Lunch Meal of Khilwani Khichdi and Baingan Bharta

I am in love with this book,and  i gonnna try some recipes soon,this book has recipes from Bangladesh,India,Nepal,Sri Lanka and Pakistan and apart from recipes,there are vivid pictures depicting culture of these countries and travel essay.Beautiful Book which i goona cherish forever,..:-) Thanks Katy Gori again.
Coming back to todays post sharing with you all lunch meal which i prepare few days back
Baingan Bharta and Dry Khichdi
For Baingan Bharta

recipe source my mother
preparation time 10 mins
cooking time 10 to 15 mins
Ingredient
round big brinjal one
boiled potato two
onion once chopped coarsely
garlic clove chopped coarsely
green chili chopped two
tomato one chopped
salt as per taste
mustard oil one tbsp
garam masala powder one tsp
coriander powder half tsp
lemon juice one tbsp
Procedure
Heat oil in pressure cooker
once hot lower the flame and add
chopped green chili ,onion and garlic
stir for a minute and add tomato
followed by chopped brinjal and boiled potato
sprinkle salt,garam masala and coriander powder
mix and fry for two minutes ,add one fourth cup of water
pressure cook for one to two whistles.
Serve warm with Khichdi .

Preparation time 20 mins
Cooking time 25 mins
Ingredient
Rice one and a half cup
Toor dal half cup
salt as per taste
ghee one tbsp
bay leaves crushed three
cumin seeds half tsp
black pepper six
clove six
pearl onion eight
Preparation
soak rice and dal for 15 mins
drain and keep for seven minutes
Procedure
heat ghee in non stick wok/pressure cooker
lower the flame and add cumin seeds,bay leaves
followed by black pepper and clove
fry for two to three minutes
add baby onion fry for a minute
add drained rice and dal followed by salt
add enough water to cook the khichdi
reduce the heat and let it cook for 15 mins
serve warm with bharta and curd.

Weekend Meal - Palak Thepla and stir fried green pea and potato

Its been so long since i prepared Thepla at home ,I have tried Thepla with Andhra Vankya Kothimeera Karam kura ,with Gujarati style bhindi fry and Chawal Thepla with Mushroom Do pyaza so for this weekend meal i thought of preparing Palak Thepla and paired it with curd,pickle and stir fried green pea with potato.

For stir fried green pea with potato / Aloo matar /Matar Ghughni
Recipe source my mother
Ingredient
Potato sliced one
green pea half cup
onion one chopped
green chili two
garlic clove crushed one
salt as per taste
oil to cook
asafoetida pinch
cumin seed half tsp
bay leaves
garam masala powder one tsp
Preparation
soak frozen green pea in water for 10 mins
drain and keep aside
Procedure
Heat oil in non stick wok
add cumin seeds,asafoetida and bayleaves
lower the flame and add chopped onion,green chili and garlic
keep stirring till onion becomes mushy
add salt followed by potato
fry for 3 minutes and add drained green pea
followed by garam masala powder
cover and cook on low flame
add few drops of water if it starts sticking
serve warm with paratha or thepla.

Food Fiction - Of Spinach leaves and Sapeta

She was clocked up with thoughts about dinner,even though it was just 5pm but still she had to rush with things as she knew once her son would be back from playground she wouldnt get any time,cooking was something which she enjoyed the most when she was alone because she could be herself ,she pondered a lot and then decided to prepare Sapeta,plain rice and onion raita  for dinner .

In a basket she kept all the ingredient she needed tomato,onion,green chili,garlic and spinach leaves,she tuned to her favourite radio station and started with the preparation .Her one of the favourite song Babul Mora Naihar Chuto Jaye was playing on the radio ,as she started chopping spinach leaves her thoughts went back to her childhood days.
It had been some four years since she last visited them ,because of her son's school . she just didnt get time to visit her parents .It was just either phone call or skype which kept them connected,but now since her son's exams were over she thought of planning a visit soon.Once spinach leaves were chopped,she washed and drained the leaves and started with the  preparation of  dal but mentally she was still at her parents place.Anjali was so busy frying onion that she didnt realise that the  door bell was ringing ,surprised that who would  be at this time she wiped her hand in the kitchen towel and rushed to open the door.
Vivek - "what took you so long ?"
Anjali - "Oh i was so busy cooking that i didnt realise,how come you are early today ?"
Vivek - "I thought of surprising you -) "
Anjali - " thanks i just had tea what would u like ?"
Vivek  - "nothing i am going on office tour for few days,and as Akshat is going for his summer camp the same time i thought you can join me for the tour."
Anjali thinks ( i cant go to my parents place again  this summer ),"oh ya sure i gonna join you."
Vivek-  " I knew you would be ready , have booked the ticket and spoke to Akshat too."
Anjai wiping tears from her eyes adds tomato and powdered masala to the fried onions,her younger sis was coming after two years from States ,she knew that she cant tell this to her hubby ,keeping her emotions to her self she adds chopped and drained spinach to fried onion and tomato mixture.
Vivek - "what are you preparing it smells so good ?"
Anjali - " i am preparing Sapeta this reminds me of my Dadi ,you know when i was kid i never used to like this,but now not only i prepare i like it too."
Vivek -" hmm you missing your Dadi ?"
Anjali - " no its just that some recipes makes us nostalgic."
Once Sapeta was prepared and the table was set Anjali saw a envelope addressed to her on the kitchen table.
Anjali - "Vivek when did this come , evening there was no mail."
Vivek -" its addressed to you so i didnt open"
Anjali opens the envelope slowly and finds a card and ticket to India for her hometown tears filled her eyes and she knew who would do this,Vivek was looking at her expression with a grin on his face,
Anjali -" so this is it ,thanks a ton ."
Vivek  -" Thanks now when did this word come between our relationship,you deserve a break its been so long since u visited your parents ,so i planned it i know ur younger sister is coming from States."
Anjali - " I thought of telling you today but when you told me about the trip I dropped the idea anyways thanks for making my day ,.:-)"

