Curried Mushroom and peas with steamed rice for winter nights

This post is about something which I have shared few years back in 2008 , Mushroom Matar is not something which is prepared on regular basis at our home most of the time its other veggie but yesterday thought of preparing the same as I had some fresh button mushrooms in the fridge which I had got from farmers market and a box of peas too.

Recipe name curried mushroom with peas
Ingredient
Mushroom 200gm
Green pea half cup
Tomato one
Onion one small
Garlic one clove
Ginger one fourth inch
Salt as per taste
Turmeric powder half tsp
coriander powder half tsp
Garam masala powder one tsp
Oil to cook two tsp
Asafoetida pinch
Cumin seeds half tsp
Procedure
heat oil in non stick wok, once oil is hot lower the flame
Add asafoetida and cumin seeds and let it splutter
Add chopped garlic, ginger and onion
Keep frying till the onion becomes brown
Add salt followed by turmeric and coriander powder
Fry for a minute or two and add tomatoes
Once the tomato is mushy add mushroom and peas
Cover and cook for five minutes
Add garam masala powder and half cup of water and let it simmer
After five minutes remove from flame and serve warm with chapathi or rice.

Veggies stuffed mushroom for Global Kadai

Today while bloghopping i saw the recipe of stuffed mushroom ,inspired i thought of giving it a try,had mushrooms in refrigerator,its just that i prepared it in paniyaram pan,These stuffed mushrooms are for Sumis event Stuffed Mushroom for Global Kadai
Here goes my version of Stuffed Mushroom
Recipe Name Stuffed Mushroom

Recipe category snack /appetiser/
Preparation time 10-15 mins
Cooking time 5 mins
Paniyaram recipe
Ingredient
Mushroom one packet washed cleaned and scooped from the centre
For the filling
Green peas handful
oil to cook
grated carrot one
grated capsicum one
cottage cheese 100gm
salt and pepper
brown bread two
cheese spread one tbsp
Procedure
In a mixing bowl mix carrot,capsicum,bread,salt and pepper
with help of spoon fill in this filling in the mushroom
top it with cubed cottage cheese
keep aside
heat oil in panirayam pan
once hot lower the flame
top each stuffed mushroom with cheese spread 
and slowly place the stuffed mushroom in the pan 
keep turning and remove from the pan once brown from all sides
this will take hardly 5 mins
enjoy hot,..:-)

quick fix meal - rice with veggies

Bowl of leftover rice,few veggies ,dash of salt and pepper,pinch of dried chives and few drops of olive oil thats how i prepared this Veggie fried rice,these days i am not giving much time to cooking because of my exams,:-( thats the sad part thats why my posts are flooded since past few days with quick fix meal specially when i am alone  in the kitchen cant help ....

Coming to this recipeof Veggie Rice
Ingredient needed
Leftover rice one bowl
mushroom 3-4 chopped
brussel sprout two chopped
cabbage chopped handful
olive oil half tsp
salt and pepper as per taste
dried chives a pinch

procedure
heat oil in non stick wok
lower the flame
add the veggies followed by salt and pepper
stir fry till the veggies are tender
add left over rice,mix well,followed by addition of chives
Serve hot .
These days while studying i like to munch on these

