Tortelloni in Tomato Sauce

 So much has happened since I wrote something here, the world is upside down, we are locked in our home and spending more time on zoom. I am spending less time in kitchen even when my son is at home. 

Art is helping me heal and I am learning to stay quiet with this chaos.

Sharing ten minutes pasta meal which we had yesterday.

Tortelloni in Tomato Saue. Advay feels I am good with pasta and noodles. I don't blame him. He is raised in a different world. This one is good for lunch or brunch and kids are always happy to see something different in the plate.

weekend cooking - ravioli with curried chicken

I know its already Tuesday and I am late with weekend cooking post which I thought of sharing with you all on Monday blame it to my multitasking ,recent obsession of writing poem if you guys follow me on twitter and instagram you will know what I am talking about ,so today after cooking dinner and sitting with my son who is busy studying I thought of stealing some moments form my always busy life to write this post ya I do miss blogging with the advent of smartphone things have changed I hardly get time to open my laptop to write  blogging  is my comfort space where I can pour out my heart to you all so sorry drifted again pause
todays post is about weekend cooking when theres not much time to cook I prefer pasta for such busy nights and with a soar back things can't be better so this can be cooked in less than 20 mins and the meal is ready to be savoured

Recipe name 4 cheese ravioli in red sauce with curried chicken
Ingredient
ravioli one packet [easily available in supermarket in Lyon )
Three tbsp of Heinz onion tomato and garlic paste
One small onion chopped
One garlic clove chopped
One tomato chopped
Oil to cook olive oil two tap
Salt as per taste
Pinch of pepper
Half tsp garam masala
Cheese crumbled one tbsp
Curried chicken sliced one drumstick (had leftover which I used as topping )
Preparation
Cook ravioli till al-dente
Drain and keep aside .
Procedure
Heat oil in non stick wok
Once hot lower the flame and add chopped onion and garlic
Keep stirring till its brown add chopped tomato
Fry further for five to seven minutes add the paste
Followed by salt, pepper and the garam masala powder
Add half cup of water and let it simmer.
Once the sauce is ready remove from flame and keep aside.
To serve
In the serving dish place the ravioli pour two tbsp of sauce
sprinkle crumbled cheese and shredded curried chicken
Serve warm with a glass of wine .

Weekend Cooking - Tagliatelle in white sauce with fried sausage

Most of the time weekends I look for one pot meal kind of stuff so that I can give time to Advay for his studies .Last weekend did the same everyone agreed for pasta for dinner so prepared the same had never prepared white sauce at home so thought of trying at home thanks to the supermarket nearby get fresh pasta there so got Tagliatelle.

Recipe nameTaglietelle in white sauce with fried sausage
Recipe source Internet
Ingredient
Tagliatelle one packet
For white sauce
Butter one tbsp.
All purpose flour one tbsp.
Cream half cup
Salt as per taste
Sausage chicken one chopped
Preparation
Cook tagliatelle till al-dente drain and keep aside
heat half tsp oil in non stick pan and fry the chopped sausage till brown and crispy
Drain and keep aside
Procedure for the sauce
Heat butter in non stick pan
Add all purpose flour and mix everything together
Followed by the cream stir and mix everything together
Till a creamy consistency is obtained .
To serve
In a bowl pour the sauce followed by drained tagliatelle top it with fried sausage
Serve warm with pinch of pepper.

Carmella Pasta in Marinara Sauce

I was never a big fan of Pasta .I used to prepare Pasta in Singapore just for Advay most of the time when his friends used to come home for play date but here in Lyon when I saw fresh pastas in farmers market thought of giving them a try saw some unusual shaped one which were named as Caramella Pasta stuffed with cheese and spinach ,the filling intrigued me and the shape reminded me of childhood ya candy shaped so thus bought some and cooked the same day and ya now I am big fan of fresh pasta

Recipe name Carmella Pasta in Marinara sauce

Ingredient
Marinara sauce one cup
Fresh Carmella pasta cooked till a dente
Parmesan cheese grated
Basil leaves three torn
To serve
In a serving bowl keep the cooked pasta
Top it with marinara sauce
Followed by parmesan cheese and basil leaves
serve warm and relish

