Fusion Thali ,Rakhi Thali and Platter of Idli with mixed veg sambhar

Its been so long since i published a post with thali , few days back prepared Ajwain Paratha paired it with alloo parwal bhujia,bhindi fry and begun bhaja from tongueticklers.I know thali is incomplete without dal and rice ,prepared Chana dal the same way my mother prepares and lemon rice .

Sharing with you all recipe of  Bhindi Fry,Alloo Parwal Bhujia and Chana dal.
Recipe name Bhindi Fry
Recipe source my mother
Ingredient
Okra/Ladysfinger/Bhindi - 200gm
onion one chopped
green chili one chopped
salt as per taste
oil to cook
cumin seeds half tsp
turmeric powder pinch
red chilli powder pinch
Procedure
Heat oil in non stick wok
add cumin seeds once it starts to splutter
lower the flame and add green chili and onion
keep frying till the onions are done
add chopped okra followed by salt ,red chili powder and turmeric powder
mix everything and cover and cook on low flame
keep stirring till the okra is done.
remove from flame and serve warm with dal chawal.
Recipe Name Aloo Parwal Bhujia/Stir fried potato and pointed gourd

ingredient
parwal 200gm chopped lengthwise
potato one sliced lengthwise
onion sliced lengthwise
green chili one sliced lengthwise
cumin seeds one tsp
oil to cook
salt as per taste
red chili powder half tsp
turmeric powder pinch
black pepper powder pinch
Procedure
In a non stick wok
heat oil and once hot add cumin seeds
followed by chopped onion and green chili
keep stirring once the onion is done add potato and parwal
mix everything and salt ,red chili powder,turmeric powder and black pepper powder
keep stirring for few minutes and cover and cook .
Recipe Name Chana Dal

Ingrdient
chana dal one cup
salt as per taste
turmeric powder pinch
for tempering
fennel seeds one fourth tsp
dried red chili two
bay leaves two
coriander powder half tsp
sugar pinch
grated ginger half tsp
ghee one tbsp
coconut powder three tbsp
Preparation
pressure cook dal and keep aside
Procedure
heat ghee in non stick wok
lower the flame add fennel seeds ,followed by ginger ,red chili and bay leaves
stir for a minute and add coriander powder,sugar and coconut powder
mix everything together and temper dal with this mixture
serve warm with chawal and veg curry.

Huh... finally back frens,....missed u all lotz,...

After so many tiring days and sleepless nights finally i am relaxing at my sis place in Delhi ,looks like perfect holiday for me after a long long time,with younger sis too at home its added bliss for us,morning and evenings its cold here but days are still warm and everywhere i go i am amazed by the varieties of eateries available here..be it food courts in various malls,roadside joints ,street hawkers,and local bazaars but the best part of staying in Delhi is home cooked food prepared by my mom,since my younger sis is even here for her vacations even she tried some regular dishes recipes of which i will be sharing soon,. ,..
coming back to today's post i will share recipe of Kadai paneer and doi begun which i prepared along with already blogged recipe of Mangalorean chicken curry ,for the first time i cooked chicken for my sisters ,was really glad when they told me it was really good....:-)
ingredient for Kadai Paneer
Cottage cheese 300gm
cumin seeds one tsp
black pepper seeds half tsp
bay leaves crushed two
green capsicum one chopped lengthwise
onion three chopped finely and two chopped length wise ,keep them separate
tomatoes one chopped finely and the chopped length wise
garlic six cloves chopped finely
green chili two chopped
half tsp each of turmeric powder,red chilly and coriander powder (masala mixture)
salt to taste
oil to cook
procedure
heat one tbsp oil in wok
add cumin seeds once they start spluttering add
crushed bay leaves and pepper seeds
followed by finely chopped garlic,green chilly and onions
once the onions start changing colour add finely chopped tomatoes followed by masala mixture and salt,
now add chopped capsicum and fry further
once oil is seen along the sides of the wok add the thinly sliced onions,tomatoes and fry for two minute
add chopped cottage cheese fry for a minute,if desired add water
simmer for two minutes and remove from flame.
Serve hot with roti and rice.

Parshe Pposto,Dimer bhapa,Bengali Thali and other delicacies for SWC-wEST bENGAL

Finally 90 percent of packing done,.now when i see packed bags,cartons,and empty rooms i feel so nostalgic,in another 15 days we will be leaving for Delhi,i am happy but sad too,excited but nervous too,..lookin forward for the change in my life as would be able to work there finally but i gonna miss my days in Singapore too,..when i reached here in 2006 after getting married,i was fresh graduate from dental college,who had no idea of cooking.
March 2008-i stumbled on Laksmis blog taste of mysore through orkut,she had announced SWC kashmir,then i didnt had any idea what food events are,.i clicked on the link and got some idea,..and thus Asan Khana was born,till then i didnt had any friends in Singapore,..but now after seven months i have so many friends because of blogging.
This post is specially dedicated to my Singapore blogger frens,..frens gonna miss u all lotz,..it was fun to meet and chat and know each other more,..gonna miss the foodies meet a lot,..:-(
Coming back to todays post,last month i tried lots of bengali recipe,source of recipe of parshe posto,chinir narkel naru,dimer bhapa,arhar dal malai,bhapa doi,kismisher chutney,allo bhaja,begun posto from here .

