Day before Yesterday I spoke about cooking something different on Instagram this post is about that dish which I cooked for the dinner this is not something which I prepare daily something for which I went out of my comfort zone as I didn't feel like preparing chapathi thanks to my back pain so thought of cooking spinach pulao for dinner paired it with aubergine fritter and onion tomato raita ya loved this simple yet exotic meal a bit different from everyday meal .
Recipe Name - Spinach Pulao
Ingredient
Rice basmati two cups (soaked for 30 mins)
Spinach leaves 200gm
Garlic one chopped
Onion chopped one
Tomato one chopped
Salt as pet taste
Oil to cook
Half tsp of turmeric powder
One tsp of garam masala powder
Cashew three chopped
Almond two chopped
raisin seven to eight
Asafoetida a pinch
Cumin seeds one tap
bayleves crushed two
Preparation
Boil water in a pan ,once the water is boiling
add the soaked rice and cook it till its done
Drain and keep aside.
Procedure
Heat oil in non stick pan
Add asafoetida ,cumin seeds and bay leaves and let it splutter
Add chopped garlic and onion and keep frying till they are brown
Add salt, turmeric powder ,garam masala and tomato
Keep stirring till oil is seen along the sides
Add chopped tomato and spinach leaves & cover and cook
After few minutes add half cup of water and let it simmer
Remove from flame and keep aside .
Once it cools down blend it with the help of blender
Keep aside .
In the same pan add half tsp of oil add chopped cashews
Almond and raisin fry for a minute or two ,
Drain and keep aside.
Add the drained rice and the puréed spinach mix
Fry for two minutes remove from flame and keep aside.
Serve warm garnished with fried nuts and raisins .
Aubergine Fritters
Ingredient
brinjal sliced one
Chickpea flour three tbsp.
Carom seeds one tap
Salt as per taste
Garam masala powder one tip
Rice flour one tbsp.
Procedure
In a mixing bowl add chickpea flour
And all the above ingredient except brinjal
Add one fourth cup of water
make a nice batter add the sliced brinjal
Heat oil in non stick pan
Add the brinjal slices one at a time
Keep turning the sides till its brown from both sides
Drain and sprinkle chat masala that's how I love to eat
serve warm with the spinach pulao and raita.

so I followed my heart what about you
Few days back while cooking for my friend I was intrigued by this thought in my mind Just because she is not Indian should I alter the ingredients in my recipe to suit her palate or I should cook the way I cook for us everyday . No I didn't wanted her to say that the food is perfect I wanted to show her how we eat everyday what's our normal cooking is so perturbed by these thoughts I continued cooking , what about you guys you alter the recipe to suit the palate for your guests or you cook the same way you cook everyday please share your views ..
Sharing with you all recipe of Tandoori chicken which I prepared for my friend
Recipe Name - Tandoori Chicken
Recipe source kitchen experiment
Ingredient
Chicken drumsticks four
Curd one cup
Ginger garlic paste one tbsp.
Salt as per taste
Coriander powder one tsp
Turmeric powder one tsp
Red chili powder one fourth tsp garam masala powder one tsp
Juice of half lemon
Preparation
Make deep slits in the chicken and keep aside
In a mixing bowl whisk all the ingredient together mentioned above except oil add the prepared chicken pieces and coat the chicken pieces nicely with the marinade . Keep it overnight in fridge or for few hours if to be cooked the same day .
Preparation in the oven
Line the baking tray with aluminum foil
Preheat the oven to 180 degree centigrade
Keep the prepared chicken pieces on the tray with some space in between and brush them with oil or butter
Bake it in oven till it's brown and done from both sides . If needed brush them with oil again midway .
Serve warm with salads and dip
We had with Chola ,Paratha ,Kachumber and plain rice .

one of my favorite breakfast - weekend cooking
Weekdays mostly we eat toast ,cereal for breakfast but on weekends its different its most of the time parantha with some vegetable or stuffed paratha .
Sharing with you all one such meal which we had few days back on weekends at home ya this one is my fav. too .The meal has plain paratha,alloo bhujia,boondi rata and a glass of orange juice.