Pantry clean up pizza – Paneer butter masala pizza

I know you all must be shocked by the name of the pizza but that's what this pizza was because I had two leftover capsicums in my fridge , about to expire cheddar cheese ,leftover ready to cook butter chicken paste and some cottage cheese  .So yesterday morning itself dinner was planned that I will be preparing Paneer Butter Masala Pizza.Prepared dough in the morning

itself and kept it for rising and with Advay having two test the next day I wanted to keep myself free yesterday evening .
Recipe Name – Paneer Butter masala pizza
Ingredient
Pizza dough
Pizza sauce two tbsp
Onion one
Tomato one
Capsicum half each of red and orange capsicum
Cheddar cheese grated one cup
Two tbsp of ready to cook butter chicken masala
Cottage cheese cubed half cup
Half tsp olive oil

Prepration
Chop all the veggies and keep aside
Heat half tsp oil in non stick wok , add the cubed cottage cheese
Once the cottage chesse starts turning brown add the ready to cook paste
Cook on low heat for five minutes .
Let it cool and keep side.
brush the pizza pan with olive oil
preheat the oven to 100 degree centigrade.


Procedure
Divide the dough into equal sized discs
Roll out the disc and pierce it with fork
place it in the prepared pan
spread the pizza sauce with the help of spoon
Top it with sliced onion ,tomato and capsicum
Crumble the cooked cottage cheese and sprinkle
Followed by the grated chesse.
Bake in preheated oven for 10 mins till the crust becomes brown.
Serve warm .
I like to eat the pizza topped with nandos mild sauce and pinch of red chili flakes.

On Advay's friend demand - Pasta in Red Sauce

when it comes to cooking for kids i am a bit skeptical,as each of them are different .
So when one noon when Advay's friend had come for play date

 I asked Advay's friend what he would like to eat
he - aunty i will eat pasta
me -ok will prepare for you
he - aunty please prepare pasta in red sauce not in white sauce
me- uhh okay
Advay didnt had any clue what conversation we were having as he just asks me to prepare pasta :-)
Most of the time i prepare pasta with whatever vegetable i have but that day i just had onion and tomato ,
this is how i prepared the sauce

Recipe name pasta in red sauce 
ingredient 
boiled and drained pasta till al dente -150gm
ingredient for red sauce 
onion one chopped and ground to paste
tomato two chopped and ground to paste
garlic clove chopped finely one
salt as per taste
black pepper freshly grounded half tsp
oregano half tsp
tomato ketchup three tbsp
olive oil one tbsp
Procedure 
heat oil in non stick wok ,once oil is hot
lower the flame and add garlic clove
let it splutter and add onion paste fry for 3 minutes
once onion starts turning brown add tomato paste
followed by salt,pepper and oregano , keep stirring
once oil is seen along the sides add tomato ketchup
mix everything together and add one cup of water
let it boil for 10 minutes and remove from flame .

for serving
place the cooked pasta in a bowl
pour the sauce over the pasta
and sprinkle parmesan cheese
serve warm .

ya it did feel good when both of them said pasta is yummy ,...:-)

weekend baking - garlic rolls

Its been so long since i baked bread at home
or worked with yeast ,
but when i saw my sister baking bread almost everyday
in New delhi
i was inspired to bake again
yesterday while Bloghopping i saw

garlic rolls  blogged by Prema 
i had tried them earlier from Raks space

and thus i tried again

and ya i luved them and
will be baking them soon again...;-)

Weekend Meal - Conchiglie with chicken and broccoli

If  the month of January was spent planning and doing these things
February i did the same as above ,started with my kitchen garden and ya finally my sewing machine is out ;-)
so if time permits maybe in march i will be able to ,or try to sew something,..;-)
I didnt try anythine new since past few days,having baking block too :-( maybe after Holi Festival i will have time to bake
Coming back to todays post ,prepared this simple pasta with chicken and broccoli paired with garlic bread

