the kachodi which reminds me of train journey

yesterday i had to go for poetry reading so the dinner for family had to be special matar paneer was on my mind i paired it with ajwain kachodi and kheer.
today morning i had the same kachodi with chai and i was reminded of those summer days when we would travel with the same kachodi in mithai box wrapped in foil and smeared with home made pickle few days back my sister shared the memory of going for movie and carrying allo paratha with us which i don't remember

Today when I got up I didn't had any idea that its a festival today all thanks to twitter and instagram I was bombarded with awesome food pics alluring me to cook something festive today & that's what I did so todays dinner meal is of Paratha ,Brinjal Potato Curry ,Kheer paired with salad and pickle .

Not the usual delicacy for the festival but the meal was feast

I know I should have written about this post few days back but couldn't because the festival was on. Weekend .Guys I am talking about the Indian Festival Basant Panchami which was on 24th of January .

Basant Panchami is a day dedicated for the Goddess of learning Saraswati .Its auspicious to wear yellow colour dress and cook something yellow in colour .

As per tradition Zarda - saffron flavoured sweet rice is cooked this day.
I thought of adding some saffron strands to kheer to give it yellowish tinge .
So the menu for the dinner was - Paratha,Nimona ,Kheer and salad.

If you are lucky to have some leftover curry the next day pair it up with Ajwain Kachodi and some pickle..Perfect for weekend breakfast or brunch .

Indian Thali with Bharwa Baingan and Stir fried Paneer

Its been so long since i shared the home cooked meal or the food which we eat everyday ,
sharing with you all today a simple thali which i cooked when my cousin had come for dinner
the below thali has Chapati,Lemon Rice,Bharwa Baingan,Stir fried Cottage Cheese,Kheer and Curd.

For the Stir fried Cottage Cheese/Curried Cottage Cheese
Ingredient
cubed cottage cheese 200gm 
onion one chopped 
tomato one chopped
green chili one sliced
cumin seeds half tsp 
oil to cook one tbsp
salt as per taste 
garam masala powder one tbsp
Procedure
Heat oil in non stick wok ,add cumin seeds 
once it starts spluttering add chopped green chili followed by chopped onion 
keep stirring till onion becomes mushy add tomatoes followed by salt 
once oil is seen along the sides add cubed cottage cheese ,garam masala powder
fry for two minutes and half cup of water let it simmer
serve warm garnished with coriander leaves.

two potatoes ,three onions and a thali to share

day had been quiet busy,still i had managed to complete all the chores and was breathing in and out for few mins sitting on the couch with my favourite book and a cup of filter coffee  when my siesta was broken by the sudden ring of the cell phone,hubby was on the line
me -yes tel me ,
hubby- he is coming 
me- comin who ?
hubby- i told you right my friend would be coming for dinner ,he will be home by 6 pm
me --but he hadnt comfirmed right
hubby he just did..
me-uhh  oky.
this was the conversation which we had the week we had to leave for India .I didnt had anything in my pantry except for two potatoes,three onions,green peas in the freeze and soaked chickpeas which i had soaked for our own consumption.Dazed and shocked and with no menu plan in my mind i entered kitchen,breathed in and out and planned the menu,i just had four hours ,it was already 2pm when i got the call,i had to tidy the living room where advays toys,books and other things were kept and ya two suitcases too as we had to leave the next day.Since i had soaked chickpeas ,i stuck to the original plan of preparing Chola Curry,thought of pairing it with Bhatura,Aloo Matar Ghughni,Onion tomato kachumber,Pulao with dried fruits and for sweet dish Kheer.

Now this was not easy ,i knew i had to multitask ,i kept the soaked garbanzo beans for boiling,and kneaded the dough for bhatura,kept it for fermentation,

prepared curry for the chickpea,once boiled mixed the curry with boiled chickpea and pressure cooked again for one whistle.

Next was Allo Matar Ghughni ,i fried the matar and potato and pressure cooked for a whistle and kept aside

.Cooked rice in microwave for 15mins and kept aside and started with kheer preparation,once kheer was done

 ,tidied the room and started with tea preparation.By 6pm everythin was ready except Bhatura .Ya i was tired but then this was an experience which i never gonna forget ,..:-)

for Pulao with dry fruits

Ingredient 
Cooked rice two cup
onion half chopped 
cumin seeds half tsp
cinnamon crushed one fourth inch
bay leaves crushed two
green cardamom crushed two
salt as per taste 
ghee one tbsp
fried cashed to garnish 
raisin to garnish 
Procedure
heat ghee in kadhai/wok
once hot lower the flame and add dried seeds
followed by chopped onion 
keep stirring till onion browns
add the cooked rice and mix everything together
serve warm garnished with fried cashew and raisin.

Festive Thali for Karwa Chauth

Last week was preety hectic as i was alone with Advay for few days,with a sprained leg i somehow managed to cook a decent meal for KarwaChauth vrat

i prepared Ajwain kachodi, Matar paneer,Jeera Aloo,Bharwa Mirchi,Bari hutney,Thekua,Fara,
Dahi wada and Sooji Halwa.

With the advent of moon i broke my fast with this meal.
For a Pooja at my friends place i had to prepare kheer for 40 people ,now this was something new for me as i had never prepared for more then 10 people,and for kheer i never follow any measurement so i asked her to help me with the approx quantity ,this is how i prepared
Recipe name Kheer
Recipe source my friend
preparation time 20 mins
cooking time one hour
Ingredient
rice four cup
sugar eight cup
milk 16 cups
saffron strands pinch
ghee one tsp
crushed cardamom seven
chopped nuts almond,cashew and pistachio one cup

Preparation
run rice through blender once ,soak and keep aside
heat ghee in non stick wok,lower the flame and crushed  cardamom
stir for a minute and add drained rice
add milk and let the milk boil for ten minutes
add sugar,saffron strands,chopped nuts and mix everything together
keep stirring and cook on low flame till rice is cooked and milk thickens
serve warm or chilled garnished with chopped nuts.

MEC - Kids Party Food roundup

Thanks a ton frens,for sending such yummy entries for the event MEC kids party food and making it a great success,thanks again Srivalli for giving me the opportunity to host this month edition
To start the round up  we have triflavoured pandan,coconut and chocolate burfi from Sanjanas space
Aruna of veggie paradise has joined in with beetroot halwa
talking of burfi and halwa how can we forget kheer theres one to try from veggie platter pineapple and almond kheer
theres triple treat cupcake in icecream cones ,jelly fruit cake and chilled agar agar jelly from Premas space
Yamini of vegefoodie has joined in with delicious looking kalakand and chocolate cake
for candy lovers theres instant palgova to try from panchamrutham
party without nutty carrot halwa is incomplete and it comes with eggless marble cake from ushas space
Priya joins in with two exotic entries Chocolate peda and strawberry kheer 
 Niloufer of Kitchen samraj has joined in with bowl of caramel popcorn
 
Sowmya of creative saga has joined in with fat free dahi wada 
and last my entry for the event lemon sponge cake
