Thali with fried spinach with potato and tomato dal,.

Since the day i have started cooking , i have tried almost all the veggies prepared at my home,trying to replicate  the same aroma  which comes when my mother cooks, spinach is something with which i havent experimented much ,way back in 2008 when i had started this space i tried Palak Paneer from a cook book which i have shared here , since then nothing new in my blog with spinach,but now since Advay has started eating vegetables  , i try to introduce more of yellow and green vegetable to him whenever i can, December i experimented with spinach and chicken to prepare this curry , and recreated Aloo Palak Paratha from Shvetas Cooking Blog .Last week when i saw spinach leaves in my fridge , i thought of preparing potato spinach sabzi the same way my mother prepares , paired the sabzi with chapathi,curd rice,tamatar  dal and pickle.

Recipe name - Potato Spinach Sabzi
Recipe source - my mother
Prearation time 10 mins
Cooking time 20 mins
Ingredient
Spinach leaves one cup chopped
potato one chopped
salt as per taste
oil to cook one tbsp
garlic cloves two chopped
fenugreek seeds half tsp
asafoetida pinch
dried red chili two crushed
half cup of water
turmeric powder pinch
Procedure
Heat oil in non stick wok ,once oil is hot lower the flame
add garlic, fenugreek seeds,dried red chili and asafoetida
stir for a minute and add chopped potatoes
fry for two minutes and add salt and turmeric powder
once potatoes are start changing their texture
add spinach ,mix everything together
and cover and cook on low flame.
after two minutes add water and let it simmer .
serve warm.
Tamatar Dal/Tomato dal
Ingredient
Cooked  Toor dal
for tempering
chopped tomato one
cumin seeds half tsp
garam masala powder half tsp
ghee one tsp
Procedure
heat ghee in non stick wok
once hot lower the flame
add cumin seeds followed by tomatoes
keep stirring and add garam masala powder
once the tomatoes turn mushy
add the tempering to the cooked dal.

Try palak and dhal, Advay will love it add a generous ghee in white rice. That would be a comfort food!
