipe a try,and I am so happy I tried the recipe,thanks a ton Deesha for sharing such yummy recipe,I enjoyed Appe huli with plain rice,jeera alloo and fresh mango slice.
For Jeera alloo -
ingredient needed
chopped potato two
cumin seeds half tsp
oil one tsp
salt as per taste
red chili powder half tsp
turmeric powder half tsp
procedure
heat oil in non stick wok
add cumin seeds once they start spluttering
add chopped potatoes and keep frying till potatoes become soft
sprinkle in salt,red chili and turmeric powder
and cover and cook on low flame for a minute or two till potatoes become tender.
serve hot with plain rice and appe huli.

This platter is perfect comfort food for me so this plate is off for Truptis event Comfort food for illness,apart from this plate i am also sending Dal chawal,Tehari and Khichdi for her event.

Sweet Vodka bites with spicy Jackfruit curry,...
Few days back saw in news channel that Vodka flavoured Sandesh are in huge demand at Calcutta,though i have tried different flavours of Sandesh this one called for lotz of guts,..but i didnt give up,..so when fine evening when i prepared fresh cottge cheese at home i thought of trying Sandesh with Vodka
ingredients needed are
fresh cottage cheese one cup approx 250gm
sugar as per taste i always reduce the quantity to suit my taste
absolute vodka citron flavour two tbsp
finely chopped walnut two tbsp
food colour any colour will do half tsp
procedure
heat non stick wok and fry cottage cheese for two to three minutes ,remove from flame and keep aside
run sugar through the blender,remove and keep aside
in a big vessel mix cottage cheese with sugar,keep kneading till it becomes soft
add food colour and vodka slowly to the cottage cheese mixture
once everything is mixed properly start giving shape to the mixture any shpe will do i couldnt think of anyother shape:-)
once done slowly place chopped walnuts on the sandesh and keep in fridge to set for 1 to two hr,..
sandesh have good shelf life and they taste good after a day or two,.:-)

Kathal better known as Jackfruit is one of my favourite vegetable and its found in abundance during winters in NORTH India,when in Singapore i used to crave a lot for this veggie specially prepared by my mom,so this time when she was here i asked her to prepare and this is how the recipe goes,..
ingredient needed
250gm Jackfruit
onion three chopped
garlic six cloves chopped'
green chilli two chopped'
salt as per taste
coriander powder two tsp
turmeric powder one tsp
red chilli one powder one tsp
garam masala powder one tbsp'
cloves half tsp
black pepper seeds half tsp
dried red chilli three'
bay leaves crushed two
oil to cook
procedure
rub chopped jackfruit with salt and turmeric and keep aside
Heat one tbsp oil in non stick wok,once the oil is hot lower the flame and stir fry chopped jackfruits,
once half done remove from flame and keep on kitchen towel
in the same oil add ont tsp of cumin seeds followed by bay leaves,dried red chilli,black pepper seeds and cloves
once they start spluttering add chopped garlic,green chilli and onions and keep frying till onions start changing colour
add all the masala powders and salt and keep stirring till oil is seen along the sides
now add already fried jackfruit and mix well
after two to three minutes add water for gravy and cover and cook ,
as jackfruit takes time to cook ,to save time it can be pressure cooked too
once done remove from flame and serve hot with chapati or rice.

After a long long time i got to eat this veggie ,we enjoyed with chapati and sirke wala pyaz,this version is semi dry one,for gravy just increase the quntity of water in th the last step and dont let it dry much while cooking,enjoy hot with rice,this is how our platter looked,..;-)

