Another spicy treat from Ushas space,..;-)


When i prepared Hyerabadi Mutton Biryani from Ushas space i knew that i would be trying recipe of Hyderabadi chicken biryani from her blog soon and thats what i did today for dinner,...together with chicken shorva,fresh pomegranate in curd,..combo was yum,..thanks again Usha for sharing such yummy recipes in your space,
..i followed her recipe from scratch except for the last part ,i followed the procedures mentioned in my mutton biryani post ie the layering technique .

Usha has shared recipe for chicken shorva too,this is how i prepared

ingredient

two to three pieces of chicken

onion one chopped lengthwise

cumin seed half tsp

salt as per taste

red chilli powder half tsp

turmeric powder a pich

freshly grounded black pepper a pinch

corinader powder half tsp

half tsp oil to cook

procedure

heat oil in non stick wok

add cumin seeds oce they start spluttering

add chopped onions and keep frying till onions start changing their colour

now add salt,turmeric powder,black pepper powder,red chilli powder and coriander powder

keep stirring till oil is seen along the sides now add chicken pieces and fry further for few minutes

add half cup of water and cover and cook

once done remove from flame and serve hot with roti or biryani.

for fresh pomegranate in curd-beat curd and add fresh pomegranate seeds,i didnt add any seasoning to the mix and ya believe me it was perfect.

up ka paratha, hyderabad ki biryani, lassi tarbooj ki or soup hai badami,...






















Urad kachori is a must prepared delicacy during Holi festival ,but i didnt knew that parathas could also be prepared with kachori mixture,last year when i prepared Kachodis in Singapore i asked my mother what to do with left over filling,she told me to prepare parathas with them,so this year when there was leftover filling in the fridge,i thought of making Parathas and ya they turned out delicious and crispy,procedure is same as allo ka paratha reipe which i have blogged earlier its just that instead of allo mixture kachori mix has to be filled in,we enjoyed crispy urad dal parathas with allo gobhi tamatar sabji and bharwa lal mirch ka aachar.
ingredient needed for Allo Gobhi Tamarar Sabji
cauliflower florets chopped and kept in boiled water for 5 minutes drain and keep aside -one cup
potato peeled and cubed one
tomato chopped one
onion chopped one
cumin seeds half tsp
salt to taste
oil one tbsp
turmeric powder a pinch
red chilli powder a pinch
garam masala a pinch
procedure
heat oil in non stick wok
add cumin seeds and once they start spluttering add chopped onions
once the onions start changing colour add tomatoes and mix well
followed by addition of salt ,red chilli and turmeric powder
keep frying till oil is seen along the sides
now add chopped potates followed by cauliflower
if needed sprinkle few drops of water and cover and cook.
before removing from flame sprinkle garam masala powder mix well and simmer for 2 to 3 mins
serve hot with parathas.

i have got yummy dinner platter for you all ,thanks to Usha of spicy kitchen for sharing recipe of Hyderabadi Mutton Biryani,i was searching for the recipe on net and saw on her blog,she has given detailed description how to prepare authentic hyderabadi biryani,i followed her recipe except for the last part,in the last part of the recipe she has baked ,which i didnt do,i did the last part on stove top,if u guys r crazy about hyderabdi biryani do go through her blog,..:-) we enjoyed biryani with onion cucumber raita and spicy avocado,cucumber onion and onion salad in lemon and pepper dressing.
for the cucumber raita-beat curd well ,mix chopped cucumber and onion.sprinkle freshly ground pepper and pinch of salt,mix well .Serve chilled.
for spicy salad- finely chop onion,cucumber,avocado and yellow pepper,in another dish squueze out lemon juice,add pinch of salt and pepper.mix the dresing in the chopped salad ingredients ,toss well.Serve chilled.

In Delhi heat is on,so frequently prepared tea and soup at home is replaced by lassis,kulfi,smoothies and chilled soup,so u guys gonna see more of summer coolers recipe in my blog today i am going to share Watermelon Smoothie and Chilled Almond Soup
Recipe for Watermelon and almond smoothie
ingredient needed
chopped watermelon one cup
almonds seven
curd one cup
sugar as per taste
ice cubes four
procedure
Blend everything together to a smooth mix.Serve chilled.
Chilled Almond Soup i prepared from my Mediterranean Cook Book
here goes the recipe
ingredient needed

115gm fresh white bread
1 cup blanched almonds
garlic cloves two sliced
5 tbsp olive oil
one and half tbsp sherry vinegar
salt as per taste
pepper a pinch
tp garnish toasted almond flakes and seedless sliced grapes.
procedure
mash the bread in bowl add 150ml of water and keep aside for five minutes
blend almond and garlic in a food processor to a smooth paste
add soaked bread to the almond mix followed by oil,sherry vinegar and two and a half cup of cold water
process till smooth paste
transfer to serving bowl and season with salt and pepper
before serving scatter with toasted almonds and grapes.

chicken wheat wrap,..nd croutons..pizza for snacks,..nd kodi gasi and murgh nawabi for the chicken my favourite event...

chicken wheat wraps

i prepared these chicken wheat wraps with left over chicken ,onion,pepper,salt.Nd Tabasco garlic pepper sauce,..easy to prepare,..they can be eaten as starter or snack..i prepared them when i was feeling hungry,..

