Marraige Feast,..

Gobhi Paratha with curd,chutney and jalebi
lunch menu
paratha with parval sabji,allo bhujia and pickle
Second lunch platter has Sattu paratha,kaddu sabji and khatta meetha aam achar
dinner menu has khasta kachodi jalebi allo sabji and gobhi sabji this platter is staright from halwai of our hometown,..:-)

For Gobhi paratha

grate cauliflower,in a mixing bowl mix grated cauliflower with salt,crushed green chili,cumin powder,garam masala.

follow the same procedure as told for sattu paratha

For alloo bhujia

in a non stick wok,heat oil

lower the flame and add fenugreek seed and dried red chili

once it starts spluttering add chopped potato

followed by salt and turmeric powder

cover and cook for some time

serve hot.

Refreshing post for Summers

 As Srivalli is on with Thanda Mela , i thought of sharing these two refreshing drinks
 First platter has balloon cake,egg omelet,herbed bread and mango shake
 For Mango shake - just blend chopped mango pieces with milk and sugar. 
 Second platter has sattu , pudina aam chutney, red chili pickle and matha.

Mini muffins with chocolate chips for Advays School Birthday Celebration

It feels so good to blog again,last few days i was really busy because of Advays Birthday
,prepared vanilla muffins with chocolate chips for his school birthday celebration here goes the recipe,..
Recipe Source - cake book
recipe name Vanilla muffins with chocolate chips
baking time 15mins
baking temp 190 degree centigrade
Ingredient
all purpose flour 175gm
egg two
sugar 225gm
butter 115gm
baking powder 7.5ml
vanilla esence one tsp
milk 120 ml
pinch of salt
one tbsp chocolate chips
Preparation
preheat the oven to 190 degree centigrade
line a cup tray and keep aside
procedure
cream the butter and sugar until light and fluffy
add the eggs one at a time,beating well after each addition
sift and stir in flour,salt and baking powder
alternating with the milk,add the vanilla extract.
half fill the cup and top with chocolate chips
 and bake for 20 mins
cool for 5 mins,then unmould on to a wire rack.

And the Cupcake story continues,..

I had some leftover cupcake batter in my fridge ,so today baked some mini cupcakes
,involved Advay in decorating the cupcakes thats why u guys see some messed up ,it was fun decorating with him ,
This time i moulded some shape with help of sugarpaste icing ,decorated with the coloured icing,coloured vermicelli,chocolate vermicelli,edible silver beads,coloured beads,fudge frosting.

Its Cupcake Time,..

I had to try cupcakes today
,when i saw the recipe here,i followed the same recipe without any change
for icing
recipe source my cake book
ingredient
two egg white
two drops of glycerine
lemon juice
350gm sugar
for decoration
food colour raspberry red,green and yellow
edible coloured bead
silver balls
coloured vermicelli
fudge frosting
chocolate vermicelli
preparation
beat the egg white till stiff
add sugar,glycerine and lemon juice and beat further for a minute
tint the icing with different colours and keep aside
to decorate 
spread the icing on the cupcakes
top with decoration of choice.
These cupcakes are off for Bake off Event.

Trial Cake for Advays Birthday - Madeira Cake/3 Balloons Cake

Of all the cakes i have tried so far,i guess Madeira Cake is the best for decoration,i tried the recipe of Madeira from my Cakebook.
Recipe Name Madeira Cake
Recipe source cakebook
baking temperature 160 degree centigrade
baking time 40 mins
Ingredient needed
225gm all purpose flour
one tsp baking powder
225 gm butter
225gm caster sugar
grated rind of lemon
one tsp vanilla extract
4 eggs
Preparation
Preheat the oven to 160 degree
grease and line 20cm/8inch pan
sift all purpose flour and baking powder and keep aside
Procedure
cream the butter,keep adding caster sugar 30ml/2tbsp at a time until light and fluffy.
stir in lemon rind and vanilla extract
add the eggs one at a time ,beating for one minute after each addition
add the flour mixture and stir until just combined
pour the cake mixture into the prepared tin and tap lightly to level
bake for 40 mins till metal skewer inserted in the centre comes out clean.
For the decoration,
thing needed
edible silver balls
how i did
slit the cake into two parts
spread fudge frosting and sandwhich both the layers
spread thin layer of royal icing on cake top
followed by sugarpaste icing
with help of marzipan shape out three balloon shape 
colour into three different colour 
place on the cake top
with royal icing pipe in thread of ballon.

Eggless Sponge Cake topped with chocolate flavoured buttercream icing and M&M's

While browsing for recipes on net,i got one of Eggless Sponge Cake from Tarla Dalals site,
tried this today,topped it with Chocolate flavoured butter cream icing and some M&M's.
For Butter Cream Icing
Ingredient
125gm butter
1 tbsp milk
375gm icing sugar sifted
For Chocolate flavour - Mix the milk and 2tbsp unsweetened cocoa powder to a paste and add to the mixture.
Procedure
In a mixing bowl mix the butter with milk and cocoa paste
sift the icing sugar into the bowl a little at a time
till the sugar is incorporated and the butter cream has light texture.
This M&M Cake is off for Bake Off event.

