Since last few days i have been too lazy to cook,so when i decided to prepare chicken curry for dinner,i thought of preparing one of the regular chicken curry which i usually prepare,after frying chicken drumsticks with the spice paste ,i asked hubby about water ratio ,sometimes i just go ahead but when he is there i ask him :-) he told me to add coconut milk or curd instead of water ,i didnt had either of the two ,so he told me to add milk ,i did the same and was truly amazed by the taste ,thought of documenting the recipe as this recipe is very simple with minimal ingredients and tastes best with rice and nan with some salad on the side.

Recipe source kitchen experiment
preparation time 20 mins
cooking time 30 mins
Serves two adult and a kid aged 4yrs ;-)
Ingredient
chicken drumsticks four
onion two chopped finely
garlic clove three chopped finely
ginger half inch chopped finely
tomato one chopped
oil to cook
salt as per taste
kasturi methi one tbsp
milk one cup
everest meat masala one tbsp
whole seeds
black cardamom four
dried red chili four
bay leaves four
clove five
kabab chini six
cumin seeds one tsp
Procedure
Heat oil in non stick wok,add whole seeds listed above
once the seeds start spluttering,lower the flame and add onions
fry onions for five to seven minutes add ginger and garlic
followed by tomato,salt and chicken masala.
keep frying till oil is seen along the sides
add chicken drumsticks and fry further for five minutes
till the masala sticks to chicken drumsticks
transfer the content to pressure cooker
add one cup of milk and let it simmer for five mins
add kasturi methi,mix and presuure cook for two whistles
serve warm with nan,plain rice and salad.

Weekend Meal - Conchiglie with chicken and broccoli
If the month of January was spent planning and doing these things
February i did the same as above ,started with my kitchen garden and ya finally my sewing machine is out ;-)
so if time permits maybe in march i will be able to ,or try to sew something,..;-)
I didnt try anythine new since past few days,having baking block too :-( maybe after Holi Festival i will have time to bake
Coming back to todays post ,prepared this simple pasta with chicken and broccoli paired with garlic bread
Recipe name - Conchiglie with chicken and broccoli
Recipe source kitchen experiment
Preparation time 10 mins
Cooking time 15 mins
Ingredient
One cup Conchiglie pasta
chicken 200gm boneless
onion one chopped
tomato one chopped
broccoli florets half cup
salt as per taste
pepper pinch
tomato ketchup two tbsp
italian herbs pinch
olive oil to cook
Preparation
Cook conchiglie in water till al dente ,keep aside
Procedure
Heat oil in non stick wok
add olive oil and lower the flame
add chopped onions and keep stirring till onions become brown
add chopped tomatoes ,followed by salt and pepper and cover and cook
once the mixture becomes mushy and oil is seen along the sides
add shredded chicken ,broccoli florets and tomato ketchup
fry for two minutes till everything mixes together
sprinkle pinch of dried italian herbs,let it simmer for 10 to 15 mins
serve warm with garlic bread.

Homesickness cured by Cooking Therapy - Chicken kofta
Whenever i am happy or distressed i take it out on food,..
if i am happy i go for something like this
if i am sad then i go for cooking therapy
yesterday i was feeling homesick
and missing my sis and her new born baby
so i wanted to keep myself busy
as in kitchen its just me
and i can cry easily ,..
with no recipe in my mind
i prepared this very patiently
this one took time
i was bit nervous
but when hubby said
it was yum
it made me happy
Recipe name Chicken Kofta
Recipe source notyet100s experiment
preparation time half hour
cooking time one and half hour
Ingredient for the kofta /chicken ball
boneless chicken 250gm
bread piece two
egg one
salt as per taste
pepper pinch
cornflour one tbsp
Procedure
In a mixing bowl ,mix everything together
make small disc shaped balls and keep aside
heat one and a half tbsp oil in non sick pan
lower the heat and slide the discs slowly
keep turning till the discs become brown from both side
drain and keep on kitchen towel.
For the curry
- onion ginger garlic paste
one onion,green chili,two garlic clove and half pinch ginger run through the blender and keep aside
- tomato paste
two tomatoes run through blender and keep aside
- curry powder
dry roast one tsp cumin seeds,half inch cinnamon,two red chili,crushed bay leaves,clove three,black pepper four,star anise two,black cardamom two,green cardamom two.run through blender keep aside.
-salt as per taste
-oil to cook
-coconut cream two tbsp
Procedure
heat one tbsp oil in non stick wok
add onion paste and keep stirring till paste starts changing colour
when paste becomes light brown add tomato paste
keep stirring till everything mixes together
add salt,curry powder and keep stirring till oil is seen along the side
add half cup of water ,give a good stir and let it simmer for 5 mins
add coconut milk and let it simmer for five to seven minutes.
Before serving add the shallow fried kofta balls to the curry and let it simmer for 10 mins
serve garnished with chopped almond and cashew nuts.

Crispy dhaba style besan ki roti with spicy chicken bhurji

well for days i was craving for dhaba ka khana..but in singapore ,...:-( so today i played with ingredients and created the desi style recipe of chicken bhurji and besan ki roti...and believe me i was licking my fingers,,felt as if i was really eating in dhaba....do try to get the desi feeling specially for the dhaba khana lovers..

ingredients for besan roti- vary the quantity according to your need
two cup besan
one cup flour
one teaspoon red chilli powder
one teaspoon turmeric powder
one teaspoon ajwain
one teaspoon salt
one chopped green chilli
one chopped clove of garlic
half chopped onion
water to knead
half teaspoon of oil
ghee for desi feeling or u can use butter
procedure- mix all the ingredients except water ,now slowly add water ,,,consistency of the dough should be hard enough as besan ki roti is made thick...because of the ingredients added ,..if thin roti is made the ingredients will come out ,once the dough is kneaded make thick roti of the dough and place on tava which is already heated,,.
keep turning the roti and apply ghee when done

now the ingredients for the chicken bhurji
boneless chicken 250 gm for two people vary the quantity according to your need ,boil for two mins and keep the chicken stock aside
one tomato chopped
two onions chopped
three garlic clove chopped
three green chilli chopped
mustard oil one tablespoon
salt
for the masala mixture-ingredients are-
three big cardamom
two small cardamom
three dried chili
three bay leaves
two star anise
one teasppon each of cumin seed, coriander seed,black pepper and cloves
one inch of cinnamon stick
dry roast all the ingredients and make powder and keep aside

now heat oil in nonstick kadai and add green chili and garlic

once they start spluttering add onion and tomato followed by salt,..keep frying till onion turns brown ,now add the powdered masala and keep frying till the masala blends with the onion you can add few drops of water,...now add the chicken and keep frying till the chicken blends with the masala
chicken bhurji is ready to eat
