Microwave Lemon Sponge Cake For MEC Kids Party Food

Yesterday tried this simple microwave cake recipe from here ,
Recipe name Microwave Lemon Sponge Cake
Preparation time 3 mins
I didnt sandwich the cake with cream and jam instead topped it with Fudge frosting and silver and colourful edible balls.
Advay liked it a lotz so this one gonna be a regular one in my kitchen

Goan Curry Powder and two dishes

Sometimes a little something adds magic to the dish we are cooking, I experimented with this little something for two dishes and was awed by the outcome.I know u all must be curious to know what this little something is ;-) guys I am talking about Goan Curry Powder which my sis had got from Goa.I tried fish curry and egg biryani and here goes the recipe



Ingredient needed for Pomfret in goan curry
Onion two chopped coarsely
Garlic  four cloves chopped coarsely
Coconut powder two tbsp
Tamarind one small ball
Garam masala powder one tsp
Salt as per taste
Mustard oil one tbsp
Pomfret one
Red chili powder half tsp
Goan fish curry powder one tbsp
Preparation
Clean the fish and rub with salt adturmeric and keep aside
Run through the belnder onion,garlic,coconut powder and tamarind,keep aside
Procedure
Heat mustard oil in non stick wok
Add the masala paste and stir for sometime on low flames,
add goan curry powder and fry for a minute or two
Add salt ,red chili powder and keep frying till oil is seen along the sides
Add the fish pieces one by one and fry further for few minutes
Add water as per need ,lower the flame and let it simmer for few minutes
Once done,sprinkle pinch of garam masala and serve hot with rice or roti.


I tried this magic powder again while preparing egg biryani ,and this is how I prepared



Ingredient needed
Boiled egg four
Cinnamon stick one
Star anise two
Black cardamom two
Onion two chopped coarsely
Garlic clove three chopped
Red chili two crushed
Ghee one tbsp
Salt as per taste
Tomato one chopped
Oil to cook
Rice one cup
Preparation
Soak rice and keep aside
Shallow fry eggs in oil and sprinkle goan curry powder keep aside
Procedure
Heat oil in non stick wok
Add cinnamon stick, star anise and black cardamom stir fry for a minute or two
Add chopped onion,chili and garlic and further fry for few minutes
Further add tomato,goan curry powder and keep frying till oil is seen along the sides
Add soaked rice ,  amount of water to cook the rice and cover and cook
Once half done add the fried eggs and let it simmer till the rice is done.
Serve hot with curd and poppadum with had with allo curry which I will post soon,..;-)

Another Craving related post of Teekha Chicken curry ,tamatar dal and spiced up egg curry

Craving can make us do anything,ya i know i have talked about cravings before ;-),one such craving of eating something spicy lead me to prepare this yummy chicken curry with pepper and chillies
...word of caution this recipe is hot so if once in a blue moon if u feel like having something spicy ,enjoy this curry with plain rice or chapati,we had with tamatar wala dal,chapati and rice,
ingredient needed for Teekha Chicken Curry
chicken drumsticks four
onion two chopped
green chili three chopped
cumin seeds one tsp
garlic clove three crushed
red chili one crushed
salt as per taste
black pepper crushed one tbsp
turmeric powder a pinch
oil to cook one tbsp
Procedure
heat oil in non stick wok,add cumin seeds once they start spluttering ,
add chopped onions n keep frying till onions start changing colour
once half done add chopped garlic,green chili,red chili and fry further till chillies and onion merge together
add salt,turmeric powder and crushed pepper,keep frying till oil is seen along the sides
now add chicken drumstick and fry well to mix the ingredients
lower the flame and cover and cook,if needed add half cup of water,mix well
and simmer again for few minutes.
Serve hot with chapati or rice.
Ingredient needed for Tamatar Dal
cooked arhar dal
cumin seeds a pinch
ghee half tsp
tomato one finely chopped
green chili one chopped
asafoetida a pinch
procedure
heat ghee in non stick wok
add cumin seeds  and asafoetida once they start spluttering
add chopped tomatoes and green chili
keep frying for a minute or two till the tomatoes become tender
add prepared dal and mix well.
serve hot with chapati or rice.
another version is to pressure cook dal with tomatoes and do the tempering later once the dal is done.
I wanted to enjoy the platter dhaba style so had with pinch of salt,lemon wedges and green chillies,so for extra kick enjoy hot ,....
I keep trying different versions of Egg Curry,in this recipe i have used red chili powder and crushed black pepper to marinate the egg slices
here goes the recipe
INGREDIENT
boiled egg four
onion two chopped
tomato one chopped
cumin seeds half tsp
crushed pepper one tsp
red chili powder half tsp
oil to cook one tbsp
green chili one chopped
salt as per taste
Preparation
Slice off boiled eggs in two parts ,sprinkle crushed black pepper and red chili powder and keep aside
Procedure
heat half tsp in non stick wok and shallow fry the spices up egg slices and keep aside
heat remaining oil in the same wok,add cumin seeds once they start spluttering add chopped green chili
followed by chopped onions and keep frying till onions become tender and start changing their shape
add chopped tomatoes fry for a minute and cover and cook.
once done add half cup of water and let it simmer till the gravy starts boiling
now add spiced egg chillies in the gravy and let it simmer for few minutes.
before serving garnish with pinch of crushed pepper
enjoy hot with rice or roti.
For Plain Chapathi
ingredient needed
wheat flour 2 cup
water to knead the dough
Procedure
in a big vessel sieve the flour
slowly add water to knead the flour
dough should be not too hard nor too soft
dough shouldn't stick to the vessel in which it is kneaded
once done dough should be one mass in whole
now divide dough into equal size balls
heat the tava,once hot lower the flame
with help of rolling pin roll out each ball to the desired size
use plain flour if the dough sticks on the surface
once done place the rolled out roti on the tava
keep turning till roti starts puffing
remove from flame and serve hot with dal.

