Tea break

There are so many things going in my mind,so today I thought of taking a tea break for myself, plugged the  iphone and played some random old song,prepared crispy mint paratha ,paired it with stuffed red chili pickle and a mug of cardamom chai and  lived that momemt of sipping tea,tearing paratha and relishing it with the pickle,devouring  the meal as if there's  no tomorrow,forgeting everything for some minutes and breathing  for just self,,.:)

It's been a while since I had my own space but now as Advays school is open things are back to normal or maybe that's what I feel, it took me two months to write this post or to share with you all my musings .Now my posts wont be sporadic , will catch up with my favorite blogs soon sharing with you all   the recipe of Mint Paratha.
Recipe name - Mint Paratha 
Ingredient
whole wheat flour two cup
salt as per taste
mint leaves half cup chopped
carom seeds half tsp
red chili powder pinch
oil to cook
Procedure
In a mixing bowl mix all the above ingredient and one tsp of oil
add enough water to knead the dough ,cover with cling wrap and keep aside.
after 15 minutes divide the dough into equal sized lemon sized balls
flatten each ball and and roll with the help of rolling pin
place the  paratha on a preheated griddle
once brown from both sides apply oil and cook till its done,
serve warm with pickle and chai..

Indian breakfast - mooli paratha with bhindi bhujia and curd

Today is India's 65th Independence day ,this day reminds me of the special assembly which would be  held in our school followed by flag hosting by the Principal and distrbution of motichoor ladoo by our teachers.

When Advay came back from school today  he had the Indian tricolour   flag in his hand and when i heard him humming  Jana Gana Mana song i just smiled and remembered our childhood days btw i luved the way he hummed the song ,..:-)
coming back to today's post sharing with you all tri coloured which i prepared yesterday

this thali has Mooli Paratha, Bhindi bhujia curd nd is paired with Orange juice .

Mooli paratha recipe was shared by my sis on phone ,so here goes the recipe
Recipe name Mooli Paratha/ Pan fried indian flat bread stuffed with radish
recipe source my sister
preparation time 30 mins
cooking time 30 mins 
ingredient for the paratha
dough of whole wheat flour one cup
radish one
salt as per taste
red chili powder half tsp
garam masala powder half tsp
carom seeds half tsp

preparation
peel and grate the radish ,mix pinch of salt in radish
after 10 mins squeeze out the excess water by tying the grated radish in cheese cloth
in a mixing bowl mix the grated radish with salt,red chili powder,garam masala powder and carom seeds
divide the kneaded dough into equal sized disc and keep aside
make a depression in the center and fill in one tsp of the radish filling
bring the edges together ,flatten the disc and roll out on the rolling disc
place on a heat griddle/tava and sprinkle few drops of oil
flip once and once brown from both sides remove from flame
serve warm with curd and bhindi bhujia.

Some Festive Treats for Sankranti ;-)

I prepared  Til Gud Laddo for Sankranti last year
prepared this year the same,

and rice flour poori with aloo gobhi sabzi

For Rice Flour Poori
Ingredient
Rice flour one cup
wheat flour one fourth cup
salt pinch
cumin seeds one tsp
oil one tsp
warm water to knead the dough

Procedure
In a mixing bowl mix all the ingredients
and knead dough ,divide the dough
into equal sized small disc
place baking sheet on rolling disc
keep a small piece of dough
and roll out to the shape of poori
heat oil in in wok ,once hot lower the flame
and fry the pooris till brown from both side.
serve warm with Allo Gobhi Sabzi.

Where is the food from ?

Pia was quiet tensed ,for the first time in her life she was going to prepare parathas for dinner,
last nights verbal spat was still fresh in her mind, she had served half done fried okra, saltless dal to her hubby with chapati which was hard like papad. Just because she was fasting that evening she didn’t had any clue how bad the meal was, but if her hubby threw everything and ordered pizza it must have been unpalatable.
Pia got married as soon as she finished her  studies so she never got time to learn cooking skills from her mom. Now while kneading dough she could hear her fathers words in her mind which had become quiet frequent whenever she was home for hoilidays “Please teach her to cook or she will just mess up things after getting married ." This was the third time she was kneading the dough but again the dough was sticky. Pia was so much engulfed in her own thoughts that she didnt hear the phone ringing .Wiping her hands in her apron she rushed to picked it up.
She heaved sigh of relief when she heard her mother’s voice on the other end. Pia started crying she just couldnt control her emotions , with hubby around she had not got time to talk to her mother and cry out.
Pias mother knew something was wrong or she wouldnt have cried like this,
Phone conversation
Pias mother :“What happened Beta why are you crying?”
Pia :“Nothing Mamma just missing you all”
Pias mother : “ya i know even i am missing you, what are you doing ?”
Pia : “i am kneading dough but it has become all watery and its sticking all over ,i am feeling so useless that i cant prepare proper day to day meal ,i guess i will have to again prepare rice and dal. I am so bored of serving him the same thing again and again. I am scared what if he tells me please stop cooking for him."
Pias mother :“ do one thing beta come on skype i will help you ."
Pia :“thanks Mamma.”
Pia places her laptop in her kitchen ,focuses her camera to the countertop, collects all the ingredients needed to knead the dough ie wheat flour,water and mixing bowl and logs in to skype
Pias mother : “ beta strain the atta through the sieve and add water slowly and mix.”
Pia does the same as her mother tells her ,she mixes,remixes more flour and water to get firm consistency dough,

