A Note before I forget - A letter

Dear Advay,
It's been so long since I wrote to you.
You know what I feel like compiling all the letters I wrote to you.
Won't it be nice to read them again and again. And when you grow up and share stories about your weird mother you will have a record of the free life which I lived.
Since past two years we have developed a strange relationship. We have become used to of each other. In a different way we know the inner life we are living. You know now which songs make me write, which books make me smile and what I do stay away from negativity. We are a different family, We know when to stop or when are irritating each other. I think I will start with letters once I compile your great grandfather and grandfather book. Won't it be nice to go through those poems. Words can become a treasure for us if we use them wisely. Sadly most of them don't know how to use them.
While I write this you are attending your home based class. In one week you will have holidays and we will be seeing more of each other.

Sweet and Tangy Memories - Papdi Chaat

can you please add sweet chutney?
I always do I wrote him back.
he in this conversation is my son who is enjoying his home based learning which started last week. So now that we eat our lunch together at home I am trying to keep food interesting for him. So today when I asked him what he would eat for lunch his reply was chaat. So the papdi chaat was assembled for him and while I was doing the same he texted him. Chaat is therapy food for us and both the chutneys are essential ingredient for it. Now that we are at home a bowl of this takes us to India and brings back those colours which we have left behind. And I am happy that his childhood has the same old fragrance which I am carrying with me, he is a mcdonald kid but just like me craves Indian street food.

its not just Samosa
I was nostalgic I was reminded of Nani who used to prepare the same whenever we used to visit her during vacation, it seem just like yesterday when plate full of Samosa would be brought before us with chutney and we without realizing whether the person who has made Samosa got to taste it or not would be happily eating such were the childhood days, full of memories and nostalgia .
Yesterday I realised that homemade Samosa tastes great because of the love, patience and care which goes in it
.The care with which stuffing is put inside ,the patience needed to seal the edges of the dough and the time taken to see that the Samosa is fried nicely
.If the food is cooked with devotion and love it will always taste good .Nani I missed you yesterday now I know how much effort you used to take for us thanks Nani where ever you are for giving us such nice and warm memories of childhood.

In the post blogged before had baked the Samosa but yesterday fried them and I love the fried one better and ya I want to end the post by saying this Its not just Samosa its a fried stuffed pastry made with lots of love ,care and patience

my fav street food of Delhi - Bhalla Papdi Chaat
Advay -" I know what you will do there at Nanis house ."
Me - "what do you mean by what I will do there."
Advay -"you will eat pani poori there."
Me awed "where at Nanis house ?"
Advay - "at the chaat shop on the road where you has last time ."
I was like what :) I mean how well he knows me :-)
Ya he is just like me even he loves to gorge chaat like anything so sometimes I prepare chaat for him just to change his taste
,one of the most common chaat variety of Delhi is Bhalla papdi chaat ,very easy to assemble if you have all the ingredients
Recipe name Bhalla Papdi Chaat
Ingredient
Bhalla / dahi wada soaked in curd five pieces
Papdi eigth to ten
Boiled peeled cubed potato one
Green chutney /dhania chutney one tbsp
Meethi chutney/ imli chutney one tbsp
Salt as per taste
Chaat masala one tsp
Black salt as per taste
Red chili pinch
cumin powder one tsp
Beaten curd four tbsp
Pomegranate seeds one tbsp
Sev handful
How to assemble
In a plate place the base layer papdi,cubed potato and Bhalla
Top it with baten curd followed by the chutneys
Sprinkle all the powdered masalas followed by sev and pomegranate seed
Indulge without wasting a second,..:)

weekend cooking and eating
so that I could prepare something which was on my mind since a long time and thats what I did .I had never heard of Vada pav before coming to Singapore,maybe I had seen vendors selling this delicacy in stations of Maharashtra but I never thought of buying for myself, though I had seen passengers buying and eating the same ,i would happily settle down for nagpur oranges,those were the days now i really miss those train journey between Delhi to Bangalore .
Thanks to Blogopshere and the food bloggers for tempting me with the gorgeous pics since past few years,I had to try this ,
Coming back to today's post sharing with you all pictures of Vada Pav which i prepared inspired from blogopshere ,together with red chutney and green chutney truly savoured the meal like anything,

Chana Churmura Jor Garam
lately life has become so busy that I hardly get anytime to Blog and update either of the two space but since Advay's school is finally open I guess i gonna be more regular in Blogosphere ;-)
Today's post i will be sharing the recipe of Chana Jor garam which i prepared few days back or this one can be also coined Chana Churmura Jor Garam as i have combined both of them to prepare this ,this one is quick to prepare and tastes best with a cup of steaming hot chai.

recipe remains the same as blogged above ,additional ingredients which I have added are
- half cup crushed chana jor garam
- one tbsp bhuna chana
- two tbsp khatta meetha mixture
mix all the ingredients in a mixing bowl and serve with Chai....
I also tried Bhadang recipe from Blogopshere ,,truly enjoyed the taste