Brunch of Scottish oat cake and Basil Omelet and Advays Mowgli look

Last weekend prepared Scottish oat cake and Basil Omelet for Sunday brunch,together with fresh water melons,wholewheat bread,mixed fruit juice and almonds whole platter was yummy and healthy
INGREDIENT needed for Scottish Oat Cakes
One cup medium of fine oatmeal
salt as per taste
pinch of baking soda
one tablespoon butter
three to four tbsp warm water
PROCEDURE
Lightly oil the griddle and keep aside
mix oatmeal,salt and soda in a bowl
add melted butter and warm water and knead to make dough
lightly knead on a surface dusted with oatmeal until it is smooth
divide the dough into equal parts
and shape out with help of rolling pin
as my mixture was slightly thick shaped the cake heart shapes
and transferred to the griddle and cooked over low heat for 4-5 minutes
other side should be cooked for 1 to 2 minutes
serve warm with juice and scrambled egg
ingredient needed for Basil Omelet
egg white of three egg
onion one chopped
salt to taste
half tsp crushed pepper
dried basil leaves more than a pinch
milk two tbsp
procedure
mix everything together
heat few drops of oil in non stick pan
spread the egg mixture
slow cook for 2 to 3 minutes
once done serve hot with wholewheat bread.
and ya before i forget  thanks a lot for the suggestions ,I finally chose Mowgli look for Advay for his dress i stitched paper leaves on his shorts
and stitched flowers too to make it look more natural :-)
this is how he looked at the function ,and ya he won third prize in fancy dress competition.,..:-)

Dinner of Kolhapuri chicken and lunch of fried fish,..and ya theres a giveaway too,..:-)

I know its been long time since i published chicken curry in my blog ,so today thought of sharing marathi style chicken curry which i prepared for my sis fren when she had come for dinner,ya frens i am talking about much talked about hot Kolhapuri chicken
,recipe is adapted from here ,though kolhapuri chicken is considered hot mine wasnt that hot :-) still we enjoyed the meal with chapati,and onion tomato raita
It really feels good when some one else takes the charge of kitchen and thats how i felt when Pallavi told me that she will prepare food,..now that was a pleasent surprise for me,..she prepared fried fish in green chilli sauce recipe adapted from here,egg cury and plain rice.
for egg curry-shallow fry chopped two onion tomato and  four green chilli in one tsp of olive oil,once onions start changing colour add four tsp of cremicas ginger garlic sauce,keep frying till oil is seen along the side,add half cup of water let it simmer,in another non stick pan shallow fry boiled eggs and and transfer them to the prepared gravy ,serve hot with rice or chapati.
Egg curry and pizza with cottage cheese topping is  off for Aparnas kitchen who is on with FIC orange food event started by Sunshinemom  
The theme for this month click event is Cheese and Tofu  hosted by Jugalbandi and on aquadazes suggestion i am sending pizza click for the event :-)
Valentines day is round and since this day is for friends too i thought of passing some hand made goodies as valentines gift to one of u,...to take part just Cook and Create with Luv for luv,..:-) enjoy...

