Last week with no recipe in my mind I thought of preparing chicken curry as had to take Advay for swimming class I thought of preparing the curry in the morning,one look in the fridge and I knew what would be the experimenting ingredient :-) dhania chutney which is there most of the time in my fridge ,this one is very simple curry tastes great with chapathi and some salad on the side
Recipe name chatak chutney wala murgh
recipe source kitchen experiment
ingredient for the marination
chicken pieces 300gm
grated ginger garlic two tbsp
salt as per taste
dhania chutney two tbsp
curd three tbsp
turmeric half tsp
red chili powder one fourth tsp
coriander powder half stp
ingredient for tempering/chauk/tadka
oil one tbsp
cumin seeds one tsp
bay leaves crushed two
green cardamom two crushed
cinnamon crushed half inch
mace one blade crushed
onion two chopped
preparation
In a mixing bowl mix the above ingredient ,cover and keep aside.
procedure
heat oil in non stick wok ,once the oil is hot lower the flame and add the dried seeds listed above
once the seeds start spluttering add sliced onion and keep stirring till the onions become brown
add the marinated chicken pieces fry for two minutes and cover and cook for 20 minutes
in those minutes prepare rice,chapati or clean the dishes thats what I normally do :-)
after 20 mins transfer the content to a pressure cooker and pressure for one or two whistle till its done
serve warm with chapati or rice .
since we had this curry in the evening ,reheated the curry and had with chapathi ,

harried weekend cooking story :-)
Most of the time saturday and sunday is harried cooking day for me ,as it all becomes too chaotic with so many things to do
and I am left with hardly any time to cook thats what happened last weekend after serving hubby bread roll which didn't turn out the way they are supposed to , I had to pan fry the rolls they looked like edible bread patties ya sometimes I have bad cooking day and most of the time its weekend :-(

two weeks before I had prepared poha which neither looked like poha nor tasted the same and at time like this I start to doubt my cooking have I really lost it.but after these two episodes I know two things that weekend cooking specially breakfast is jinxed for me,:-(
Coming back to todays post sharing with you all simple pan fried pomfret
which I cooked in 10 mins that too with my son screaming that he wants to help me so just some ingredients tossed together and you have something yummy to eat and ya this one did made up my jinxed bad breadroll day.

Ingredient
pomfret one sliced from between
ginger garlic grated one tbsp
green chutney/dhania chutney ( lifesaver :-) three tbsp
lemon juice two tbsp
gramflour two tbsp
salt as per taste
half tsp red chili powder
half tsp turmeric powder
half tsp coriander powder
preparation
In a mixing bowl mix all the ingredients listed above and rub the mixture on the pomfret .
heat one tbsp oil in non stick pan
procedure
pan fry the fish till its brown and crispy from both sides
and ya after two weeks of weekend breakfast debacle i have this thought on my mind should I just serve this simple breakfast of toasted bread smeared with butter ,boiled egg and a glass of orange juice to hubby
or go for brunch like this of Aloo paratha with dhania chutney

my fav street food of Delhi - Bhalla Papdi Chaat
While packing for India trip last year during deepawali we had this conversation
Advay -" I know what you will do there at Nanis house ."
Me - "what do you mean by what I will do there."
Advay -"you will eat pani poori there."
Me awed "where at Nanis house ?"
Advay - "at the chaat shop on the road where you has last time ."
I was like what :) I mean how well he knows me :-)
Ya he is just like me even he loves to gorge chaat like anything so sometimes I prepare chaat for him just to change his taste
,one of the most common chaat variety of Delhi is Bhalla papdi chaat ,very easy to assemble if you have all the ingredients
Recipe name Bhalla Papdi Chaat
Ingredient
Bhalla / dahi wada soaked in curd five pieces
Papdi eigth to ten
Boiled peeled cubed potato one
Green chutney /dhania chutney one tbsp
Meethi chutney/ imli chutney one tbsp
Salt as per taste
Chaat masala one tsp
Black salt as per taste
Red chili pinch
cumin powder one tsp
Beaten curd four tbsp
Pomegranate seeds one tbsp
Sev handful
How to assemble
In a plate place the base layer papdi,cubed potato and Bhalla
Top it with baten curd followed by the chutneys
Sprinkle all the powdered masalas followed by sev and pomegranate seed
Indulge without wasting a second,..:)

at GK m block market New Delhi.