Dinner of stir fried veggies and wok fried chicken drumsticks




Its not always that I am alone at home ,but today I was and with Advay sleeping in the evening  and hunger pangs in stomach i had to cook something for myself,I chopped some veggies stir fried them, roasted chicken drumstick on wok and enjoyed the meal alone,I didn’t knew what I was preparaing,I didn’t had any recipe in my mind it was just this and that from here  and there with no idea what the recipe would turn into,.
So here goes the recipe of Rosemary flavoured Chicken Drumstick with stir fried veggies,..
Ingredient needed for the stir fried veggies
Spring onion one
Green chili one
Onion one
Mushroom four
Baby corn three
Salt and pepper as per taste
Olive oil half tsp
Lemon juice half tsp
Kashmiri masala a pinch
Procedure
Heat oil in non stick wok
Once oil is hot lower the flame and all the veggies together
Sprinkle salt and peppaer  followed by the kashmiri masala and lemon juice.
Lower the flame and let it simmer for a minute or two.
Serve hot with the fried chicken drumstick.
Ingredient needed for the Rosemary flavoured chicken drumstick
Chicken drumstick one
Olive oil half tsp
Salt as per taste
Red chili powder a pinch
Lemon juice half tsp
Garlic clove two
Ginger chopped a pinch
Pinch of dried rosemary
Procedure
Heat half tsp of oil in non stick wok
Lower the flame and fry chicken drumstick
Sprinkle salt, red chili powder,rosemary,ginger and garlic
Mix well and cover and cook
Add few drops of water if it starts sticking.
Check for tenderness  and serve hot with the warm veggies.


I wont say that I was really happy with the preparation but I liked the meal as it was prepared real fast and with less ingredients,not spicy though bit bland but I guess sometime we need to eat food prepared this way don’t u guys think so,..and ya it did satisfied my hunger pang,so I wont mind trying this again with some other ingredients what ever I find in my pantry or fridge ,whenever I am alone at home and need to curb  my hunger pang,.ceeu guys hope u had fantastic weekend ,mine went attending class,and studying,..Enjoy the week ahead cee u all soon.,.,;-)

thoda thoda khatta thoda thoda teekha chola kulche ke sath or babycorn salad hai saath


Its been a very long time since i prepared chickpea in my kitchen so today when i got the opportunity again to experiment in kitchen thanks to Advays afternoon nap,i thought of preparing chickpea curry,salad and ginger rice  ,though i have tried sindhi style and punjabi style and have my own chola recipe i wanted to try something different this time,,something which is spicy and tangy too,..i could imagine the taste while i was thinking what to add and what not,..sounds strange na,..i know but thats how i cook whenever i am experimenting,..:-)most of the time i start the tadka with cumin seeds but this time i thought of going ahead without them,and ya for the first time i used chola masala so the ingredient needed for
khatta and teekha chola curry-
boiled chickpea two cup
onion three chopped
garlic six cloves chopped
ginger one inch chopped
salt to taste
red chili powder one tsp
catch chola masala three tsp
cloves half tsp
black pepper half tsp
dried red chili three
bay leave two crushed
black cardamom two
tamarind pulp two tbsp
procedure
heat one tbsp oil in non stick wok
once oil is hot lower the flame and add clove,black pepper,red chili,crushed bay leaves and black cardamom,
once they start spluttering add chopped ginger,garlic followed by onion
keep frying till onions start changing their colour,once done add catch chole masala and red chili powder
fry further till oil is seen along the sides,now add tamarind pulp and fry further for a minute,.
add boiled chickpea and mix well with the masala
once done add one cup of water and cover and cook
remove from flame and serve hot s with kulcha or pulao
i served with ready made kulcha and ginger rice and salad
Ginger rice-
for ginger rice heat one tsp oil in non stick wok,add half tsp of cumin seeds once they start spluttering add one tbsp of grated ginger,once ginger starts changing colour add cooked rice and fry to mix well ,once done add orange colour and mix properly to attain uniformity.
for Salad
steam chopped mushroom and babycorn in microwave for two minutes,once done drain and keep aside,mix salt,pepper,chopped lemon leaves and chopped tomato ,toss well and serve chilled,guys thanks to my memory loss i have really forgotten what these herbs are known as they have lemon like flavour,when i bought them yesterday i saw the name but as soon as i reached the home i was blank,..:-(do let me know if u guys know the other name of these leaves...
Hubby is big fan of chola curry and i knew he was missing chola since  long time because at one particular time before our marriage chola curry with rice    was his regular meal so tangy and spicy chola curry is dedicated to him , chola curry  off to Alka of sindhi rasoi where she is on with Just for you event.
  Lakshmi is on with SWC salad where she is asking everyone to prepare quick and healthy salad within 15 minutes so steamed salad is off to her space
Chola bhatura combo is famous pair but chola also goes equally well with rice too,..so i am sending  Khatta and teekha chola curry with ginger rice combo to made for each other event hosted by Asvadha.