no need to heat it,..just heat the filling ,if u want,.keep it inside ,fold it and cut..it,..
vegans can substitute the chicken filling with cottage cheese,mushrom or mixed vegetable..wheat wraps is readily available in the markets,,they can be used in various other ways,..too,,crushed and added in cereals,..,soups,..etc..

croutons chicken pizza,..

i prepared this too with leftover chcicken ,cheese,onion,nd tomato auce,..
chop the leftover chicken into small pieces,..,vegans can substitute with left over cottage cheese curry or mushroom curry,,place on the croutons,add chopped onion,cheese nd tomato sauce,..keep in microwave for twominutes
enjoy as starter or snacks anytime,..

kodi gasi ( chicken with curry leaves )(andhra dish)

this chicken curry prepared with curry leaves goes well with plain nan,.u can enjoy with chapati too,..

for the masala to be grounded the ingredients are

dried red chilli 3
half teaspoon each of coriander,cumin and fenugreek seeds
few black pepper
desicated coconut half cup
garlic minsed half tsp

other ingredients

turmeric powder half tsp
cooking oil
chopped onion three
curry leaves about 30
one kg chicken cut into pieces
water
salt to taste

procedure

for the masala,combine all the masal ingredients nd grind to fine powder,..now add coconut,garlic nd turmericnd grind again to blend.

heat oil nd fry one fouth of the chopped onions nd curry leaves,..once done,..keep them on kitchen towel to drain the oil,..

in the same oil fry the remaining curry leaves nd onions,..once done add the grounded masala,keep frying till done,

..add the chicken pieces,salt and water,..cover and cook..

keep checking,..once done ,..remove from burner and eat hot with chapatis,..or nan,..

murgh nawabi ,chicken korma with saffron,(andhra dish)

andhra biryani is my favourite..still to cook...got this recipe while browsing through books in library..plannin to make this again,,,

ingredients

one kg chicken cut into pieces
yogurt half cup
minced ginger and garlic two teaspoon each
salt to taste
onion chopped two

fine powder of red chilli and aniseed one tsp

boiled egg fried and kept on kitchen towel

dryfruits like cashew nuts and raisins fried and kept on kitchen towel
garam masala powder one tbsp
saffron thread soaked in one tbsp of milk

mix curd ,garlic ginger paste ,salt with chicken and keep aside

heat oil,add the chopped onions,..keep frying ,

,once done add the grounded paste of aniseed and chilli,..once done add the garam masala,.keep frying till fragrant
add salt followed by chciken keep frying

and checking...add water and cover and cook..

remover from heat add saffron milk,..keep aside..

arrange chicken on serving plate and top with chicken ,eggs and raisins and almonds..
enjoy with plain rice or nan

thepla and andhra vankya kothimeera karam kura

got up with severe backache,.slept at 4:30am,..maybe cause i was sitting for quite long,,,just didnt had any mood to post the recipes today,..but i remembered yesterday when i told my sis i am preparing thepla,,she got really excited as just like me she has never tasted or seen thepla,,,according to her thepla is something sweet made of semolina,..but when i told her the recipe,,,she really got excited to give it a try,..so this post is specially for my sis,..parents are visiting her visiting her this weekend and she wants to try the raita and baingan curry too,..so here goes the recipe,,,,combi tasted good together...

ingredients

wheat flour one cup or depending on your need
curd or milk to knead the dough, i used both in equal amount u can vary the concentration
fried cumin seeds one tsp and ani seeds a pinch

salt to taste
red chilli powder one tsp
chopped green chilli two

procedure

take wheat flour add all the ingredients to it
knead a stiff puri like dough using milk or curd,keep aside for 20 minutes
roll out into thin paraths and cook on slow flame

before serving i applied ghee...if you dont want,,,eat hot with curry

andhra vankaya kothimeera karam kura

one pound brinjal
10 green chilli,i used 4 and it was really hot...
6 to 8 coriander sticks,,i didnt had so i substituted it with coriander powder
tamarind paste 3 tablespoon
salt to taste
oil or ghee for frying

procedure

cut the brinjal in to the desired shape you want

heat oil and fry till crisp

now add water and boil the brinjal till its soft enough

make paste of coriander stick and green chilli,add the paste and green chilli along with tamarind to the brinjal and continue boiling

now add the salt and keep boilPhotobucketing

remove from flame before all the water is absorbed

andhra friends what does the name mean?

apple raita

ingredients

one apple
beated curd one bowl
salt,sugar abd pepper to taste

procedure

peel and chop the apple into small pieces

garnish with sugar,salt and black pepper
take out of freezer before serving

From the Hyderabad kitchen Mirchi ka Salan

mirtoday i tried something which i have never tried before,..but ya have heard about it a lot...hari mirch ki sabji or salan is hyderabadi recipe,,...planning to eat it with roti for dinner so here goes the recipe of tangy mirchi ka salan

ingredients

green thick mirch 8(keep in salt water for half an hour and drain)
onion two chopeed
ginger one inch grated
garlic three grated

coriander powder one tsp
turmeric powder one tsp
salt to taste
cumin seeds one tsp
coconut grated two tbsp
tamarind pulp dissolved in water one and half cup

procedure

heat oil in wok
fry the drained hari mirch till they change colour,keep aside

followed by ginger and garlic
add turmeric powder,coriander powder, grated coconut and salt keep frying

now add the fried hari mirch

further fry for two minutes

add the tamarind pulp dissolved in water