Life is not the same as it was before,now i dont get time to do few of my favourite things :-( but then i know that with time things change and our priorities too,..since past few days i was not able to post as so many things were keeping me busy,..weekend was busy meeting relatives..and then once Monday is there theres no looking back,..with the daily chore of preparing breakfast,packing tiffin,and other stuff,..time just flies away...and by evening i just feel like winding up everything nd going straight to bed,..my cousion asked my today before leaving whether i will be able to meet her on Sunday,..i told her its not possible as saturday i will leave at 9:30 in the morning and be back by 9:30 in the evening,..because of the part time classes so Sunday i just want to relax and then my younger sis told her,...this is "Life in Metro"its not easy,..i couldnt help smiling when i heard this from my younger sis,..but then she is so right,..back in Singapore though i was at home doing everything on my own , i could take out time quiet easily for reading books,paintaing and so many other things but here though there is someone to help with daily chores still i get tired ,i dont get much time for my own things,..but one thing is there i am happy,..;-) i was happy back there too by doing things which kept me busy and now here daily grind of going to work,managing home,is keeping me busy,.
Coming back to this post Tehari is one of the regular one pot meal prepared in uttar pradesh specailly during winters,..i prepared Tehari
and paired with plaintain fry,mix veg salad,poopadum and red chilli pickle ya the same about which Sunshinemom has written in one of her post,..this one is prepared by mom and ya this one tastes best with any version of rice,..specially with plain rice,..

Plaintain fry-rub turmeric na dred chilli powder to sliced plaintain,heat one tsp of oil,once hot slide the spiced plaintain,sprinkle salt and and keep frying till brown from both sides,enjoy hot
Mix Veg Salad in low fat curd - in a mixing bowl add finely chopped cabbage ,carrot and capsicum,add pinch of salt and pepper ,mix well,add one two tbsp of low fat curd,serve chilled.

The below Thali has Masala dal fry ,chapati,baingan bhartha and palak panner


Dhaba style Masala dal fry- after preparing arhar dal the usual way,mash properly and keep it aside,in another non stick wok add half tsp of ghee followed by finely chopped one onion ,half of tomato,one clove of garlic and half of green chilli ,keep frying once done add dash of red chilli powder and coriander powder,fry further for a minute or two, add mashed dal and keep stirring ,remove from flame and garnish with finely chopped coriander leaves before stirring.
Below thali consists of dry veg sabji Allo methi dal and coriander chutney

Dhania chutney - coriander leaves one cup,garlic cloves two,half of tomato ,green chilli one,salt according to taste,mix everything together and run through blender,hot and spicy dhania chutney is ready.
Below thali consists of Makki ki roti with tava fry paneer and kathal sabji

Recipe for Makki ki roti is adapted from here ,
for tava fry panner just marinate thick slices of cottage cheese with turmeric,red chilli and salt for few minutes,heat half tsp of oil on non stick tava ,once oil is hot slow down the flame and place the marinated pieces on the tava,once brown from both sides remove from the flame and serev hot with any chutney,..
Below thali consists of Sprouts salad with carrot and brinjl subji with pea,..

For sprouts salad just mix sprouts finely chopped onion and carrot,..add hlf tsp of lime juice and salt,..
Dhania chutney if off to Ramyas mane adige where she is on with Chutney /dip Mania event.

These days morning is very busy after preparing morning 6am tea which i share with my sis,,.my next agenda is to pack tiffin for both of us,..most of the time its Salad and we keep trying different dressing or it becomes too monotonous,..;-) Tody i will share recipe of Mix Veg Salad in Red Wine dressing
to prepare the Mix veg Salad i have used chooped cabbage,carrot,capsicum,and other leftover ingredients from fridge which included torn pieces of bread,boiled egg white,cottage cheese,
mix all the veggies together with egg,bread pieces and cottge cheese,half tsp each of salt,pepper,sprinkle few drops of red wine vinegar ,add dash of oregano..:-),chopping veggies is the only time it takes to prepare this Salad,..;-) as all the three colours orange,white and green are there and Republic day is round i hve named this Salad Republic Day special-tricoloured Salad