MALAI WALA MUSHROOM SHIMLA MIRCH CURRY,..CURRY MELA KE LIYE

Remember Kashmiri shorbha which i prepared few days back,..i mentioned in that post that i prepared mushroom curry with the pulp which was left after straining the soup,...so here comes recipe of mushrom shimla mirch curry malai ke saath,..:-) couldnt think of anyother name,..
ingredients
button mushroom one can
leftover pulp ofmushroom soup
red capsicum half chopped
cream two tablespoon(fresh one)
salt to taste
cumin seeds half tsp
red chilli powder half tsp
coriander powder half tsp
procedure
heat oil in wok
add cumin seeds
once they start spluttering add the leftover pulp
no need to fry much as its already fried before,,,
now add red chilli powder,coriander powder and salt
followed by chopped capsicum and mushroom
once mushroom and capsicum blends well with the masala
add water and cover and cook for two minutes
now add cream,simmer for a minute or two and remove from flame
serve hot with chapati
we had with leftover adraki gobhi and mtrs lach paratha,..

MANGALOREAN GASHI KASHMIRI SHORBE KE SAATH

Last Weekend hubby was not feeling well,..so thought of preparing soup of him,..i had never tried mushroom soup at home.,.i had a can of button mushrooms at home...so thought of preparing mushroom soup,.i searched recipes on the net and finally got this one,..have altered few ingredients ..depending on our taste..so here comes mushroom soup or shorbha..i didnt go for the Chinese one,..this version is Indian one from Kashmir,..
ingredients needed are

one cup button mushrooms chopped
two teaspoon mixture of ginger garlic pulp
one onion chopped
one tomato chopped
juice of half lemon
half teaspoon each of turmeric and red chilli powder
salt to taste
one teaspoon garam masala
butter one tablespoon
all purpose flour half tablespoon
oil to cook

procedure

heat one tsp oil in wok
add chopped onions and keep frying till they lose their shape
add ginger garlic paste,turmeric,red chilly and garam masala followed by mushroom
keep frying till everything blends well,now add chopped tomatoes,..
and further fry for few minutes
add water...and bring to boil
simmer for 15minutes and keep aside
once the mixture cools down place in a food blender
and process till smooth'
sieve the mixture into another pan and heat
mix butter with flour and slowly add to soup
to thicken the soup to the desired consistency
add salt and lemon juice
garnish with coriander leaves

(the pulp which i got after straining , i prepared curry with that,..which i will be posting in tomorrows post)

I prepared Gobhi gashi two days back,.yummy and spicy..with plain rice taste was awesome,this recipe is manglorean,liked a Lot,.good change from the regular one which we prepare at home

ingredients
300gm cauliflower chopped
potato chopped one
onion two chopped
ginger chopped tablespoon
garlic cloves three chopped
tamarind one teaspoon
salt to taste
half teaspoon each of turmeric na dred chilli powder
oil to cook
cloves two
peppercorn three
red chillies three
cumin seeds one teaspoon
cinnamon stick one cm
half teaspoon each of coriander,mustard and fenugreek seeds
coconut grated half cup

procedure

heat half tsp oil in wok and saute half of the onions and keep aside.
in the same pan fry red chillies,coriander,mustard,fenugreek and cumin seeds,cinnamon,pepper and cloves for 30 seconds,keep aside
blend together coconut,fried onions,and the fried spices along with tamarind paste,turmeric and red chilli powder,add two table spoon of water
and blend into paste keep aside
in the same wok add one tablesppon of oil and fry chopped ginger garlic,followed by the leftover onions,..for few minutes
add the spice paste,salt followed by water and potatoes...keep frying
finally add the cauliflower,cover and cook
once done remove from flame and serve hot with plain rice