Recipe name- Sapeta
Recipe source kitchen experiment
Ingredient for the dal
Toor dal half cup
salt as per taste
turmeric powder half tsp
Ingredient for fried spinach
spinach leaves chopped one cup
onion one chopped coarsely
garlic clove two chopped coarsely
green chili two chopped coarsely
tomato one chopped coarsely
cumin seed half tsp
asafoetida pinch
bay leaves crushed two
dried red chili crushed one
oil to cook
coriander powder half tsp
red chili powder one fourth tsp
Preparation
pressure cook dal for one to two whistle and keep aside.
Procedure
heat two tsp  oil in non stick wok
once oil is hot lower the flame add cumin seed,asafoetida,dried red chili and bay leaves
once they start spluttering add chopped onion,garlic and green chili
keep stirring till onion starts changing its colour
add chopped tomato ,red chili and coriander powder followed by salt
keep stirring till oil is seen along the sides
add chopped spinach leaves and mix everything together
after 2 to 3 mins add cooked dal and let it simmer for 5 to 10 mins.
serve warm with rice and raita.

Weekend Meal - Malvani Fish Curry and Fried Golden Pomfret

Most of the time i go for the regular fish curry which is prepared at our home,the taste of which is still fresh though its been ages since i last had the meal  and one which reminds me or our weekend meal with our cousions and sisters,but this weekend i thought of trying something from Malvani Cuisine ,since i had all the ingredients in my pantry i had to try the Malvani Pomfret curry,substituted Kokum with green mango
Malvani fish curry is inspired from here and here .

Paired the meal with fried golden pomfret ,rice ,and coriander & mango chutney.
 Fried Golden Pomfret
 Ingredient needed
eight pieces of pomfret
salt as per taste
turmeric powder pinch
red chili powder half tsp
coriander powder half tsp
chopped coriander leaves one tbsp
lemon juice one tbsp
gramflour one and a half tbsp
oil two tbsp
Preparation
In a mixing bowl mix all the above except gram flour
keep aside for 30 mins

Procedure
Heat oil in non stick pan,once hot lower the flame
sprinkle gramflour on the marinated fish pieces
and pan fry the fish pieces til brown from both sides.
Mango Coriander Chutney
Ingredient needed
chopped coriander leaves one cup
half of green mango chopped
green chili one
salt as per taste
Procedure
mix all the ingredients and run through blender .
serve with rice and fish curry.

Cooking for Advay - Stir fried Noodles with Prawns

As Advay is fond of noodles and pasta  i keep experimenting with different ingredients.Prepared this platter last week paired it fried egg ,this is how i did

Recipe name stir fried noodles with prawns
Ingredient
Noodles one pack
onion one sliced
capsicum one sliced
salt as per taste
oil to cook
black pepper one fourth tsp
maggi chili sauce two tbsp
shrimp 200gm
preparation
boil the noodles till al dente ,drain and keep aside
devein shrimp and keep aside.
Procedure
heat oil in non stick wok
lower the flame add sliced onion
keep stirring till onion starts changing colour
add salt,pepper ,followed by capsicum
keep stirring once capsicum becomes mushy
add maggi chili sauce and shrimp
fry for two to three minutes till the shrimps are done
add drained noodles fry further for two to three mins
serve warm with fried egg on the side.

Weekend Meal - Aloo Matar Wadi curry with Ajwain Kachodi

It's been more then a week since I am back from India,things have been pretty hectic since past few months but I am glad that things are back to normal .
Advays summer break is on so most of the time is spent entertraining him which includes trip to library,playground ,swimming class and other numerous things to keep him busy till his school opens.

Coming back to today's post sharing with you all lunch platter which I prepared this weekend.

 For the semidry Aloo matar wadi curry
Ingredient
Homemade moong dal wadi half cup
Potato two cubed
Onion one chopped coarsely
half cup green peas
Tomato one chopped coarsely
Garlic two cloves chopped coarsely
Salt as per taste
Oil to cook
Whole masala
Cumin one tsp
Asafetida pinch
Dry red chili three crushed
bay leaves two crushed
green cardamom two
powdered masala
red chili powder half tsp
turmeric powder pinch
coriander powder half tsp

Preparation
heat one fourth tsp oil in non stick pan
once hot lower the flame and stir fry moong dal wadis
once they start changing colour remove from flame and keep aside.
Procedure
In the same non stick pan add half tsp oil
and add whole masala and lower the flame
add chopped onion and garlic and keep stirring
once onion starts changing colour add tomato
and powdered masala followed by salt
keep stirring till oil is seen along the sides
add cubed potato,stirfried wadis and green pea
fry everything for two to three minutes
transfer the content to pressure cooker
and pressure cook for one to two whistles.
serve warm with poori,raita and pickle .