Brunch of green pea fry and dinner of pizza enjoy,..:-)

Few days back i was not in mood to preapare dinner ,because Advay was down with cold and cough to cut things short i decided to go ahead with pizza,didnt want to work much on topping so for topping i used tomato onion paste,capsicum slices,garted cheese and cottage cheese flavoured with chives.
to prepare Cottage cheese flavoured with chives i mixed half tsp of chives in one cup of chopped cottage cheese ,kept them aside for 10 minutes, after 10 minutes shallow fried them in one tsp of oil,once done keep aside .
assemble everything on pizza base,and keep in preheated oven for less than 10 minutes,mine was done in 8 minutes.
Most of the times when i am alone at home i skip breakfast and go ahead with brunch ,to satisfy hunger pang i prepared for myself egg toast and fresh green peas fry
For fresh green pea fry-
heat one tsp of oil in non stick wok add half tsp of cumin seeds followed by coarsely pounded one red chili and finely choped onion keep frying till onions start changing colour,once done add salt and green peas if possible cover for some and keep checking,once green peas start chnging their shape ad dhlf tsp of garam masala powder and half tsp of lemon juice,stir for a min or two and remove from flame,serve hot.
For egg toast
i have used Dalia bread which was quiet filling,i carved out heart shape from centre of the bread,kept it aside,in non stick pan add few drops of oil,once oil becomes hot keep the carved toast on the pan and fill the centre of the bread with egg yolk,once brown from one side,change the side to toast the other side,once done remove from flame nd keep aside,.
to serve place egg toast,carved out heart and green peas enjoy platter with hot tea of cofee,..

Finally tried baking ,..thanks Cham...:-)

Therer always first time for everything be it anything,whenever i thought of baking for the first time the thought itself used to give me jitters,thought of how it gonna turn out,whether it will be liked or not by everyone ,what if it gets burnt,or is so hard that i have to throw all of it,..thinking of all these negative things i always used to think no not today ,..but today finally made up my mind,..met Lakshmi online discussed with her,..Chams plain vanilla cake recipe was on my mind since the day i had seen the recipe in her blog,..but when lakshmi gave me nod to start with her recipe i didnt think again,i didnt had baking powder and soda,in my kitchen pantry and ya vanilla esence too,..could get baking powder nd soda from the nearby shop but unfortunately vanilla essence was unavailable so i substituted vanilla esence with chopped blueberries,for unsalted butter i used home made white butter,rest all the ingredients were same,i used manual blender to beat sugar ,butter and sugar which took lot of time ,with no one to guide to ,i followed blindly Chams post and waited patiently after keeping the cake in the otg,..
after taking out i first checked with knife whether it came out clean or not,..it came out clean,.huh,..i prayed silently,.next slowly i took one thin slice from the plate and one bite and i knew my first attempt at baking was successful,..:-) after finishing off with the cake slice i thought of clicking pic for posting but my bad luck my camera battery showed off so i clicked with my cell phone thats why u see so bad pics,...:(

Dinner with leftover,,,,,nd ya i am missing toi...:-(

So many times we try to fix meal with whatever we have in excess,we tend to ingore the fridge where there is always something waiting for us to get our attention,one evening i thought of preparing something with leftover in fridge i had one fourth of cabbage,half of green capsicum, half cup of cottage cheese ,leftover chapatis ,two eggs,...with Advay running in and out of kitchen whenever i am there its too difficult to concentrate properly while cooking ;-) i thought of preparing Egg roll with cottage cheese filling and cabbage and cottage cheese salad with extra virgin olive oil dressing,as i wrote i thought of preparing but while cooking i dont know where my mind was maybe after Advay instead of Roll i prepares egg parantha with filling ,i myself dont know what name i should give to this dish ,,,any suggestions,..:-)




for the filling things needed are

cottage cheese chopped

green chilli one chopped

capsicum chopped half

green chilli sauce

salt and pepper

oil half tsp

cumin seeds a pinch



procedure

heat oil in non stick pan ad cumin seeds once they start spluttering,

add green chillies followed by capsicum,

once tender enough add chopped cottage cheese followed by green chilli sauce

add salt and pepper and remove from flame and keep aside.



