Chicken Shami Kebab for International Buffet in School

When Advay told me about International Buffet in school was clueless what to give him husband suggested Chicken Shami Kebab

 so we prepared  the same yesterday to be packed for the school ,

Recipe is inspired from
Deeba of Passionate about baking
Sangeetha of Banaras ka khan and for the love of yum
It was not easy when you don't have spice grinder at home so grounded the roasted whole spices with help of steel ladle took some hours for the preparation of the mince with everything but it was worth it.

coussin de lyon -lyon speciality

While walking in the narrow street of Lyon I saw several candy stores , most of them had
Coussin de Lyon written on them and image of green cushion shaped candies on the shop door.

 Intrigued and bewildered thought of trying the same during evening stroll thankfully they are sold per piece too,

Bought them for the first time from Chocolate Voisin .loved them .

The Coussin de Lyon is sweet speciality of Lyon France This candy is composed of chocolate and marzipan ,filling is flavoured with Curacao.

This Chocolate was created in 1960 by Chocolatier Vinson

 ya this delicacy is something which should not be missed

Carmella Pasta in Marinara Sauce

I was never a big fan of Pasta .I used to prepare Pasta in Singapore just for Advay most of the time when his friends used to come home for play date but here in Lyon when I saw fresh pastas in farmers market thought of giving them a try saw some unusual shaped one which were named as Caramella Pasta stuffed with cheese and spinach ,the filling intrigued me and the shape reminded me of childhood ya candy shaped so thus bought some and cooked the same day and ya now I am big fan of fresh pasta

Recipe name Carmella Pasta in Marinara sauce

Ingredient
Marinara sauce one cup
Fresh Carmella pasta cooked till a dente
Parmesan cheese grated
Basil leaves three torn
To serve
In a serving bowl keep the cooked pasta
Top it with marinara sauce
Followed by parmesan cheese and basil leaves
serve warm and relish

Curried Chicken and Spinach Soup

what you like to eat when its raining I know most of you will say soup that's what we felt like having today as its been raining here continuously since past few days

so todays dinner was soup prepared from the ingredient in the pantry paired with sesame baguette bought fresh from the bakery.

Recipe Name - Curried chicken and spinach soup
Recipe source - Kitchen experiment
Ingredient
Chicken Drumstick one shredded
spinach leaves half cup shredded
onion half chopped coarsely
tomato half chopped coarsely
to temper
oil one tbsp.
mustard seeds half tsp
dried red chili one crushed
curry leaves six
powdered masala
half tsp each of red chili, turmeric and coriander powder
salt as per taste
black pepper powder pinch to season
to thicken the soup
one tbsp of cornflour dissolved in half cup of water
Procedure
heat oil in non stick ,once the oil is hot lower the flame and add the temper ingredients
once they start spluttering add chopped onion and keep frying till the onions turn brown
once the onions are brown add the powdered masala,salt and chopped tomatoes
keep stirring till the tomatoes become mushy ,add shredded spinach followed by chicken
cover and cook for 15 mins ,add cornflour solution and two cup of water
let it simmer on low flame for 10 mins
serve warm sprinkled with black pepper with some baguette slices on the side

curried potato in yogurt sauce /dahi wale alloo

Ya life is back to normal Advays school start this week so I will have some routine , I know now where to buy grocery and have started revising French as its difficult to manage here yesterday prepared curry as was craving for some ,last week we had Indian meal at some tandoor place after which I felt like cooking cuury at home instead of splurging money at Indian restaurant curried chicken tikka masala had more of capsicum then chicken and I felt as if I am eating capsicum curry  anyways wht I learn aftr the meal was that food in Indian restaurant is for Europeans not for us so coming back to todays post sharing with you all simple curry which can be prepared in jiffy and ya reminds you of home too speaking of home theres something which has not changed with time and that's reading Hindustan times the first thig in the morning,..

Recipe name Curried potato in yogurt sauce/dahi wale alloo
Recipe source Kitchen experiment
Ingredient
Potato Cubed two
onion one sliced
garlic clove crushed one
tomato one
oil to cook one tbsp.
curd two tbsp
to temper /chaunk
asafoetida pinch
cumin seeds half tsp
dried red chili one crushed
bay leaves one crushed
salt as per taste
half tsp each of red chili,coriander and turmeric powder
Procedure
Heat oil in non stick wok, once oil is hot
 add asafoetida,cumin seeds,bay leaves and dried red chilib
add chopped garlic and onion and fry till onion is browned evenly
add the powder masala ,salt and cover and cook for 5 to 7 minutes
once the masala is cooked properly add the chopped potato
cover and cook for 10 to 15 mins on low flame
if needed add half cup of water.
once the masala thickens remove from flame add curd
mix evenly and cook for 5 mins
serve warm with roti and some salad on side.

