The regular rogan josh

we all have that regular curry which is cooked at home that curry which doesn't need anything special just the regular ingredients which you know will go perfectly with a bowl of steamed plain rice.
its been years since i have been buying goat meat from this particular shop in tekka market little india singapore yesterday because i was in that area i had to go to that shop and the dinner menu was planned

now i need not look for recipe in the books i know what to add how much to add
ingredient
400 gm goat meat
three onions chopped coarsely
ginger garlic paste two tbsp
salt as per taste
one tsp each of red chili powder turmeric powder coriander powder and garam masala
curd one cup
pinch of asafoetida
one tsp of cumin seeds

procedure

heat two tbsp oil in a wok
add cumin seeds and hing followed by onions
keep stirring till onions become brown
now add mutton pieces and ginger garlic paste
once the mutton pieces become brown add powdered masala
ginger garlic paste and salt
stir for two minutes add curd and half cup of water
and cook for twenty minutes
after twenty minutes transfer the content to pressure cooker
pressure cook for three to four whistles
garnish with chopped coriander leaves
serve warm with rice.

Weekend cooking - rogan josh

This curry is prepared very often at my home specially on weekends this is one of my favourite curry
Had shared the recipe few years back today reposting this again with new pics ,as today prepared the curry semi dry way without much gravy tastes good if simmered for long on slow flame,
Serve it warm garnished with coriander leaves ,paired it with lachaparatha & rice.

On completing 7 yrs of Food Blogging

Sunrays stream through the window
And then I realise
That today is the day
When I took the first stride.
Some 7 yrs back I stole
Few moments to start this space
And when now I look back
I know what all I have gained.
Have shared many unseen emotions
Which others didn't knew
And discovered that I could
Write in verse too.
So the space
Between you and me
Is reduced because of this
Its another facet of me
Which I really cherish .
So this month of mars
Is special for me
And because of this
I celebrate it.
Its asankhana my blog
Which was born today
And this poem is for

My love for Kababs - Chicken Shami Kabab :-)

I know I just disappeared from Blogosphere since past two weeks ,this break was not intentional but when i started with it i knew i wouldnt be able to post anything unless i finish ,ya friends I am talking about the Recipe Index of my blog its finally there after some four years of Blogging.

When I was jotting down the resoulution this one was one of them at the beginning of the year 2012
 so now I can finally tick it off,..:-)
Coming back to today's post sharing with you meal of Butter Chicken ,Dal Makhani, Pyaj Paratha ,Chicken Shami Kabab,Dhania chutney and Salad

which I prepared for a dinner party  hosted at home few days back.
Chicken Shami Kabab recipe is inspired from Deeba of Passionate about Baking and
 For the love of yum.
I prepared the chicken mince for the kababs the same way as told by Deeba ,after cooking the chicken mince with the chickpeas added chopped cilantro,mint green chili and egg as told by For the love of yum.
Relished the kabab with Dhania chutney and salad.

For freezing the kababs followed the same way as told by Deeba

kept the kababs in a freezer safe box lined with parchment paper.,..:-)

Prepared the same kababs yesterday again,didn't had coriander,mint and green chili so substituted it with red chili powder and kasturi methi,..

paired it with simple chicken curry

 which was prepared in few minutes time with chapati and aam pudina chutney with some salads on side.

ingredient
one cup mint leaves
one green mango chopped
green chili one
black salt as per taste
asafoetida pinch
cumin seeds one tsp
Procedure
mix all the ingredient and place in a blender
make a smooth paste in the blender
and keep in air tight box in freeze.

Weekend Cooking - Rogan Josh

no one likes to sit with a sprained leg when theres so much to do,specially with Festival around and a trip to India for Deepawali,but yesterday i slipped some stairs and sprained my leg ,so now i am just contemplating how i gonna manage Karwa Chauth,packing for trip and so many other endless things,coming back to todays post sharing with you all recipe of Rogan Josh ,which is curried lamb or goat meat originating from Kashmir ,i omitted the use of saunf ad ginger powder as i didnt had ,i didnt had degi mirch so i replaced it with normal red chili powder. dont know how authentic this recipe is but i truly luved it,this one is perfect for weekend meal or for a get together,..:-)

Paired the curry with plain rice,salad and chapathi .

Recipe Name Rogan Josh
Recipe adapted from Neeta Mehtas Book
Preparation time
Cooking time
Ingredient
goat meat half kg
whole masala
clove five
cinnamon half inch
black caramom four
bay leaf crushed four
paste
ginger garlic paste two tsp
paste of five onions
powdered masala
one and a half tsp red chili powder
half tsp pepper powder
green cardamom powdered one tsp
salt as per taste
pinch of saffron dissolved in warm water
half tsp asafoetida dissolved in one tsp water
oil/ghee to cook
curd half cup

Procedure
Heat two tbsp oil in non stikc wok
add whole masala and let it splutter
lower the flame and add paste
keep frying till the paste is cooked
add hing water followed by mutton pieces
keep stirring till the mutton becomes brown from all sides
add salt,red chili powder,black pepper powder and keep stirring
reduce the heat add powdered cardamom and curd
keep stirring till it starts boiling
add water transfer the content to a pressure cooker
pressure cook for two to three whistles till the mutton becomes tender.
add saffron and let it simmer ,serve warm with chapati ,rice and salad.
