Allahabadi Samosa

It’s funny where a dream can take you—and that’s exactly what happened today. I woke up with the vivid image of a halwai shop from my hometown. In my mind, I know I’ll be able to visit there sometime in 2023, but today, it was the shop and its delicacies that kept playing in my mind. Thanks to that dream, samosas had to be cooked at home. If it had been any other snack, I could have easily ordered it from somewhere. But the filling—that’s what mattered most. The familiar taste of my hometown samosa is something I know I can only recreate at home or experience when I visit. And for now, a visit seems impossible. So, it was decided—I’m going to make samosas from scratch. As soon as the words left my mouth, someone was thrilled, knowing these wouldn’t be the ready-to-eat ones from the store. Making samosas from scratch is a big deal in our house, and I have to admit, I was a little nervous. But in a way, it became a family activity as someone quietly joined in to help me prepare the filling and fold the dough. The crust could have been a little crispier, but the sight of those golden, stuffed pockets paired with tamarind chutney and a steaming cup of adrak chai was pure therapy for our souls. And for me, this was Allahabadi Samosa—a taste of home, a slice of my childhood. Although the name of my hometown has changed, for me, it will always be Allahabad.

its not just Samosa

Yesterday while filling the stuffing in the Samosa

 I was nostalgic I was reminded of Nani who used to prepare the same whenever we used to visit her during vacation, it seem just like yesterday when plate full of Samosa would be brought before us with chutney and we without realizing whether the person who has made Samosa got to taste it or not  would be happily eating such were the childhood days, full of memories and nostalgia .
Yesterday I realised that homemade Samosa tastes great because of the love, patience and care which goes in it

.The care with which stuffing is put inside ,the patience needed to seal the edges of the dough and the time taken to see that the Samosa is fried nicely

.If the food is cooked with devotion and love it will always taste good .Nani I missed you yesterday now I know how much effort you used to take for us thanks Nani where ever you are for giving us such nice and warm memories of childhood.

In the post blogged before had baked the Samosa but yesterday fried them and  I love the fried one better and ya I want to end the post by saying this Its not just Samosa its a fried stuffed pastry made with lots of love ,care and patience

New delhi trip march 2012 - seven days in Delhi

yes guys i am back
But this post i gonna share what i did last week in New Delhi ,
Day 1 sister surprised me with this Chocolate Cake
Day 2 we sisters bonded over a cup of tea and coffee in Delhi Haat
Day 3 fried some samosas with MIL and enjoyed family time
Day 4 learnt to make white butter from fresh cream at home ,truly enjoyed :-)
 Day 5 Cooked Vegetable Dum Biryani for 25 people ,ya it was an experience
which was followed by celebration at home
Day 6 fasted and feasted
at my younger sister place
Day 7 prepared poori ,halwa and kala chana with sister in law for Navami Kanya Pooja

have replaced chicken with caulflower,potato and green peas,procedure is the same,

Baked Samosa Salvation Guaranteed,...;-)

Its been so long since i had real good Samosas,by real good Samosas  i mean the one prepared at home in Kadai ,but today when i prepared Samosas in my kitchen i didnt go for the usual deep fried one instead i tried Baked Samosa
which i had seen twice in blogosphere at Arundathi and Lakshmis space,i followed her recipe for kneading the dough ,for potato mixture recipe is mine.
Recipe Name Baked Samosa

Recipe Style Baking 
Baking temperature 190 degree centigrade
Baking time 25 mins 
Preparation
Knead the dough as per the recipe here and keep aside
Ingredient needed for Potato filling
Boiled potatoes peeled and mashed three
onion chopped one
green chili one
cumin seeds half tsp
green peas handful
salt as per taste
turmeric powder a pinch
oil to cook
coriander powder half tsp
amchur powder half tsp
Procedure
Heat oil in nonstick wok
lower the flame and add cumin seeds
once it starts spluttering add chopped onions and green chili
keep frying till onions start changing their colour
add mashed potato followed by salt ,turmeric powder,coriander powder.
Mix well and add green peas followed by amchur powder .
Let it simmer for a minute or two and remove from flame.
Divide the dough into equal parts
roll out with help of rolling pins and with help of bowl shape out circle shape
with help of knife divide the circle into two equal shape
fold from both the sides to make a cone
fill in the mixture and seal by pressing the edges together
preheat the oven to 190 degree centigrade
and bake the samosas for approx 20-25mins.
Serve them hot with green coriander chutney and ketchup.