Tic Tac Toe Cake

Yesterday noon i finally decided to deck up sponge cake and this how my first done cake looked
This is what i could come up with sponge cake is coated with sugarpaste icing ,tic tac toe design is done by coloured marzipan finally i mixed in pink colour to royal icing and did some design ,
Victoria Sponge Cake
preparation time 10 mins
baking time 20 mins
Ingredient for Victorian Sponge Cake
three fourth cup butter
three fourth cup confectioners sugar
three egg beaten with vanilla extract
one and a half cup self rising flour sifted
Preparation
Preheat the oven to 180 degree centigrade
grease the cake tin and line the base with paper,grease and keep aside
Procedure
Cream the butter and sugar in a mixing bowl
gently beat in egg and vanilla followed by flour
when the ingredients are combined transfer in the prepared tin
Bake for 20 mins and leave to cool.
Marzipan
ingredient
two cups ground almond
half cup superfine sugar
one cup confectioners sugar sifted
one egg lightly beaten
one tbsp lemon juice
procedure 
mix the almond with the superfine and confectioner sugar in a bowl
work in egg and lemon juice till the mixture is fairly stiff
turn on a lightly sugared work surface and knead gently for few minutes till smooth
wrap in a plastic wrap and keep aside
Sugar paste icing
one egg white
two tbsp liquid glucose warmed
625 gm confectionar sugar shifted
Procedure
In a mixing bowl mix egg white with liquid glucose 
once mixed add confectioners sugar with spoon 
knead the paste gently into a ball 
plastic wrap and keep aside 
Royal Icing
Ingredient
one egg white
250 gm icing sugar sifted
Procedure
put egg white in a mixing bowl
beat in icing sugar a little at a time
till the icing is firm and glossy and forms peak when the spoon is pulled out
cover the bowl with damp cloth for few minutes before use.

Microwave Lemon Sponge Cake For MEC Kids Party Food

Yesterday tried this simple microwave cake recipe from here ,

I didnt sandwich the cake with cream and jam instead topped it with Fudge frosting and silver and colourful edible balls.
Advay liked it a lotz so this one gonna be a regular one in my kitchen

Betty Crockers Chocolate Cake with Fudge Frosting

I like to cook when theres no one to disturb me so today noon when i couldnt sleep i flipped through my cake books and finally selected Chocolate cake recipe from Betty Crockers cookbook,
Recipe name Chocolate cake with fudge frosting
Recipe source Betty Crockers Cookbook
Preparation time 10 mins
Baking time 30 mins
Ingredient for the cake
All purpose flour two and a half cup
Sugar one and a half cup
water one cup
two egg
salt one tsp
pinch of baking powder
vanilla one tsp
butter three fourth cup
cocca two thrid cup
one tsp baking soda
Preparation
grease the baking pan and keep aside
preheat the oven to 170 degree centigrade for 10 mins
Procedure
In a mixing bowl mix all the ingredients with hand blender
Bake for 30 mins until tooth pic inserted in the centre comes out clean.
Cool for an hour
Fudge Frosting 
Ingredient
 Granulated Sugar two cup
Baking Cocoa one cup
Milk one cup
Butter half cup
light corn syrup one fourth cup
vanilla two tsp
powdered sugar 2 cups
Procedure
In a saucepan mix granulated sugar with cocoa 
stir in milk ,butter,corn syrup and salt
heat to boiling stirring frequently
boil for 3 mins stirring occasionally
cool for 45 mins
beat in powdered sugar and vanilla until smooth .
p.s. my first attempt frosting the cake so i wasnt that happy with the done cake,..

Chili tofu with veg noodles

Its hot like hell here in delhi and power outage has become very frequent ,so i am not thinking of baking anything...these days we are eating more of light food ,Pema my friend prepared Tofu chili and Veg noodles,for veg noodles i specially asked her to prepare  as whenever i prepare i am disappointed as the noodles dont mix well with the veggies.
for Chili Tofu

200gm firm tofu cubed
onion cubed two
green chili sliced three
garlic clove minced six
ginger minced one inch
tomato one cubed
salt as per taste
turmeric powder a pinch
oil to cook one tsp
tomato sauce one tbsp
soya sauce half tsp
green chili sauce one tsp
coriander leaves chopped one tsp
Preparation
Shallow fry tofu and keep aside
Procedure
Heat oil in wok and fry onion and garlic,
once half done add capsicuma nd green chili and further fry for few mins
add tomatoes,salt and turmeric powder and mix everything together
once the tomatoes are done add soya ,chili and tomato sauce
followed by tofu.
For Gravy
Mix cornflour with water 
add to the above mix and let it simmer for few minutes .
For noodles
she told me wash the noodles in running water once they are boiled .