Indian thali - teekha meat curry ,drum stick leaves paratha and boondi raita
Mummy I want to eat this ,thats what my son told when he saw me flipping the pages of the cookbook,
he was pointing to a page which had kabab on skewers ,I told him that i wiil prepare the same
but then I was craving for something hot and spicy so thus with no recipe in my mind I started with the preparation ,asked Advay to coarsely pound the whole seeds,while I was busy chopping the onions and ginger garlic,ya these days he helps me in the kitchen :-)
Recipe name Teekha Mutton Curry /Hot and spicy mutton curry
recipe source kitchen experiment
Ingredient
goat meat 700 gm
onion seven choped coarsely
ginger garlic paste or grated coarsely two tbsp
tomato one chopped coarsely
green chili sliced four
curd two tbsp
red chili powder one tsp
turmeric powder half tsp
coriander powder one tsp
salt as per taste
oil to cook
whole seeds/khada masala
kabab chini five
clove six
black pepper six
black cardamom two
green cardamom three
cinnamon stick half inch
khada masala for tempering/chaunk
bay leaves crushed four
dried red chili four
cumin seeds one tsp
pinch of asafoetida
preparation
coarsely pound the khada masala ,keep aside
mix goat meat with curd and red chili,coriander and turmeric powder ,keep aside
procedure
heat oil in non stick wok ,add the khada masala for tempering and lower the flame
slowly add the chopped onion followed by grated ginger-garlic paste and keep stirring
once the onions are done add the marinated goat meat and salt keep stirring for 10 mins
add the coarsely pounded whole seeds and let it simmer for 20 mins
after 20 mins add sliced green chili and chopped tomato mix everything together.
cover and let it simmer for 15 mins ,after 15 mins transfer the content to pressure cooker
pressure cook for two to three whistles.
serve warm with plain rice or chapathi,
I paired the curry with Drumstick leaves paratha,boondi raita,plain rice topped with coriander chutney and some onions and lemon wedges on the side.try this one guys when you are craving for something hot and spicy:-)

weekend cooking and eating
last post I blogged about the bread and the dough ,bread was baked
so that I could prepare something which was on my mind since a long time and thats what I did .I had never heard of Vada pav before coming to Singapore,maybe I had seen vendors selling this delicacy in stations of Maharashtra but I never thought of buying for myself, though I had seen passengers buying and eating the same ,i would happily settle down for nagpur oranges,those were the days now i really miss those train journey between Delhi to Bangalore .
Thanks to Blogopshere and the food bloggers for tempting me with the gorgeous pics since past few years,I had to try this ,

hooked on Kababs - Chicken Shami Kabab with Spinach leaves
Last year when i learnt the art of making kababs and storing them in freezer so that they can be just taken out,defrosted ,reheated
and paired with paratha ,dal chawal or simply eaten as appetizer I didn't had any notion that i would be so hooked to them that I would be preparing this delicacy almost every month and ya guys that's what I have been doing so last month I prepared the same Chicken Shami Kabab
and while I was preparing the mince I saw the spinach leaves fresh from the market in the kitchen ,so I took some chopped spinach leaves and added in the mince while shaping out the patties ,
and paired the kababs with onion rings,lemon wedges coriander chutney and mint chutney ,try it guys ,you gonna be hooked too,...:-)

My love for Kababs - Chicken Shami Kabab :-)
I know I just disappeared from Blogosphere since past two weeks ,this break was not intentional but when i started with it i knew i wouldnt be able to post anything unless i finish ,ya friends I am talking about the Recipe Index of my blog its finally there after some four years of Blogging.