Home Cooked Comfort food in Lyon
Its been 4 days since we reached here, now this place looks like home ,everything is at its proper place and there are some cosy corners too where I can sit back and relax. Now that home is set thought of cooking some simple meal as had been craving for home cooked meal since long so today dinner was plain rice ,chana dal ,allo bhujia ,salad and pickle.
Thankfully there was pressure cooker in the apartment so it was quiet easy didn't temper the dal ,bought rice and chana dal from the local grocery store nearby they just had Cambodia rice which paired nicely with the dal and allo bhujia .For the salad mixed half tsp of red wine vinegar in a bowl of chopped onion and tomato sprinkled salt and pepper tossed nicely. Ya friends this was comfort food for me really felt satiated,..That's all guys will catch up with your blog soon,,take care and happy blogging

Weekend cooking – mutton korma paired with egg pulao mint chutney and chapathi
As you all must be knowing by now my weekends are known to be chaotic still I manage to prepare a decent meal and that's what I did yesterday with the back up ingredients like coriander chutney,mint chutney and home made curd life looks easy so if nothing else at least I can prepare stuffed paratha but last few days weather has been very bad in Singapore hot and humid so stuffed paratha was out of plan so I thought of preparing curry with the shaan masala which I keep for such situations when I am out of idea to experiment ,this is a simple curry which doesn't need any special ingredient this is how I executed the meal .

- Recipe name – mutton korma
- Preparation time – 10 mins
Cooking time 30 mins - Ingredient
Goat meat 500gm
Curd half cup
Onion one sliced
Ginger julienne one tbsp.
Oil to cook one tbsp.
Shaan korma masala half packet
Preparation
In a mixing bowl beat curd mix half packet of shaan korma masala followed by the mutton pieces ,keep aside.
Procedure - Heat oil in non stick wok,once hot lower the flame and add sliced onions
Keep stirring till the onions become brown add the marinated mutton pieces
Keep stirring ,sprinkle few drops of water and let it simmer for 10 minutes
After 10 minutes sprinkle ginger julienne and transfer the content to pressure cooker.
Pressure cook for 3 to 4 whistles.
Serve warm with pulao and chapathi. - Recipe name – Egg Pulao
This is something which I do most of the time ,fry boiled egg in the same wok in which curry was prepared,strain and keep aside
Fry the cooked rice in the same wok ,that's all ;-)
To serve keep the fried rice in a bowl top it with the fried boiled egg.
Serve warm with curry.

Tea break
There are so many things going in my mind,so today I thought of taking a tea break for myself, plugged the iphone and played some random old song,prepared crispy mint paratha ,paired it with stuffed red chili pickle and a mug of cardamom chai and lived that momemt of sipping tea,tearing paratha and relishing it with the pickle,devouring the meal as if there's no tomorrow,forgeting everything for some minutes and breathing for just self,,.:)
It's been a while since I had my own space but now as Advays school is open things are back to normal or maybe that's what I feel, it took me two months to write this post or to share with you all my musings .Now my posts wont be sporadic , will catch up with my favorite blogs soon sharing with you all the recipe of Mint Paratha.
Recipe name - Mint Paratha
Ingredient
whole wheat flour two cup
salt as per taste
mint leaves half cup chopped
carom seeds half tsp
red chili powder pinch
oil to cook
Procedure
In a mixing bowl mix all the above ingredient and one tsp of oil
add enough water to knead the dough ,cover with cling wrap and keep aside.
after 15 minutes divide the dough into equal sized lemon sized balls
flatten each ball and and roll with the help of rolling pin
place the paratha on a preheated griddle
once brown from both sides apply oil and cook till its done,
serve warm with pickle and chai..

Indian Veg thali - Crsipy fried bhindi and Dal makhani
most of the time I prepare the regular sabzis the way its prepared at our home but then there are times when I see some new and different recipe and feel like trying the same ,
this one is one of such recipe not prepared at our home
Recipe name crispy fried okra/bhindi jaipuri
Ingredient
300 gm Okra
three tbsp gramflour
half tsp each of turmeric,chili and amchur powder
salt as per taste
pinch of nigella
oil to cook
Preparation
wash and dry the okra,cut the stalk
slice the okra at an angle into 3cm
Procedure
In a mixing bowl mix all the ingredients listed above
add the chopped okra pieces and two tbsp water
make a thick and sticky paste
heat oil in a wok ,once hot lower the flame
fry the okra pieces till they are golden
remove and drain on kitchen paper
serve warm with the meal.
Paired the crispy fried bhindi with Dal Makhani and Chapati .