Garam Kulhad wala doodh aur thandi malaidar kulfi

Its almost summers here and i guess this is the best time indulge in sweet desserts like kulfi, ice candies, lassi and other summer delights ,these days Kulfi Falooda stall can be seen everywhere in delhi,this season i tried Kulfi Falooda at Chandni Chowk and Sarojini Nagar Market ,
 
and tried the same without Falooda at home,
Recipe name Kulfi
Recipe category dessert
Preparation time one hr
Freezing time 3 to 4 hrs
Ingredient needed
1.5ltr full cream milk
sugar as per taste
coconut powder one tbsp
coarsely grounded almond,pistachio and cashewnut 
saffron strands pinch
Procedure
Transfer milk in a vessel and and keep on low flame to thicken
(this will take time )
 add sugar,ground cardamom,ground dryfruits and saffron strands
let it simmer for 15 mins.
Once done remove from flame and let it cool.
this thick milk can be used in two ways
Once the thick milk cools down it can be served chilled or warm as Kulhad wala doodh topped with Malai
Kulhad wala doodh is another common street food of delhi ,mostly available in winters.
or can be poured in kulfi mould and freezed for few hrs .
Kulfi can served alone or topped with falooda.

Penne with veggies and cheese

Have tried pasta with various ingredients but never with cheese so when Neha prepared Penne with cheese and veggies I asked her the recipe for my own refrence,..but before the recipe sharing with you all interesting link of Pasta Shapes
Recipe name Penne with cheese and veggies

Preparation time 10 mins
Cooking time 10-15 mins
Baking temp 180 degree centigrade
Baking time 5 mins
Ingredient
Penne one cup
onion sliced two
tomato chopped one
green chili one sliced
red capsicum one sliced
babycorn sliced three
salt as per taste
pepper powder half tsp
soya sauce one tsp
tomato suace one tsp
green chili one tsp
olive oil one tsp
mozarella cheese shredded half cup
Preparation
Boil Penne till al dente and keep aside
Procedure
Heat oil in non stick wok lower the flame
add chopped onion and green chili
keep frying till the onions are half done
add chopped tomatoes and fry further for a minute or two
once the tomatoes are half done add sliced capsicum and babycorn
followed by salt,pepper,and all the three sauces .
let it simmer for a minute or two
Before baking combine cooked penne with the veggie mixture ,top it with grated  cheese 
preheat the oven to 180 degree centigrade for 5 minutes
spoon on a lightly oiled baking dish and bake for 5 minutes.

Home baked pizza topped with mint leaves and cottage cheese

10am to 12pm
3pm to 5pm
7pm to 8pm
the above timing is of the regular power outage in our residential area ,keeping this schedule in mind i thought of baking pizza one fine evening ,done with the topping preparation i was waiting  sharp at 8pm but that evening power outage was increased  ,may be due to sudden increase in temperature in northern india, :-( ,desperate and hungry i thought of using stove top to bake pizza but thanks god we didnt had to wait for long ,..;-) maybe god tests our patience sometimes..
coming back to the recipe
Recipe name fresh baked pizza with mint leaves and cottage cheese
recipe source for the pizza crust -cookbook
preparation time 2 hrs
baking temp - 220 degree centigrade
baking time 10 mins
ingredient needed
450gm all purpose flour
one tsp salt
two tbsp olive oil
pinch of sugar
half tsp active dried yeast
procedure
In 300ml of warm water add yeast and sugar and leave for 5 to 10 mins until frothy.
In another mixing bowl sift the flour and salt and make a well in the centre 
add olive oil and yeast mixture
mix to make a smooth dough
knead on a lightly floured surface for few minutes
place the dough in a floured bowl ,cover and leave to rise in warm place for two hrs.
After 2 hrs preheat the oven to 220 degree centigrade/425 degree fahrenheit/gas 7
knead the dough for 2 minutes and divide into equal pieces
roll out each piece to 25cm round and place on lightly oiled baking sheet.
for the topping
cottage cheese
mint leaves
grated cheese
tomato sauce
ingredient for tomato sauce
tomato 2
garlic clove 6
bay leave 1
salt as per taste
pepper powder
vinegar two tsp
olive oil one tsp
procedure for tomato sauce
heat oil in non stick wok
lower the flame add garlic clove,bay leave 
followed by tomato,salt and pepper 
keep frying till tomatoes are half done 
now add vinegar and let it simmer for a minute and two and remove from flame.
to assemble
spread tomato sauce on each dough round
brush the edges with olive oil and top the dough round
with sliced cottage cheese,mint leaves and shredded cheese
or any topping of your choice ;-)
bake for 10 mins till golded brown and crisp.