Recipe name - Conchiglie with chicken and broccoli
Recipe source kitchen experiment
Preparation time 10 mins
Cooking time 15 mins
Ingredient
One cup Conchiglie pasta
chicken 200gm boneless
onion one chopped
tomato one chopped
broccoli florets half cup
salt as per taste
pepper pinch
tomato ketchup two tbsp
italian herbs pinch
olive oil to cook
Preparation
Cook conchiglie in water till al dente ,keep aside
Procedure
Heat oil in non stick wok
add olive oil and lower the flame
add chopped onions and keep stirring till onions become brown
add chopped tomatoes ,followed by salt and pepper and cover and cook
once the mixture becomes mushy and oil is seen along the sides
add shredded chicken ,broccoli florets and tomato ketchup
fry for two minutes till everything mixes together
sprinkle pinch of dried italian herbs,let it simmer for 10 to 15 mins
serve warm with garlic bread.

Home baked pizza topped with capsicum and cheese

Sometimes inspired from somewhere i tend to do things like this
Then all i have to do is look here

 and I am all set for something fresh like this :-)
Guys this is the pizza which i baked at home for Sunday Lunch,i tried to experiment with the topping result of which u guys can see in the first pic,..so in the second one i omitted egg,...;-)
Recipe name - Curried Pizza with capsicum and cheese

Baking temperature 120 degree centigrade
Baking time 5 to 8 mins
Ingredient
curried tomato onion paste one cup
shredded mozarella cheese half cup
capsicum one sliced
corn
dough for pizza

procedure
Bake the rolled out pizza in oven for 4 mins
Assemble the topping on the base
apply the curried onion tomato paste
on the sides place capsicum
in the middle corn ,top it with shredded cheese
bake again for 3 to 4 mins

Pasta in Vodka Sauce

Whenever i run out of recipes idea all i have to do is bloghop,i have been following Pink Little Cake Blog from quiet a long time ,she mostly blogs about cake and cookies :-) but when i saw the recipe of

Pasta in Vodka Sauce i knew i had to try this
For the tomato sauce i followed the same recipe as given in her blog ,  ,kept some separate for advay and then added vodka,cream and mozarella cheese.
Paired pasta with garlic toast ,meal was yum.
for garlic butter mix butter with garlic and italian herbs .
spread on bread and toast till brown from both sides.
Variation - omitted the use of celery
                   have added capsicum
                   instead of parmesan i have used mozarella cheese
                  didnt use fresh basil leaves instead have used italian herb

Penne with veggies and cheese

Have tried pasta with various ingredients but never with cheese so when Neha prepared Penne with cheese and veggies I asked her the recipe for my own refrence,..but before the recipe sharing with you all interesting link of Pasta Shapes
Recipe name Penne with cheese and veggies
Recipe source Neha
Preparation time 10 mins
Cooking time 10-15 mins
Baking temp 180 degree centigrade
Baking time 5 mins
Ingredient
Penne one cup
onion sliced two
tomato chopped one
green chili one sliced
red capsicum one sliced
babycorn sliced three
salt as per taste
pepper powder half tsp
soya sauce one tsp
tomato suace one tsp
green chili one tsp
olive oil one tsp
mozarella cheese shredded half cup
Preparation
Boil Penne till al dente and keep aside
Procedure
Heat oil in non stick wok lower the flame
add chopped onion and green chili
keep frying till the onions are half done
add chopped tomatoes and fry further for a minute or two
once the tomatoes are half done add sliced capsicum and babycorn
followed by salt,pepper,and all the three sauces .
let it simmer for a minute or two
Before baking combine cooked penne with the veggie mixture ,top it with grated  cheese 
preheat the oven to 180 degree centigrade for 5 minutes
spoon on a lightly oiled baking dish and bake for 5 minutes.