Aloo Tikiya Matar Chaat for Raksha Bandhan Festival
Advay's cousin had sent him Rakhi and a hand written letter
recipe name Alloo tikiya matar chaat

for the spiced matar/
ingedient
2 cup matar soaked overnight
salt as per taste
tamarind juice two tbsp
garam masala powder one tbsp
procedure
pressure cook soaked matar with salt and half tsp baking soda
once done add garam masala and tamarind juice
simmer for few minutes and serve warm .
followed by tamarind chutney
sprinkle some chat masala and chopped onion and indulge,
optional this chaat can be served topped with bhujia and mint chutney too,.

weekend cooking - Chola Chawal
,this weekend i thought of preparing the same for lunch ,
recipe is inspired from Nita Mehtas book paired the curry with plain rice ,onion and pickle.
Recipe name Chana Masala

preparation time half hour
cooking time half hour
Preparation
Ingredeint for boiling chickpea
overnight soaked and drained Chickpeas 350gm
salt one tsp
soda bi carb one tsp
tea bags two
black cardamom five
cinnamon two pieces
procedure
Presure cook chickpeas with the above ingredient
once done ,drain and reseve the liquid
remove the teabags,
and the keep the chickpeas aside.
Ingredient for the curry
onion four chopped finely
tomato three chopped finely
ginger half inch chopped finely
dried red chili four
pomegranate seeds one tbsp powdered
oil to cook
red chili powder one and a half tsp
coriander powder one tsp
garam masala one tbsp
Procedure
heat oil in non stick wok ,add onions
keep frying till the onions turn brown
add pomegranate seeds and keep stirring
followed by dried red chili,tomato and ginger
add salt and the powdered masala
keep stirring till oil is seen along the sides
add drained chickpea and mix everything together
add the reserved liquid and let it simmer for five minutes
serve warm with rice,onion and lashoda pickle.

Weekend Cooking - Alloo Tikiya Chaat
i was craving for the same chaat which is sold at Prince Chaat outlet at Greater Kailash market in New Delhi,i have already bragged about Palak Papdi Chaat sold at Prince Chaat ,so this weekend driven by my craving and so many other things i finally tried Alloo Tikiya Chaat at home and i am so glad i did or i would have to wait for my trip to Delhi to relish this,:-)
Recipe name Alloo Tikiya Chaat/
Recipe source Kitchen experiment
Preparation time one hour
Cooking time 15 mins
Ingredient
Boiled potato four
salt as per taste
red chili powder half tsp
garam masala powder
cornflour one tbsp
green pea one tbsp
cubed cottage cheese eight pieces
cumin seed one fourth tsp
oil to cook
chopped almond,cashew nut and pistachio one tbsp
Preparation
heat one tsp oil in non stick wok
lower the flame and add cumin seeds
once it starts spluttering add green pea and cottage cheese
fry for three minutes and remove from flame
keep aside and let the mixture cool
Procedure
In a mixing bowl add boiled potato
followed by salt,red chili powder,garam masala powder
mix everything together to a smooth mix
add cornflour and fried cottage cheese and green pea
divide the potato mix into equal sized disc
keep dryfruits in the centre and press the ends together
flatten the stuffed tikkis and keep aside
In a non stick pan,heat one tbsp of oil
once hot lower the flame and place the tikkis
cook on low flame till the tikkis turn brown on both side
drain on kitchen towel and keep aside.
ingredeint needed to serve the tikkis/alloo tikiya
green chutney
tamarind chutney
spiced chickpea
beaten curd
sev
chopped onion
To serve
-Tikkis can be enjoyed alone with Tea
-Tikkis can be topped with Chola as i have done here
- In a serving plate place two tikkis,top it with beaten curd,green chutney,
tamarind chutney,spiced chickpea,sev and finely chopped onion
and just eat it,..;-)

Me - umm i want meetha patta and you ?
Didi - then i will take spicy one and we will share both ;-)
Me - ya then we will eat Karela Papdi too
Didi - dont forget we have to take some for Dadi too
Me - and on return we will pack some kulfi so after dinner we can have on terrace;-)
This conversation is about those summer days
when there were no Malls ,Multiplex,and other High end shopping areas,
when call were made once a week and letter were written to friends and sis
when eating Chaat didnt meant ordering in a posh restaurent with different kind of fillings,
when summer vacation meant cousins at home and endless trips to bazaars for shoping knick knacks like bangles and earring and drinking lassi and eating rabdi
when night were spent sharing stories and playing games on terrace with cousions
when Happiness was sharing Meetha Golgappa :-)
I really miss those days :-( what about you guys ?
Coming back to todays post sharing with you all Platter of Meetha Golgappa
Ingredient
Golgappa
to fill in
spiced chickpea half cup
tamarind jaggery chutney
curd three tbsp beaten
boondi one fourth cup
sev three tbsp
chopped onion one
preparation

for spiced garbanzo beans
soak chickpeas for 10- 12 hrs
boil and drain the water
mix salt and chaat masala .
keep aside.
Before serving
arrange the golgappas on the plate
poke a small hole and fill in with
spiced chickpea,boondi
top it with curd and chutney
sprinkle sev and onion
and juste eat it ;-)