When I was jotting down the resoulution this one was one of them at the beginning of the year 2012
so now I can finally tick it off,..:-)
Coming back to today's post sharing with you meal of Butter Chicken ,Dal Makhani, Pyaj Paratha ,Chicken Shami Kabab,Dhania chutney and Salad
which I prepared for a dinner party hosted at home few days back.
Chicken Shami Kabab recipe is inspired from Deeba of Passionate about Baking and
For the love of yum.
I prepared the chicken mince for the kababs the same way as told by Deeba ,after cooking the chicken mince with the chickpeas added chopped cilantro,mint green chili and egg as told by For the love of yum.
Relished the kabab with Dhania chutney and salad.
For freezing the kababs followed the same way as told by Deeba
kept the kababs in a freezer safe box lined with parchment paper.,..:-)

Prepared the same kababs yesterday again,didn't had coriander,mint and green chili so substituted it with red chili powder and kasturi methi,..
paired it with simple chicken curry
which was prepared in few minutes time with chapati and aam pudina chutney with some salads on side.

Refreshing Aam Panna with Sweet mango cranberry smoothie,crispy salad with tangy potato in coriander chutney
Summer is incomplete without MANGOES ,infact summer is announced by the arrival of Amiya in the vegetable market,which is used to make pickle,chutney,dal and so amny other things,but i guess the best use of Amiya is Aam Panna which is the most refreshing drink in summer apart from smoothies and shakes,prepared specially to beat the heat specially after coming back from outing in the noon,one glass of Aam Panna and all your tiredness is gone ,it cools down body temperature too.I keep stock of mint leaves and amiya in my fridge always as the temperature here in Delhi is soaring like anything...:-( Dadi used to prepare this drink during my childhood days,yesterday when i couldnt bear the heat after comin from my driving lessons i googles for the recipe

of Aam Panna ,recipe is taken from here
Prepared mango smoothie for dinner day before yesterday,just blended mago pulp,curd,milkand cranberries ,and ya i didnt add sugar ,perfect and filling ,quenched our thirst and hunger pang too,,;-)

These days we wait for evening thinking evening will be fine but its the same as noon,,with no mood to eat dinner is replaced by bowl of salad and mug of milk

for the salad ingredient needed
almonds 6
tomato one finely chopped
cucumber one chopped
carrot one chopped
coriander flavoured cottage cheese
pinch of salt and pepper
half tsp extra virgin olive oil
procedure
just mix everythin together
toss well
serve chilled.

Today prepared Dhania alloo after quiet a long time ,brought back many memories of Sunday lunch during summer vacations,preparation is very simple

ingredient needed

green chili three
salt as per taste
procedure
blend chutney ingredients together .
mix the chutney with finely chopped potatoes
serve chilled.
Dhania alloo serves as a good side dish to Tehari,and together with fresh curd and mango slices meal was complete.

Cook when it rains - Dhokla with coriander chutney

i am sending the dhokla recipe for WBB -21 HOSTED BY EASY CRAFT
what a day made dhokla,,for the firts time,,,,and by smell i can make out it will taste great too,...so here goes
Recipe name Dhokla cooked in microwave
ingredients
one and half cup besan
one cup water
one tbsp oil
half tsp haldi
1tsp each of ginger and chilli paste
lemon juice two tsp
eno slat one half tsp
soda bi carn one fourth tsp
for the tempering
1tsp rai
2 tbsp oil
3 green chillies slit
white vinegar one fourth cup
3 fourh cup water
1 tbsp sugar
procedure
grease flat round dish with oil keep aside
sift the besan to avoid lumps
mix besan ,water ,ginger chilli paste,turmeric powder ,eno,sugar, soda bicarb,oil and salt
beat well for few seconds
add lemon juice

pour this mixture to greased dish and microwave uncovered for 6 minutes
keep aside
to temper microwwave oil,chilli,vinegar ,water,sugar and rai for 5 minutes
pour over the dhokla and wait for half an hour to absorb it and turn soft
cool and cut into pieces
garnish with chopped coriander

one cup coriander leaves chopped
1 inch ginger
two green chilli
salt as per taste
amchur 1tsp
lemon juice one tsp
procedure
mix all the ingredients and grind in a mixer.