Huh... finally back frens,....missed u all lotz,...
After so many tiring days and sleepless nights finally i am relaxing at my sis place in Delhi ,looks like perfect holiday for me after a long long time,with younger sis too at home its added bliss for us,morning and evenings its cold here but days are still warm and everywhere i go i am amazed by the varieties of eateries available here..be it food courts in various malls,roadside joints ,street hawkers,and local bazaars but the best part of staying in Delhi is home cooked food prepared by my mom,since my younger sis is even here for her vacations even she tried some regular dishes recipes of which i will be sharing soon,. ,..
coming back to today's post i will share recipe of Kadai paneer and doi begun which i prepared along with already blogged recipe of Mangalorean chicken curry
,for the first time i cooked chicken for my sisters ,was really glad when they told me it was really good....:-)
and Jeera murgh
ingredient for Kadai Paneer
Cottage cheese 300gm
cumin seeds one tsp
black pepper seeds half tsp
bay leaves crushed two
green capsicum one chopped lengthwise
onion three chopped finely and two chopped length wise ,keep them separate
tomatoes one chopped finely and the chopped length wise
garlic six cloves chopped finely
green chili two chopped
half tsp each of turmeric powder,red chilly and coriander powder (masala mixture)
salt to taste
oil to cook

procedure
heat one tbsp oil in wok
add cumin seeds once they start spluttering add
crushed bay leaves and pepper seeds
followed by finely chopped garlic,green chilly and onions
once the onions start changing colour add finely chopped tomatoes followed by masala mixture and salt,
now add chopped capsicum and fry further
once oil is seen along the sides of the wok add the thinly sliced onions,tomatoes and fry for two minute
add chopped cottage cheese fry for a minute,if desired add water
simmer for two minutes and remove from flame.
Serve hot with roti and rice.

,,.half of my time is spent running after him,.he has started speaking and likes to talk,..whenever he is hungry he drags this big bottle of nimki
which my mother prepared specially for him before leaving for home town .,...
And ya thanks friends for passing me so many awards i will pass them soon ,..and thanks a ton for the wishes too,..friends u wont believe but this post took seven days to complete,..everytime i logged in earlier after my blog break my time was spent going though the wonderful posts which i missed reading during my blog break,i still have to catch up with many previous posts....which i have not read ,..but will do soon ,...:-)huh,,,finally done...feel so good...cee u all frens......soon...happy blogging and cooking,..missed u all really lotz,...:-)

Dinner of Onam sadya dishes with pics of palawan beach

now busy clearing almirahs,..
dont know what i am talking about na :-),,,friends i am moving back to India forever on 15th of october,so since past few days i have been really busy doing packing and other things,
after spending two yr three months in Singapore which is worlds safest place,going back to Delhi ncr gives me goosebumps specially after the recent bomb blast which took place in delhi markets,but then this is something which has no solution,,,for few days after the blasts i was really depressed,but i know the more i think ,the more depressed i gonna be,..and i think a lot when i am not doing anything,..best way is to keep myself busy so that i dont think negative things,..:-) ,after tiring myself by doing packing whole day,..cooking is something which i look forward to destress myself ,ya ,cooking acts like therapy for me specially these days when i am busy with packing and all..all i want is hot dal chawal with subji,..one such tiring day i felt like trying Onam sadya dishes
,and trust me what a meal it was ,i tried sothi which is lightly spiced coconut soup
ingredients for sothi -
onion chopped one
green chilli sliced two
curry leaves few
salt to taste
oil to cook
half cup thickcoconut milk
four cup thin coconut milk
tomato one chopped
pinch of turmeric powder
pinch of cumin powder
one teaspoon each of fenugreek and mustard seed
half tsp each of cumin and fennel seeds
crushed dried red chilli two
procedure
heat oil in wok
fry fenugreek,mustard,cumin and fennel seeds along with red chilli,
further add chopped onions,green chillies and curry leaves,frytill onions turn translucent
add thin coconut milk,chopped tomatoes,cumin and turmeric powder followed by salt
boil for 10 to 15 minutes
add thick coconut milk and boil further for five minutes.
serve hot .
which is ,potato podimas -spiced mashed potato
from Sukanyas blog and tomato rasam, injithair -ginger in curd
,dryfruit kesari here,i am not good in preparing halwa ,..so asked hubby to prepare for which he agreed,to enjoy the meal in traditional way had on banana leaf,i was not sure whether i would get banana leaf in the nearby grocery shop,..but when hubby returned with banana leaves i was realy happy,..