Home Cooked Comfort food in Lyon

Its been 4 days since we reached here, now this place looks like home ,everything is at its proper place and there are some cosy corners too where I can sit back and relax. Now that home is set thought of cooking some simple meal as had been craving for home cooked meal since long so today dinner was plain rice ,chana dal ,allo bhujia ,salad and pickle.

Thankfully there was pressure cooker in the apartment so it was quiet easy didn't temper the dal ,bought rice and chana dal  from the local grocery store nearby they just had Cambodia rice which paired nicely with the dal and allo bhujia .For the salad mixed half tsp of red wine vinegar in a bowl of chopped onion and tomato sprinkled salt and pepper tossed nicely. Ya friends this was comfort food for me really felt satiated,..That's all guys will catch up with your blog soon,,take care and happy blogging

Lyon Dairy


It’s nice and warm here during daytime and there’s nip in the air evening time it’s been two days since we reached here so there’s still lots of things to be done I am just going with the flow and soaking in everything as if there’s no tomorrow ,home is still not organized things are still strewn around, regular cooking has to be started as since past two days we are managing with bread, butter, omelette and cheese just like people in France do . Since past few months life had been really hectic so after reaching here I have slowed down as for now there's no routine as Advay's school has not started

 ya I am excited about trip to farmers market to buy local vegetables along the riverside . I am loving this life specially when I wake up and see all kind of random buildings from the bedroom window my favourite being the church so guys will be updating on regular basis how I am coping up with life In Lyon. Asan Khana will be updated from Lyon now so now you all know why I was not there in blogosphere …

Sometimes I feel as if this year is running away ,its September already last post I had shared some divine pics of ShriKrishna Janmashtami todays post is for Lord Ganesha who is also known as Vighnaharta ie remover of obstacles. Though this festival is not celebrated at my hometown still I do pooja for Ganapati at home and prepare Modak for Naivedyam.

Palak Kachodi and Kofta for the Krishna Janmashtami 2014

Last week was Shri Krishna Janmashtami

 so this year decked up the entrance with Krishna idol

 and prepared Lord Krishnas favorite dessert kheer 


.Since childhood festival means another excuse to indulge in delicacies like poori ,kachdodi.So for dinner thought of preparing Palak Kachodi and Kofta Curry. Had  heard about Palak Kachodi a lot but never tried at home .So this meal was prepared to get into the festive fervour after all festivals are something which bring break to the otherwise monotonous life.

For the Spinach Kachodi
ingredient
whole wheat flour two cup
salt as per taste
carom seeds one tsp
red chili powder half tsp
garam masala powder one tsp
oil to cook
spinach leaves one bunch
preparation
remove the leaves from the stalk
chop and wash the leaves keep aside
boil water in a sauce pan and boil the leaves
drain the water and let the leaves cool
blend the leaves in a blender and keep aside
procedure
In a mixing bowl mix pureed spinach with flour
followed by salt ,carom seeds, red chili & garam masala powder
add water and knead to make a smooth dough
healt oil in wok for frying the pooris
divide the dough into equal sized discs
flatten each disc and roll out the shape of poori
once oil hot enough fry the pooris
drain on kitchen towel and keep aside.

Besan Halwa - to drive away the blues

Since past few weeks we had been very busy as my parents were here that's the reason I couldn't blog ,today after finishing the morning chores thought of writing this post ,sharing with you recipe of Besan Halwa which my mother had prepared when she was here which we relished like anything and thus asked her to prepare once more before she left for India she prepared halwa without using any measurement  so I called her up and  asked her approximate measurement


Recipe name Besan HalwaIngredient
Besan/Chickpea Flour one cup
Ghee three fourth cup
Sugar one and a half cup
Dryfruit to garnish one tbsp. almond
Procedure
In a non stick pan add five tbsp. of ghee and roast the chickpea flour till it starts changing colour once it becomes slightly brown add water and stir nicely to remove lumps .After five minutes add sugar and stir nicely. serve warm garnished with dry fruits.
so yesterday when I was feeling desolate after they left  I had some of this perfect way to drive away the blues.

Quinoa Salad

I had read about quinoa a lot ,drooled looking at the pictures in various food blogs and magazines but never tried cooking it at home so one noon while shopping for the grocery when I saw searched for quinoa I had no excuse, bought it and today after so many days when I felt hunger pangs and as there was no leftover in fridge I thought of cooking quinoa and thus I did ,had some cherries in fridge so thought of preparing salad with the same .

Recipe Name – quinoa salad
Ingredient
Quinoa half cup
Cherries six
Baked almond four
Pinch of black salt
Prepration
Cook half cup of quinoa in one cup of water ,keep aside.
Dice the cherries keep aside.
coarsely chop the almonds keep aside.
Procedure
In a mixing bowl toss everything together