Home baked pizza topped with mint leaves and cottage cheese

10am to 12pm
3pm to 5pm
7pm to 8pm
the above timing is of the regular power outage in our residential area ,keeping this schedule in mind i thought of baking pizza one fine evening ,done with the topping preparation i was waiting  sharp at 8pm but that evening power outage was increased  ,may be due to sudden increase in temperature in northern india, :-( ,desperate and hungry i thought of using stove top to bake pizza but thanks god we didnt had to wait for long ,..;-) maybe god tests our patience sometimes..
coming back to the recipe
Recipe name fresh baked pizza with mint leaves and cottage cheese
recipe source for the pizza crust -cookbook
preparation time 2 hrs
baking temp - 220 degree centigrade
baking time 10 mins
ingredient needed
450gm all purpose flour
one tsp salt
two tbsp olive oil
pinch of sugar
half tsp active dried yeast
procedure
In 300ml of warm water add yeast and sugar and leave for 5 to 10 mins until frothy.
In another mixing bowl sift the flour and salt and make a well in the centre 
add olive oil and yeast mixture
mix to make a smooth dough
knead on a lightly floured surface for few minutes
place the dough in a floured bowl ,cover and leave to rise in warm place for two hrs.
After 2 hrs preheat the oven to 220 degree centigrade/425 degree fahrenheit/gas 7
knead the dough for 2 minutes and divide into equal pieces
roll out each piece to 25cm round and place on lightly oiled baking sheet.
for the topping
cottage cheese
mint leaves
grated cheese
tomato sauce
ingredient for tomato sauce
tomato 2
garlic clove 6
bay leave 1
salt as per taste
pepper powder
vinegar two tsp
olive oil one tsp
procedure for tomato sauce
heat oil in non stick wok
lower the flame add garlic clove,bay leave 
followed by tomato,salt and pepper 
keep frying till tomatoes are half done 
now add vinegar and let it simmer for a minute and two and remove from flame.
to assemble
spread tomato sauce on each dough round
brush the edges with olive oil and top the dough round
with sliced cottage cheese,mint leaves and shredded cheese
or any topping of your choice ;-)
bake for 10 mins till golded brown and crisp.

Recipe Marathon Day 4 Saffron Foccacia

 Today i gonna share recipe of FOCACCIA which is flat oven baked Italian Bread which may be topped with herbs or other ingredients.I tried baking Saffron Focaccia from my baking book,taste was similar to pizza but lot more crusty and flavourful.Bakers often dott the bread to create multiple wells in the bread by using a finger or the handle of utensil to poke the unbaked dough.As a way to preserve moisture in the bread olive oil is spread ove rthe dough by hand or with pastry brush prior to brushing or baking.Info taken from here .

Recipe Name Saffron Focaccia
Recipe Source Baking Book
Recipe Style Baking
Bating time 25 mins
Baking temperature 200 degree centigrade
Ingredient Needed
pinch of saffron
150ml boiling water
225gm all purpose flour
2.5ml salt
5ml dried yeast
1.5ml olive oil
For the topping
garlic cloves sliced 4
onion sliced one
rosemary sprigs
15ml olive oil
Preparation
Place saffron strands in a heatproof jug and pour in boiling water
Leave to infuse until lukewarm
Procedure
In a mixing bowl mix flour,salt,yeast and olive oil ,gardually add saffron and its liquid.
Knead till the dough forms a ball.
Turn on a floured surface and knead for 10-15mins.
Place in a bowl and cover with clear film and leave to rise until it doubles in size about 30 to 40 mins.
Knock back the dough and roll into an oval shape about 1cm in thick .
Place on a lightly greased baking sheet and leave to rise for 30 minutes.
Preheat the oven to 200 degree centigrade,press indentations on the surface of the bread.
Topping
Cover the dough with sliced garlic,onion wedges and rosemary sprigs.
Brush lightly with olive oil and bake for 25 minutes ,or uniti the loaf sounds hollow when tapped on the base.
Cool on a wire rack.

Farfalle with herbed chicken ,...


