christmas celebration at home 2013

I wanted to write this before the year ends,since past few months life has been very hectic so i was not getting time to update my space today i thought of stealing some moments from my chaotic life and ,...
had written the above two lines in December but thanks to my chaotic life  and the sudden breakdown of the  computer I couldnt complete this post ,so today while jotting down my new year resolution in the journal I thought of completing this post first day of the year itself :-)

 baked some cookies,iced them too ,recipe inspired from here

ya guys this one was my dream again

which I lived up this year ,it does feel great when we fulfill our dream

btw this year I did something which was in my bucket list since long more on it will come soon,...:-)

Perfect for winters - chicken in spicy spinach sauce

Most of the time when hubby is on call,it rains here and i am clueless  about what to prepare for dinner as its just me and Advay, if alone i would have been happy with a bowl of warm soup,but then Advay he wont drink soup and sleep so i guess i will prepare lemon rice or coconut rice or maybe some stuffed  paratha,..lets see,..:-)
Coming back to todays post sharing with you all bowl of chicken which i prepared few days back  when unlike today all three of us were there, i have seen this in many blog ,this is what i prepared with the ingredients around,this tastes better the next day as the flavours become more intense

Recipe name chicken in spicy spinach sauce
Recipe source kitchen experiment
Preparation time 20 mins
Cooking time 30 mins
Ingredient chicken 400gm
onion three
tomato one'
green chili two
garlic clove two
ginger half inch
baby spinach leaves  one cup
salt as per taste
oil to cook
half tsp turmeric powder
half tsp coriander powder
clove four
cinnamon crushed half inch
cumin one tsp
corianer seeds half tsp
black cardamom two
dried red chili two crushed
bay leaves crushed three
kabab chini four
green cardamom two
preparation
make paste of ginger garlic and green chili keep aside
make paste of two onion and keep aside
chop one onion coarsely and keep aside
make paste of tomato and keep aside
chop spinach leaves,boil in water for few mins
strain , make smooth paste and keep aside.
Procedure
In a non stick wok add one tbsp of oil
lower the flame and add ginger garlic and green chili paste
keep stirring add onion paste ,chopped onionand stir further for few minutes
now add tomato paste,salt ,turmeric power and coriander powder
followed by dried red chili,bay leaves,cumin seed,coriander seed,
clove,black pepper,black cardamom,cinnamon and kabab chini.
keep stirring till oil is seen along the sides,
now add spinach paste ,mix everything together
and let it simmer for few minutes.
remove from flame and keep aside.
In another non stick heat half tsp of ghee/oil
once hot lower the flame and add crushed green cardamom
followed by chicken pieces
fry for few minutes till slightly brown from both sides.
mix the fried chicken pieces with the spinach mixture
and pressure cook for one to two whistle.
serve warm with rice or chapati.

Recipe Marathon Day 2 Cheese Bread


Yesterday evening was full of surprise for me ,i was not told anything but everyone else knew including my hubby ,...;-) ya guys i was given surprise birthday party by my sisters and bil at Pallavis place,just like last year this year too there was blueberry cake

 the only diffrence was the place everything else was same,some times it feels so blessed to be around with luved ones isnt it;-) i had dressed Advay as little santa
 who was busy feasting as u can cee in the pics another big surprise for me was hand written poem by my father which i will be posting soon in his blog,i couldnt control my tears when Pallavi read it aloud,i guess this was the best birthday celebration i ever had
thanks Pallavi ,Neha and Suyash for planning and making it so special for me,

Coming back to todays post i gonna post another eggless baking recipe of Cheese Bread  from my bread book,

 I guess December is the perfect month for baking with cold breeze out and chill inside plate of warm oven fresh bread with some broth is all we need ,and that’s what we had for dinner one cold evening, Neha prepared Mushroom soup while I baked bread and together the meal was so comforting

Recipe Name Cheese Bread
Recipe Source Bread Book
Baking Recipe
Baking Temperature 200-190 degree centirade
Ingredient Needed
15ml active dried yeast
250ml warm milk
25gm butter
425 gm strong white bread flour
10ml salt
90gm grated mature cheddar cheese
Preparation
Combine the yeast and milk in asmall bowl,stir and leave for 15minutes to dissolve and for yeast to become frothy.
Melt the butter and cool it.

Procedure
Mix the butter with yeast mixture and keep aside.
In a Mixing bowl mix the flour and salt together
Make a well in the central and pour in the yeast mixture
Mix well to form a rough dough.
Transfer to a floured surface and knead until smooth and elastic
Return to bowl and cover and leave to rise in warm place until it doubles in vol.
(this will take aprrox two to four hrs)
Grease a loaf pan and keep aside
Punch down the dough and knead in the cheese to distribute it evenly
shape it into loaf shape ad place in the prepared tin
leave in the warm place until the dough rises above the rim of the tin (approx.one and a half hr)
Preheat the oven to 200degree centigrade bake the bread for 15mins lower the heat to 190 degree centigrade  and bake until base sounds hollow when tapped approx 30 minutes.

Celebrating Christmas and Birthday with Eggless Christmas Cake

With nani around i had to bake eggless christmas cake for everyone ,while i was baking she was pretty excited how the cake would taste,as she is very fond of such things which were rare during her days,she liked eggless banana muffin,mexican cinnamon cookies too ,i goona post them soon as this whole week i will be on with Recipe Marathon hosted by Nupur of One Hot stove ,this is first recipe marathon which i gonna participate so i am pretty excited so guys u gonna cee posts whole week on asankhana i dont know how i goona do that :-) coming back to todays post i gonna share recipe of my first eggless christmas cake which i baked today ,

recipe name Eggless Christmas Cake
preparation time one hr
baking time 40 mins\
baking temperature 150 degree centigrade

ingredient needed

75gm golden raisins
75gm raisins
75gm currants
75gm glace cherries
50 gm mixed peel
250ml apple juice
25gm toasted hazelnuts
30ml pumpkin seeds
2 pieces preserved stem ginger
finely grated rind of 1 lemon
120ml milk
50 ml sunflower oil
225gm self rising/wholemeal flour
10ml mixed (apple pie)spice
45ml brandy or dark rum
apricot jam for brushing

Preparation Soak the sultanas ,raisins,currants,cherries and mixed peel in the apple juice overnight
Procedure
Preheat the oven to 150degree centigrade ,grease and line cake tin and keep aside
In a mixing bowl transfer the soaked fruits,add hazelnuts,pumpkin seeds,ginger and lemon rind to the fruit.
Stir in the milk and oil ,sift the flour and spice into another bowl,then add to the fruit mixture with brandy or rum.
Combine thoroughly
Spoon the mixture into the prepared tinand bake for 40 mins or until the cake is golden brown and firm to touch.
Cool on wire rack

With the left over batter i prepared cupcakes or muffins whatever they look like in small muffin pan this is how they looked .
