LAZY SUNDAY BRUNCH OF POTATO GARLIC SOUP WITH CROSTINI AND PANZANELLA REASON BEING RAIN..:-)and YA A CLICK AND A TEE...

Sunday brunch was lazy one,...with sudden downpour of rain felt like having soup,...but just soup doesnt sound good,...so made paznalenna salad and crostini with tomato topping,whole meal of salad,soup and bread was filling and healthy and rain added extra flavour to the meal.
for the Potato and Garlic soup ingredients required are
onion one chopped
garlic clove four chopped
potato two chopped
chicken stock or veg stock 800ml
juice of half lemon
salt to taste
pepper to taste
cream two tbsp
choped parsley two tbsp
milk 400ml
olive oil two tbsp
Procedure
Heat oil in wok and suate onion and garlic till tender
add potatoes and stock and bring to boil.
Reduce the heat and cover and cook till potatoes are tender.
Proces in blender till smooth ,return the soup in another wok
add milk and heat without boiling,
add lemon juice salt nd pepper
before serving garnish with fresh parsley,black pepper and half tsp of cream.
for the CROSTINI BREAD
6 SLICES OF CIABATTA BREAD
GARLIC CLOVE PEELED TWO
olive oil
salt and pepper
tomato sliced half
parmesan cheese
procedure
toast the bread under preheated grill till brown
rub the garlic on the bread,sprinkle salt and drizzle oil
mix togeter tomato,cheese and pepper
spread the mixture evenly on the toasted brushetta and place under
preheated grill for two minutes to melt the cheese.
SERVE HOT WITH SOUP.
PANZANELLA SALAD
four slices of ciabatta bread tearinto pieces and keep aside
two tomatoes chopped
cucumber half chopped
onion one chopped
salt and pepper
juice of half lemon
handful of chopped fresh parsley
two tablespoon extra virgin olive oil
one tablespoon of vinegar
procedure
in a salad bowl mix ciabatta bread pieces along with
tomato,cucumber and onion,followed by parsley leaves.
in another bowl mix oil,lemon juice,vinegar,salt and pepper
pour this dressing over salad and mix well
keep in refrigerator for an hour before serving.
I handpainted this top ,have used orange,brown and pink colours to paint this top
for the INDEPENDENCE DAY EVENT
AND THIS CLICK OF LASSI GOES FOR COLOUR WHITE AND GREEN FOR THE SAME EVENT HOSTED BY POOJA
CROSTINI
GOES TO MONTHLY MINGLE GRILL IT
HOSTED BY SIG AND STARTED BY MEETA
CROSTINI AND PANZANELLA SALAD GOES TO AWED ITALIAN
HOSTED BY DK OF CULINARY BAZAAR.

the potato garlic soup is awesome! really love the idea of combining the two in a soup. Crostini and panzanella are new to me. The meal looks wholesome. The lassi looks too good. Great entries for all events. Congrats on the awards! I posted a comment b4 this, but looks like it didnt get through.