Many a time we need to prepare something real fast ,something which is healthy ,tasty and yummy too,i asked Neha today noon whether she will have pasta for lunch,she readily agreed,out came all the ingredients from fridge,whatever was there,i saw few bulbs of spring onions,green chili thick one,soya leaves and chicken drumsticks.
As always i didnt had any recipe in my mind i chopped the veggies,kept the falafal for boiling,and on the other burner chicken drumsticks for boiling,if i had four burner stove i would have started frying the veggies too,..here goes the recipe for FARFALLE WITH FLAVOURED CHICKEN
ingredient needed for Farfalle with chicken flavoured with basil and fresh dill leaves


Preparation
boil one cup of farfalle and drain and keep aside
boil chicken drumsticks,shred and keep aside.
Ingredient needed
Chicken drumsticks two boiled and shredded
boiled and drained farfalle one cup
onion one chopped
thick green chili one chopped
soya/dill leaves shredded handful
spring onion bulb chopped
salt as per taste
pepper as per taste
dried basil leaves a pinc
olive oil half tsp
tomato sauce one tsp
Procedure
heat oil in non stick wok
add all the chopped veggies and stir fry for a minute or two
add shredded chicken followed by the dill leaves
keep frying on low flame till its done
add salt,pepper,dill leaves and basil
stir well,lower the flame and mix the drained farfalle
fry for a minute,remove from the flame and serve hot.

I prepared this in less than 30 minutes and liked the taste of chicken flavoured with basil and soya,..though this sounds weird i know,..anyways cee u all soon,..theres lot of plagiarism going around i hope u guys are aware,..;-(one of my pic is stolen too,..thanks to Sailaja who told me,..;-( i don know why people waste their energy stealing other people stuff and proudly dispalying it under their name i mean how can they be happy doing such mean things,..god only knows when such things end,..i hope to hear some good news soon,..till thn u guys take care,..:-)

Fresh Veggie Pizza,...

These days when Advay gets bored playing his toys I have to distract him with something new so few days back when I was busy preparing Pizza I told him to play with his dolls, I had one small toy bottle so taught him to feed the dolls,


Thanks to INA market of Delhi I am never out of stock of the exotic veggies like zucchini, broccoli and fresh parsley name it and u have it, everything is available in this market..i feel so happy when I go there for veggie shopping, these exotic veggies are available in the near by malls but not as fresh as in INA,..INA market is paradise for foodies, …I guess i am drifting away ,...;-)
Coming back to Pizza recipe its very simple..
N Ingredient needed
N Chopped Onion
N Chopped tomato
N Fresh Parsley leaves
N Chopped Zucchini
N Sliced Baby corn
N Sliced Green, Red and Yellow capsicum
N Salt as per taste
N Pepper
N Mozzarella cheese
N Italian Herb
Procedure- Apply nutralite on the base, place the veggies on the base, followed by grated cheese and fresh parsley, sprinkle salt, pepper and Italian herb and place in preheated oven at 220 degree centigrade and bake for 10 to 15 minutes.
Metro work is going just opposite to our building and I guess by next year we will have the metro station ready ,..in the below pic station can be seen,..i guess commuting gonna be very easy in few months,..:-) what a relief for us,...isnt it...
I am leaving for Singapore tomorrow for two weeks...bit tensed about travelling with Advay,..i hope u guys remember what happened last time:-) will be back soon with a post from Singapore,..till thn cee u guys,,,u all tk cre,.;-)

Tangy green salad and Tricolour pasta with chicken

I guess god heard my cribbings about the the hot weather,weather is bit normal now with more of clouds and less of heat,sudden downpour brought the temerature down which is good relief for us ;-)
In todays post i will be sharing simple salad recipe which i prepared with left over Dhania alloo.
Ingredeint needed
Leftover Dhania alloo two tbsp
chopped cucumber one
home made cottage cheese two tbsp (crushed )
Procedure
Mix all the ingredient together in a mixing bowl.
Serve chilled.
Power cut in delhi is too frequent these days,u never know when u will have to cook in dark kitchen with just candles ,same thing happened to me few days back , i was about to start preparing dinner when suddnely i was surrounded in darkness,with just me and Advay around and inverter battery exausted i somehow managed for matchbox and lighted candles.It was already 8pm had an hour to prepare dinner as Pallavi reaches home by 9pm,..this is wht i prepared in Candlenight with whatever was there in fridge and pantry.
Chicken Pasta with Pink pepper
ingredient needed
Tricolour pasta one cup
 salt as per taste
 pepper as per taste
boiled chicken 150gm
onion one chopped lengthwise
garlic two clove chopped lengthwise
pink pepper half tsp
italian dressing half tsp.
Olive oil one tbsp
Procedure
Prepare the chicken by separating chicken from the bone,with help of knife make thin stripes.Keep aside.
Prepare Pasta by boling in water,drain and keep aside.
Heat oil in non stick wok,add chopped onion and garlic and keep frying till onions start changing their colour.
Now add boiled chicken and fry further for two minutes followed by addition of salt and pepper.
Once the mixture looks done add boiled pasta followed by italian dressing and pink pepper .
Mix well and serve warm.

