Pantry clean up pizza – Paneer butter masala pizza

I know you all must be shocked by the name of the pizza but that's what this pizza was because I had two leftover capsicums in my fridge , about to expire cheddar cheese ,leftover ready to cook butter chicken paste and some cottage cheese  .So yesterday morning itself dinner was planned that I will be preparing Paneer Butter Masala Pizza.Prepared dough in the morning

itself and kept it for rising and with Advay having two test the next day I wanted to keep myself free yesterday evening .
Recipe Name – Paneer Butter masala pizza
Ingredient
Pizza dough
Pizza sauce two tbsp
Onion one
Tomato one
Capsicum half each of red and orange capsicum
Cheddar cheese grated one cup
Two tbsp of ready to cook butter chicken masala
Cottage cheese cubed half cup
Half tsp olive oil

Prepration
Chop all the veggies and keep aside
Heat half tsp oil in non stick wok , add the cubed cottage cheese
Once the cottage chesse starts turning brown add the ready to cook paste
Cook on low heat for five minutes .
Let it cool and keep side.
brush the pizza pan with olive oil
preheat the oven to 100 degree centigrade.


Procedure
Divide the dough into equal sized discs
Roll out the disc and pierce it with fork
place it in the prepared pan
spread the pizza sauce with the help of spoon
Top it with sliced onion ,tomato and capsicum
Crumble the cooked cottage cheese and sprinkle
Followed by the grated chesse.
Bake in preheated oven for 10 mins till the crust becomes brown.
Serve warm .
I like to eat the pizza topped with nandos mild sauce and pinch of red chili flakes.

Stir fried cauliflower with potato and tomato perfect with pan friedbread

Stir fried cauliflower is something which is routinely prepared in almost all North Indian home ,I have grown up eating this veggie though it's another thing that curried cauliflower was prepared more often at our home ,the recipe which I am going to share is evolved recipe ,something which I learnt on my own because I know at home this is not the way this is prepared but back here in Singapore whenever I prepare Cauliflower stir fried I follow this recipe so after preparing this stir fried for the umpteenth time I thought of blogging the recipe so that after some decades when Advay has to cook he can find this easily ,this is for you Advay now that you can read I love it when you say that mummy open this file what poem have you written maybe some day you will be reading my blog too J


Recipe Name – Stir fried Cauliflower

Ingredient

Cauliflower half
Potato three
Onion one
Ginger grated two tsp
Garlic grated two tsp
Tomato one chopped coarsely
Green chili one sliced
Peas half cup
Salt as per taste
Mustard oil to cook one tbsp.
Half tsp each of turmeric,red chili powder and coriander powder
Three fourth tsp garam masala
Pinch of asafoetida
Cumin seeds half tsp
Bay leaves crushed two

Preparation
Soak thawed green peas in one cup of water
Cook chopped cauliflower in microwave for 4 minutes, drain and keep aside.
Cook potatoes in microwave for 4 mins ,drain and keep aside. Once it cools down peel and cube.

Procedure
heat oil in non stick wok ,once the oil is hot lower the flame and add asafoetida and cumin seeds
followed by bay leaves and the grated ginger garlic ,once it turns brown add chopped onion
keep frying till the onion is brown add the powdered masala & salt
fry for two minutes add boiled potato and cauliflower and let it cook for 5 minutes
after five minutes add drained tomato, green peas and green chili
let it cook for 10 mins ,sprinkle few drops of water if the masala sticks to the bottom of the pan.
Serve warm with paratha.

Treasure hunt party which wasn't planned,..

This Friday had planned  a send-off party for Advays friend who is moving to India,Thursday when Advay came back from school he asked for a paper and started drawing something .
 

I thought he is doing the regular sketch so asked him what he is sketching ,he said treasure hunt ,I was like okay but then he said for tomorrow
Me slightly taken back - "for tomorrow ?"
He - "yes for tomorrow party ."
Me -"but it's a send off party."
He-" ya I know but they gonna play too."
Me-" okay what is your plan ?"
He showed me the sketch this is the map and these are the treasures which will be hidden ,he showed me the sketch of the treasure too.

Me bemused smiled at his planning and thought how to execute his plan.
Friday morning after sending him to school thought of creating some banners to go with the theme ,
 

prepared a small bunting for the send off too

 and started with the chores .Morning while checking twitter I saw coconut cream frosting at Kiran Tarun blog thought of doing the same for the chocolate cake .Next time I do this I am going to chill the coconut cream overnight in freeze.

For the frosting followed the same recipe as given in Kiran Tarun blog instead of vanilla essence added raspberry essence and pin colour whisked everything and spread it on the cake with the help of spatula.sprinkled some sprinklers and kept the cake in freeze .

The cake was devoured by the kids ,next time I am going to try sandwich cake with the same frosting

Chaach – spiced buttermilk

In my last post I had cribbed about the sweltering heat in Singapore so yesterday I skipped lunch and prepared Chaach for myself ,chaach also known as namkin lassi or spiced up buttermilk is a cooling drink unique for its digestive properties and health benefits. This drink can be taken anytime with the meal or after the meal or as I did instead of the meal .  
CHAACH

Recipe Name – Chaach – Indian spiced buttermilk
Ingredient
Curd one cup
Water three cup
Icecubes 4 to 5
One fourth tsp black salt
Pinch of red chili powder
Pinch of dried mint powder
Procedure
In a mixing bowl whisk the curd with water , transfer in a glass add ice cubes ,sprinkle red chili , black salt and dried mint powder .
Serve chilled. Satiated and Refreshed that's how I felt after having this .

For the dried mint powder sun dry the fresh mint leaves for 3 to 4 days, pluck the dried up leaves from the stalk and make a coarse powder by running the leaves in a blender. Transfer the content in a clean and dry jar .

Weekend cooking – mutton korma paired with egg pulao mint chutney and chapathi

As you all must be knowing by now my weekends are known to be chaotic still I manage to prepare a decent meal and that's what I did yesterday with the back up ingredients like coriander chutney,mint chutney and home made curd life looks easy so if nothing else at least I can prepare stuffed paratha but last few days weather has been very bad in Singapore hot and humid so stuffed paratha was out of plan so I thought of preparing curry with the shaan masala which I keep for such situations when I am out of idea to experiment ,this is a simple curry which doesn't need any special ingredient this is how I executed the meal .

 
mutton korma

  • Recipe name – mutton korma
  • Preparation time – 10 mins
    Cooking time 30 mins
  • Ingredient
    Goat meat 500gm
    Curd half cup
    Onion one sliced
    Ginger julienne one tbsp.
    Oil to cook one tbsp.
    Shaan korma masala half packet
    Preparation
    In a mixing bowl beat curd mix half packet of shaan korma masala followed by the mutton pieces ,keep aside.
    Procedure
  • Heat oil in non stick wok,once hot lower the flame and add sliced onions
    Keep stirring till the onions become brown add the marinated mutton pieces
    Keep stirring ,sprinkle few drops of water and let it simmer for 10 minutes
    After 10 minutes sprinkle ginger julienne and transfer the content to pressure cooker.
    Pressure cook for 3 to 4 whistles.
    Serve warm with pulao and chapathi.

  • Recipe name – Egg Pulao
    This is something which I do most of the time ,fry boiled egg in the same wok in which curry was prepared,strain and keep aside
    Fry the cooked rice in the same wok ,that's all ;-)
    To serve keep the fried rice in a bowl top it with the fried boiled egg.
    Serve warm with curry.