Elated Pia thanks her mom.Next her mother asks her to collect the utensils for rolling out the parathas,rolling pin,flour to dust ,oil and casserole lined with foil to keep the parathas warm.
Pias mom : divide the dough into equal parts,roll each part into ball.
Pia is slowly doing the same when the phone rings
Pias hubby :“ I am going to restaurant what u want to eat,i will get for you.”
Pia : “no i am preparing , please dont get food
Pias hubby –“ it must be Dal and Chawal again ,i am sick of eating the same meal twice everyday ,u tried your hands with veggie and chapati but i dont want to eat the same tasteless meal again.This time when we go India i will leave you there for some months, please learn cooking from cooking school and come back.
Pia starts crying and tells her hubby not to get food for her and slams the phone down.
Pias mother was watching everything from skype,she was shocked to see her daughter crying ,but in her heart she knew that her daughter will overcome this.
Wiping her tears Pia comes back to the screen, determined to learn from her mother and impress her hubby.Phone rings again but Pia doesn’t answer..
Pia :“Mamma what next”
Pias mother tells her to roll out each ball and then draws on paper to show her how to fold the paratha
Pias does the same and feels so happy when she gets the triangle shape,her mother tells her to re do the same and apply few drops of oil in semicircle shape and then fold to triangle shape.



.Pias mother could see that Pia was enjoying doing the parathas. Once done for the second time she asks her to put the tava on the stovetop. While flipping the paratha Pia burns her fingers, but she continued doing , determined to learn and show her husband that she can prepare a simple meal.Once done she carefully packs the parathas ,and asks her mother how to prepare simple sabzi of Alloo Gobhis,once done she sets the table,and goes for walk.In her excitement she forgets her cell phone.
Evening when her hubby comes and finds the house emptyhe thinks Pia is gone forever,maybe he was too hard on her ,he should have thought that she is also human being who has emotion. With no mood to eat ,he goes straight to him room.
Pia enters through the main door ,bubbly full of life with flowers in her hand :“oh you are back,you should have buzzed me”
Pias hubby : “where were you, I called you up so many i thought you left me forever”
Pia smiles : " For that i need ticket right?"
Pia hubby : "so you really want to leave me now, i am really sorry , i shouldnt have spoken to you like this.”
Pia :“no ya,i just went to get some fresh flowers ,i am feeling so good today.”
Pias hubby : " good after all what i told u”
Pia : "ya it did me good,anyways lets have dinner”
Pia confidently serves her hubby paratha with sabzi and serves the platter with ginger tea

Pias hubby : "Where did you order this food from ? It tastes like home cooked meal.Now we will order everyday from here you dont worry,I know some basics i will teach you."
To which Pia replied with a smile,"O really , glad to know you liked it since it is from my kitchen prepared by me."

Cooking for Advay - Platter with pan fried egg and Chena Paratha

Advays term break is on for a week,so these days i have to  keep him entertained for the whole dayand that too with a proper routine.As soon as one activity is over he comes and asks me what to do next,its his afternoon nap time now and me time for me so i am on with this post ;-)
Prepared this platter for him for todays lunch which has pan fried egg and paratha prepared from leftover
chhena ki sabzi .

To prepare Chhena/Curdled cheese at home - refer this post ,
For Paratha Dough - mix cheena ki sabzi with wholewheat flour and few drops of oil ,no need to add water.

Divide the dough into lemon sized balls.
roll out with help of rolling pin
place on a heated tava and roast till brown from both sides.
cool and cut with help of cookie cutter,for this platter i have used star and aeroplane shape.
I felt so good when Advay finished everything on his own.:-)

Besan ki roti or Ande ki Sabzi

Most of the time when we invite some one for lunch or dinner we want to serve them piping hot rotis staright from the tava,even for everyday dinner i do the same,that way roti tastes the best.yesterday when i prepared besan roti ,i didnt puff them,instead i removed them from the tava when they were half done.Before serving dinner i just applied ghee and placed them on hot tawa for a minute .There was no diffrence in taste too..