Meal of Italian bread with mediterranean curry ,chinese chicken and fresh mixed fruit salad

Not always we feel like preparing a spread for dinner ,now with hubby gone and with just me and my sister around i have to think twice before preparing such spread for dinner,when hubby was around had prepared Piadine ,cashew noodles and olive chicken for dinner  pallavi had preapred mixed fruit salad in grated coconut powder and orange rind dressing .
Yesterday for dinner had mango shake and fried fara and breakfast was thandai with cottage cheese sandwhich,temperature is also rising day by day in Delhi ,yesterday it was 41.5 degree C,so that is another reason for not eating full fledged meal.
This spread was prepared about two weeks back but since i was really busy packing and arranging for MUNDAN ceremony i didnt had time to publish this post,...
here goes the recipe of Piadine which is soft unleavened Italian Bread,cooked directly on a griddle.

ingredient needed
all purpose flour one and a half cup
salt one tsp
olive oil one tbsp
water seven tbsp
italian herb one tsp
procedure
sift the flour and salt in a bowl,make a well in the center
add the olive oil and water to the center of the flour
followed by addition of one tsp of italian herb
and gradually mix to form a dough
Knead on a lightly floured surface for 4 to 5 minutes until smooth and elastic
place in a lightly oiled bowl,cover with oiled plastc wrap and let it rest for 20 minutes.
heat a griddle over medium heat
divide the dough into 4 equal pieces and roll each into 7 inch round
lightly oil the hot griddle
add one or two piadine and cook for about two minutes
or until they start to turn brown
Serve warm .
Served Piadine with Olive Chicken

ingredient needed
Olive oil 2 tbsp
Chicken 1.5kg
onion sliced one
grated ginger one tbsp
garlic cloves crushed three
paprika one tsp
chicken stock one cup(for chicken stock i used maggi chicken cubes)
saffron starnds 2 soaked in 1tbsp water
spring onions 4 chopped
15-20 pitted black and green olives
juice of half lemon
salt and ground black pepper
procedure
step one
heat oin in non stick wok
and fry the chicken on all sides till golden
step two
add onion ,ginger ,garlic paprika and seasoning and continue frying
over moderate heat ,coating the chicken with the mixture
step three
add the chicken stock and saffron and bring to boil
cover and simmer for 45 minutes till the chicken is done
step four
add the spring onions and cook further for 15 minutes
till the chicken is well cooked and the surrounding sauce is reduced to half
step five
add the olives
stir in the lemon juice
cook over medium heat for further five minutes .
Serve hot with rice or flat bread.
For Chinese Chicken with Cashew nuts
ingredient needed
skinless chicken breast fillet 175gm each
garlic clove crushed three
soya sauce 4 tbsp
cornflour 2tbsp
egg noodles 225gm
oil 3 tbsp
roasted cashew nut one cup
onion one cut lengthwise
procedure
step one
slice the chicken into strips ,place in a bowl and stir in
garlic,soya sauce and cornflour.
cover with clear flim and chill in refrigerator for 30 minutes.
step two
boil egg noodles,drain and keep aside
step three
heat oil in non stick wok
add chilled chicken and stir fry
over high heat for 3-4 minutes or until golden brown
step four
add the cashew nuts and spring onion to the pan
and stir fry for further 2 to 3 minutes
step five
add the drained noodles and stir fry for 2 minutes more
toss the noodles well and serve imediately.
For Mixed Fruit Salad  in coconut and lemon juice dressing
mix together the chooped fruits such as orange,grapes,musk melon and and cranberries
add coconut powder followed by grated rind of orange and lemon juice
toss well
serve chilled.
