Weekend Cooking - Mango Dal from Mahanandi and Curried Brinjal

This particular curry of Baingan Aloo Tamatar is my all time favourite,whenever i prepare this curry i am nostalgic as this one brings backs lots of memories,this one is one of the regular curry prepared at our home most of the time for lunch meal ,i prepared the same and paired it with this scrumptious mango dal from Mahanandi ,kachumber and plain rice.

Omitted onion and garlic for the mango dal,luved the flavour of toor dal with green mango and together with baingan curry and plain rice meal was finger licking,

Thali with Kashmiri Shami Kabab,Ajwain Paratha,Bathua Raita and Mint and Coriander Chutney

Its been so long since i prepared Kabab at home ,
so when i saw this simple recipe of Kabab
i thought of preparing the same
paired the same with Ajwain Paratha ,Bathua Raita
and Mint & Green mango Chutney  and Coriander Chutney


Kabab Thali
 Recipe NameKashmiri Shami Kabab
Recipe Source
Ingredient
Minced Goat Meat 500kg
onion one chopped
ginger garlic paste one tbsp
dried kasturi methi leaves one tbsp
mint leaves chopped one tbsp
coriander leaves chopped two tsp
salt as per taste
garam masala powder one tbsp
oil to cook

Preparation
Mix all the ingredients in a miixng bowl
and keep in refrigerator for half an hour
Procedure
The recipe called for shaping the minced meat on skewers
but instead of that i shaped them in patty shape
heat oil on grill pan ,once hot lower the flame
and place the patties ,keep turning till its brown from boxth side
serve warm with paratha ,raita ,chutney and some salad on side.
For Bathua Raita
Ingredient
Bathua leaves one cup
green chili
salt as per taste
curd whisked one cup
Procedure
heat water in a saucepan
once it starts boiling add the bathua leaves
and let it simmer for 5 to 7 mins.
once done drain the water and let the leaves cool down
make a smooth paste of the boiled leaves and green chili
mix the bathua paste in whisked curd and seasxon with salt
serve with paratha and kababs.

Curried Goat Meat with Potatoes - Aloo Ghost

Last week i read this article by on Hindustan Times Brunch by Vir Sanghvi titled Whose Goat is it anyway ? In this article author has clearly stated that the meat cooked in  Indian restaurents is goat meat but the chef are reluctant to admit or to even write in the menu card just because they dont want to offend foreigners so instead of goat meat they write lamb meat  ,i have tried lamb meat but i never liked the taste so when i discovered that fresh goat meat is available in Singapore thanks to Teeka Market i was really elated,,,;-)since then i have really enjoyed cooking  curried goat meat in various ways then i read some months back that red meat is not good for health ,but after reading the above mentioned  article  my belief has changed ,article states that goat meat is sustainable meat from animals that thrive on pasture and a pound of goat meat has two third the calories of a pound of beef and goat has half the saturated fat of chicken.

Another article which i read today in Today Online states that eating curry once or twice a week could stave off Dementia .Article further states that Curcumin  chemical found in Turmeric helps in fighting Alzheimer Disease .Other health benefit of Turmeric is it aids digestion ,helps fight infection and guards against heart attack.Today while cooking this curry i accidentaly added turmeric powder as it was not needed ,that time i recalled the article which i had read in the morning,..;-)

Recipe of Curried Goat Meat with Potatoes
Recipe source adapted from India Cookbook
Ingredient
Goat meat half kg
vegetables
potato three peeled and cubed
onion three chopped
tomato two chopped
garlic clove crushed three
ginger half inch crushed
green chili one chopped
whole masala
cumin seed one tsp
bay leaves crushed three
cinnamon stick one crushed
six clove
green cardamom four crushed
black cardamom three crsuhed
mace i didnt add
powdered masala
one tsp coriander powder
one tsp cumin powder
one tsp red chili powder
one tsp garam masala powder
one tsp turmeric powder
salt as per taste
oil to cook


Procedure
heat one tsp oil in non stick wok
lower the flame and add crushed bay leaves and cumin seed
let it splutter and add chopped potato
keep frying till the potatoes start turning brown
remove from flame with  slotted spoon and
drain on kitchen towel.
In the same add chopped onion and fry till they become mushy
add cinnamon,cardamon and clove ,followed by chopped ginger,garlic and green chili
after two mins add powdered masala and salt fry for two to three mintes
add goat meat  pieces and chopped tomatoes ,fry for two minutes
and let it simmer for five minutes
transfer the content to pressure cooker and pressure cook for 5 to 6 whistles
once done add the fried potatoes and pressure cook for one more whistle
add chopped coriander leaves and serve warm with rice and chapati

Warm Mug of Peppermint White Hot Chocolate perfect to feel loved ;-)

No i am not fan of Valentines Day , i dont believe that in 365 days there should be just a single day to show our love for someone,,or to feel loved  but then i am not against it too,some two years back i called you all to join me in this event Cook and Create with luv for luv ,this year i thought of reviving the same but couldnt because of India trip and the after effects which for me taking nap whenever i can,now after a week of coming back i feel fresh and good,and somewhat feel i am back to the daily grind,.thought of having countdown to Valentine Day with some simple recipes which i tried from blogosphere and ya which are perfect for the Valentine day or for any other day whenever you want to feel loved,after all we have to love ourselves to love others,..isnt it.

Weekend Cooking - Bund Ghost with Plain Rice

I know i just disappeared , i hate to do this everytime,but there were so many things on my mind that i totally forgot to do a Blog Break Post ,i had been to India to attend my sisters wedding ,..:-)

now i am back with lots of good memories..sharing with you all simple curry of meat which i prepared yesterday for our dinner,this one goes well with a bowl of plain rice

Recipe name Bund Ghost
recipe source inspired from  India Cookbook
Ingredient
goat meat half kg
whole masala to temper
clove six
cinnamon one stick crushed
black cardamom four
cumin seeds one tsp
onion three
garlic clove crushed three
ginger crused one tbsp
green chili two
curd one cup
turmeric powder one tsp
coriander powder one tsp
red chili powder one tsp
salt as per taste
oil to cook
Procedure
Heat oil in non stick wok ,
lower the flame and add whole masala
once it starts spluttering add chopped onion
followed by crushed garlic,ginger and green chili
keep stirring till onion turns brwon and mushy
add mutton pieces ,followed by turmeric powder
fry for 2 to 3 minutes ,remove from flame
add curd and return the pan back to burner
add salt,red chili powder and coriander powder
keep stirring for five to ten mnutes
place the lid and seal with dough
cook for 15 minutes till the meat is done
add chopped coriander leaves
and serve warm with rice.