first MEAL is of
Parshe posto
which is fish cooked with posta seeds,when i saw this recipe ,i knew i had to try this,.yummy fish curry goes well with rice.
Dimer Bhapa
patience is needed for this recipe,for me steaming egg took lotz of time ,but together with parshe posto and plain rice meal was really delicious,..do try for a change,
Chinir Narkel Naru
hubby prepared this sweet,and he was really happy with the taste,it was difficult to manipulate the mix,mabe cause the mix was too soft but taste wise it was awesome.
Second one is Bengali Vegetarian thali
-which has plain rice with  Arhar dal malai,bhapa doi
,kishmiser chutney,begun posto
and allo bhaja
Third meal is
of Singapore style fish head curry
,bengali style pomfret in mustard sauce with plain rice.

GHAZIPURI BHARWA BAINGAN AND KHURCHAN MATHURA KA WITH FEW CLICKS,..

When the theme for the month of june for THE FOOD EVENT SWC was announced,,,i was really excited...cause,..that way iTHOUGHT I WOULD be able to blog my mothers recipe...since the day i have started blogging...i keep experimenting with different cuisines,,i will choose one cuisine and prepare all the dishes of the same cuisine,.or some times,..mix two different cuisines..and at times,..try to create my own recipes,..so tahhari,baingan ka bharwa,khurchan,rabdi,.allo gobhi tamatar sabji,malai wala paneer ,and many more,,the list is endless,all inspired by my mothers day to day cooking..ya thats true,,that whenever she used to cook,..i never paid any interest,...but now when i try to cook,..i remember the taste.,,love,..and everything.,.sometimes just feel like going back home ,..i still remember how my mother used to cook all my favourite things when i used to go home during my vacations,as my .holidays were always of few days,..she used to cook my favourite eateries everydays,..or used to ask me what i want to eat posta ka halwa ,dahi wada and chene ki sabji was always on most wanted list,..back in delhi my younger sis used to pamper me with chats,..misti doi,..and sweets,..they all knw i am foodie,..really miss those days,..and my youngest sis...she used to take hours to prepare chicken,.just for me and she used to lock herself in kitchen so that no body disturbs her,..when she used to cook...now really miss those days ,..when i cook back here in singapore...sometimes these memories just flash before my eyes,,,specially when i am cooking something which remind me of my parents and sis...miss them a lot at times,..guess i am drifting from topic,..
comin back to the topic in this post i will be blogging about bharwa baingan and khurchan...mathura ke...
have named the recipe ghazipuri bharwa baingan,.cause my mother being from ghazipur a small town in up..this recipe of bharwa baingan was told to her by her mother,,,ie my nani...and mathura ka khurchan cause...when we went for trip back there,,,long time..i still remember eating khurchan in patta bowl made of leaves ,,the halwaiwala,..scrapped the sides of the kadai,..and gave the delicious khurchan,,,mathura is famous for milk products...ie malai,rabdi,lassi...and many more things..and ya peda too....
comin to the recipe of GHAZIPURI BHARWA BAINGAN.
ingredients
small round brinjals 7 to 8
ingredients to make the paste for filling
onions two
garlic cloves seven
green chilli four
red chilli powder one tsp
salt to taste
turmeric powder half tsp
coriander powder one tsp
garam masala powder one tsp
cumin seeds one tsp
fennel seeds one
fenugreek seeds one tsp
mustard seeds one tsp
onion seeds one tsp
for the paste
heat oil in wok
add cumin seeds,followed by garlic,green chilli and onions
keep frying till onion loses its texture,shape and colour

grind all the seeds in a grinder and add red chilli,salt,turmeric,coriander and garam masala
mix the ground paste in the onion paste and fry for a minute
for the filling
make slits in the brinjal
with the help of spoon fill the paste in the brinjal..
and keep pressing with help of spoon
once the brinjal are filled in the same wok heat one tablespoon of oil

add the brinjals and cover and cook
to ensure that the brinjals are cooked properly,..place them in pressure cooker and cook till first whistle comes

vangi batata bhaji and vagharelo bhaat,..with another strip


This is the post which i really didnt want to publish,..but then thought..what is done ,.is done,..and other bloggers should know that this combo didnt rocked together...so that they don make the mistake which i made,...ya i am talking about the post of vagha relo bhat and baingan,..on which i did the cartoon strip too..the recipe goes here of vaghaa relo bhaat and of vangi batata bhaji here,.please dont prepare these two dishes together...u can prepare either of them but not together,,,