JALDI MAI MUGHLAI PANEER ,MUSHRROM MATAR KE SAATH OR MEETHE MAI HAI SHAHI RABADI

sometimes while cooking there isnt much time to search recipes for the ingredients,.that time mind starts working on its own,,same happened with me ,had invited my friend for lunch,,,by one pm had to prepare chapati ,rabadi,rice,and two curries,..thats lotz when there one yr old to manage at home,..was lucky hubby was off call that day...thought hubby will manage advay and i will cook,,,but opposite happened,..i got so busy dng other chores and managing advay , finally hubby had to prepare everything,..i knew if i didnt tell him how to prepare,..both mushroom and paneer would have tasted same so while i was managing advay and doing other chores,..hubby managed kitchen and cooking,..i always prepare cottage cheese at home,. so preparation for lunch started with cottage cheese preparation,..after that i imagined the recipe and told him how to prepare,,,here goes the recipe paneer mughlai,,,my own creation...

ingredients

one cup home made cottage cheese(300gm)

paste of onion,tomato,green chilli and garlic one cup

milk half cup

saffr0n strands few

salt to taste

oil to cook

half tsp each of red chilli,turmeric and coriander

sugar half tsp

dry fruits chopped for garnishing

fresh cream one tbsp

procedure

heat oil in wok preferably non stick wok

add paste and keep stirring ,this process gonna take long time

as more time is needed to fry paste for gravy

once done and oil is seen along the sides

add coriander,turmeric,redchilli,salt and sugar

keep stirring...if pastes start sticking add milk instead of water...

once the mixture starts boiling ,lower the flame add chopped cottage chesse

simmer for few minutes ,add saffron strands and remove from heat

just before serving add fresh cream and chopped dry fruits.

while hubby was busy preparing panner dish,..i thought hard what to prepare with mushroom,..canned one,.had green peas too,,,so thought of this simple recipe to go with,..mushroom matar

ingredients

mushroom 250gm

green peas half cup

onion chopped one

green chilli one

cumin seeds half tsp

salt to taste

garam masala one tsp

procedure

heat oil in wok

add cumin seeds followed by chopped onion and green chilli

once onions start changing colour add garammasala and salt

keep stirring,now add chopped mushroom and green peas

fry for few minutes

once done remove from flame

mushroom do pyaza chawal ke theple ke saath...

Had heard of chicken do pyaza,..do pyaza means doubling the quantity of the onions used in preparing the dish,since stock of veggies was over in fridge thought of preparing mushroom do pyaza,saw tin of mushroom peeping from the store.,.other things used are

ingredients for MUSHROOM DO PYAZA

ONE CAN OF MUSHROOM

ONIONS TWO CHOPPED

GARLIC SIX CHOPPED

GREEN CHILI THREE CHOPPED

SALT TO TASTE

OIL TO COOK

CUMIN SEEDS ONE TEASPOON

BLACK PEPPER 6 TO 7 SEEDS

CLOVES 4 TO 5 SEEDS

BAY LEAF ONE CRUSHED

CORIANDER SEEDS HALF TEASPOON

RED CHILI CRUSHED THREE

black cardamom one

green cardamom two

PROCEDURE

heat oil in wok

add cumin seeds once they start spluttering

add chopped onion,garlic and green chili

keep frying till the onions start changing colour

now add coriander seeds,black pepper,cloves,bay leaf ,red chili and green and black cardamom

keep frying for few minutes,...add salt followed by chopped mushroom

cover and cook...keep stirring and checking.,.if needed water can be added

had leftover plain rice,was searching for thepla of leftover rice,,,finally got this recipe from TARLA DALALS SITE

mushrooms have a fairly high protein content, typically 20-30% crude protein as a percentage of dry matter. However there is extreme variation among species (3.5% in Cantharellus cibarius, 44% in Agaricus bisporus). High protein content makes them an ideal food because they contain all the amino acids essential to human nutrition. There are about eight essential amino acids, that is, those which cannot be produced by the human body, and so must be consumed in the diet daily. Mushrooms can be an important dietary source of these amino acids.