Recipe Name Besan ki Roti/Missi Roti
Ingredient needed for Besan Ki Roti
Two cup whole wheat flour
one cup gram flour
salt as per taste
red chili powder half tsp
corinader powder half tsp
garam masala powder half tsp
water to knead the dough
Preparation
knead dough and keep aside

Procedure
Divide dough in equal lemon sized balls
flatten each ball and roll out in the shape of chapati
but not as thin as chapati
heat tava once hot lower the flame
place the rolled out besan roti on hot tava
once done flip over to roast the other side
remove and keep in foil lined box
cover and keep aside
Before serving heat the same tava
place the half done roti on the tava
apply ghee on the roti and roast
till brown from both sides.
Serve warm with curry and dal
I paired Besan Roti with this  another version of  egg curry flavoured with cardamom
Recipe name Egg Curry with hint of cardamom
Ingredient needed
boiled egg four
onion two chopped
tomato one chopped
garlic clove two
ginger one inch
green cardamom two
black cardamom twp
bay leave two crushed
cumin seeds half tsp
salt as per taste
oil to cook
red chili powder one tsp
coriander powder one tsp
garam masala powder one tsp
Preparation
make paste onion ginger and garlic keep aside
make separate paste of tomato keep aside
mix salt ,red chili powder and coriander powder in the tomato paste
Procedure
Heat oil in non stick wok
once oil is hot lower the flame and add cumin seeds
once they start spluttering add bay leaves followed by cardamom seeds
add onion paste and keep stirring till onions start changing their colour
now add masala mixed tomato paste and fry further for few minutes
once oil is seen along the sides add half cup of water and let it simmer
add boiled eggs,sprinkle garam masala powder and let it simmer for few minutes
remove from flame and serve warm with chapati or rice.

Crispy dhaba style besan ki roti with spicy chicken bhurji

well for days i was craving for dhaba ka khana..but in singapore ,...:-( so today i played with ingredients and created the desi style recipe of chicken bhurji and besan ki roti...and believe me i was licking my fingers,,felt as if i was really eating in dhaba....do try to get the desi feeling specially for the dhaba khana lovers..

ingredients for besan roti- vary the quantity according to your need

two cup besan
one cup flour
one teaspoon red chilli powder
one teaspoon turmeric powder
one teaspoon ajwain
one teaspoon salt
one chopped green chilli
one chopped clove of garlic
half chopped onion
water to knead
half teaspoon of oil
ghee for desi feeling or u can use butter



procedure- mix all the ingredients except water ,now slowly add water ,,,consistency of the dough should be hard enough as besan ki roti is made thick...because of the ingredients added ,..if thin roti is made the ingredients will come out ,once the dough is kneaded make thick roti of the dough and place on tava which is already heated,,.



keep turning the roti and apply ghee when done

now the ingredients for the chicken bhurji

boneless chicken 250 gm for two people vary the quantity according to your need ,boil for two mins and keep the chicken stock aside
one tomato chopped
two onions chopped
three garlic clove chopped
three green chilli chopped
mustard oil one tablespoon
salt

for the masala mixture-ingredients are-
three big cardamom
two small cardamom
three dried chili
three bay leaves
two star anise
one teasppon each of cumin seed, coriander seed,black pepper and cloves
one inch of cinnamon stick
dry roast all the ingredients and make powder and keep aside

now heat oil in nonstick kadai and add green chili and garlic

once they start spluttering add onion and tomato followed by salt,..keep frying till onion turns brown ,now add the powdered masala and keep frying till the masala blends with the onion you can add few drops of water,...now add the chicken and keep frying till the chicken blends with the masala



now add the chicken stock and cover and cook

chicken bhurji is ready to eat

sattu ka parantha......rural food of northern india

well i know most of u all dont know whta sattu ka parantha is ....well sattu is the powder which u get when u grind the bhuna hua chana,..angrezi mai roasted gram flour.... its available in the market ....as sattu flour or atta ....u can enjoy the parantha with pickel ,...specially red chilli...

ingredients for two people

-sattu flour one cup

-kneaded dough for the parantha according to your need ,,,u can vary the quantity....dough should not be soft ...it should be hard for the parantha,,,u can sprinkle some oil to make the consistency according to your need

to make the mixture for the filling of the paratha-..u need these things-

onion chopped one
garlic chopped three cloves
green chilli three chopped
salt to taste
red chilli powder one teaspoon
astafoetida pinch
ajwain sorry dont knw the english term ,,pinch of
to enhance the taste i add red chilli pickelPhotobucket



well mix the aboove mentione things to the sattu and the mixture is ready....u can add few drops of water to soften the mixture,

now just fill the mixture in the already kneaded dough by making small round 2inch diameter and giving depression

make parantha with help of rolling pin

now on a preheated tava roast till brown from both sides
keep applying ghee

and enjoy hot parantha with pickle and tea,,,,make it thick it tastes better,,,,
