FRESH VEGGIES PIZZA AT 12 IN NITE WITH BREAKFAST OF GRILLED SANDWHICH AND HOMEMADE MINTY RICCOTA CHEESE WITH FEW CLICKS TO SHARE

Ever tried making pizza at 12 in the night...I KNOW IT SOUNDS CRAZY BUT l i did,..asked hubby to chop veggies
as he is fast in cuting veggies,..while he was chopping i was thinking about topping fro pizza,,base was readymade one,..so no worry..too tired to make any topping i thought of just adding veggies,
chopped mushroom,basil leaves,homemade cottage cheese .
I Started topping preparation by brushing the base with butter,..kept cottage cheese ,and garlic in the centre and the rest of veggies like yellow capsicum, onion, tomatoes, sweet basil leaves were arranged in different layers,..once done i evenly distributed cheese slice on the topping, followed by dried italian herbs,.salt and pepper and finally red pepper on top,
i know cheese is supposed to be on top,,,but this time i did opposite,..after all there is no problem in bending rules,as the veggies are raw here i microwaved for 3 to 4 minutes, once done enjoyed hot
,.i was dead tired but one bite and i forgot everything,..:-),
Next Morning was saturday another reason to get up late,..but for me everyday is saturday as i am not working,..:-) hubby and Advay both were sleeping so after doing chores prepared breakfast of grilled sandwhich with leftover topping of pizza,..placed topping on bread
and grilled on hand griller for few minutes, enjoyed hot grilled sandwhich
with ginger tea from mahanandis blog,..i had dried ginger powder from quiet a long time but never tried adding in tea,..when i saw the recipe of ginger tea in her post i was tempted to try,.and i am so happy i did,..it was real nice and with grilled sandwhich taste was awesome.
..:-),.thanks Mahanandi for sharing such nice recipes,,,.
I prepared RICCOTA CHEESE AGAIN BUT THIS TIME I ADDED MINT LEAVES TOO