for the parantha

eggs two ,beat and keep aside

left over chapatis two

lemon juice one tbsp

chat masala half tsp

onion one chopped

oil to cook



procedure

heat oil in non stick tava

once oil is hot

place leftover chapati on non stick tava and keep turning the chapati till it becomes crisp

add egg mixture on the chapati and spread evenly ,once egg sets properly on the chapati

add cooked cottage cheese mixture spread evenly followed by chopped onions ,lemon juice and chat masala.

remove from flame once done and serve hot with any side dish,we had with cabbage salad ,...




for Cabbage Salad-mix finely chopped cabbage with cottage cheese and chopped red chillies,add extra virgin olive oil with basil leaves,salt,pepper and dash of italian herbs for extra kick,..thats all frens,....Cabbage Salad is ready....:-)

Cabbage is excellent source of vitamin C,it also has amino acid Glutamine which has anti-inflammatory properties,the part of plant which is wildly eaten is cabbage head,cabbage can be consumed raw,cooked or preserved in varities of dishes.

Apart from green cabbage other cabbage available are Colewort,Drumhead,Oxheart,Red cabbage,Savoy cabbage and winter cabbgae.

On another note,life has become bit hectic for me,Advay has started with play school
since 2nd of this month which means i have to wake him up by 8 am which i really dont want to when i see him sleeping peacefully, all cuddeled up beneath blankets,sometime he wakes up on his own which is very seldom :-),by 9:30 i am back home after dropping him at playschool,thus i get three hours for myself when i can ,relax ,have my breakfast,and do things which i like to do,.;-),i don knw how i gonna manage my time once i start working which gonna start soon,till now i was just house wife but with work,part time course which gonna start soon,...life will be very very hectic,..and blogging is something which really relaxes me,...i just hope i will get time to blog because this is something which i dont want to leave at all,...and when i see fellow bloggers who are working,managing home,children and blogging too i know how well they must be managing their time to pursue blogging,...:-),...thats all frens,...tk care,,,will catch u all soon,..:-),...hppy bloggin,...nd ya i am missing Sailus taste of india,...:-( what about u all,...???

Parshe Pposto,Dimer bhapa,Bengali Thali and other delicacies for SWC-wEST bENGAL

Finally 90 percent of packing done,.now when i see packed bags,cartons,and empty rooms i feel so nostalgic,in another 15 days we will be leaving for Delhi,i am happy but sad too,excited but nervous too,..lookin forward for the change in my life as would be able to work there finally but i gonna miss my days in Singapore too,..when i reached here in 2006 after getting married,i was fresh graduate from dental college,who had no idea of cooking.
March 2008-i stumbled on Laksmis blog taste of mysore through orkut,she had announced SWC kashmir,then i didnt had any idea what food events are,.i clicked on the link and got some idea,..and thus Asan Khana was born,till then i didnt had any friends in Singapore,..but now after seven months i have so many friends because of blogging.
This post is specially dedicated to my Singapore blogger frens,..frens gonna miss u all lotz,..it was fun to meet and chat and know each other more,..gonna miss the foodies meet a lot,..:-(
Coming back to todays post,last month i tried lots of bengali recipe,source of recipe of parshe posto,chinir narkel naru,dimer bhapa,arhar dal malai,bhapa doi,kismisher chutney,allo bhaja,begun posto from here .

first MEAL is of
Parshe posto
which is fish cooked with posta seeds,when i saw this recipe ,i knew i had to try this,.yummy fish curry goes well with rice.
Dimer Bhapa
patience is needed for this recipe,for me steaming egg took lotz of time ,but together with parshe posto and plain rice meal was really delicious,..do try for a change,
Chinir Narkel Naru
hubby prepared this sweet,and he was really happy with the taste,it was difficult to manipulate the mix,mabe cause the mix was too soft but taste wise it was awesome.
Second one is Bengali Vegetarian thali
-which has plain rice with  Arhar dal malai,bhapa doi
,kishmiser chutney,begun posto
and allo bhaja
Third meal is
of Singapore style fish head curry
,bengali style pomfret in mustard sauce with plain rice.
