Garam Kulhad wala doodh aur thandi malaidar kulfi

Its almost summers here and i guess this is the best time indulge in sweet desserts like kulfi, ice candies, lassi and other summer delights ,these days Kulfi Falooda stall can be seen everywhere in delhi,this season i tried Kulfi Falooda at Chandni Chowk and Sarojini Nagar Market ,
 
and tried the same without Falooda at home,
Recipe name Kulfi
Recipe category dessert
Preparation time one hr
Freezing time 3 to 4 hrs
Ingredient needed
1.5ltr full cream milk
sugar as per taste
coconut powder one tbsp
coarsely grounded almond,pistachio and cashewnut 
saffron strands pinch
Procedure
Transfer milk in a vessel and and keep on low flame to thicken
(this will take time )
 add sugar,ground cardamom,ground dryfruits and saffron strands
let it simmer for 15 mins.
Once done remove from flame and let it cool.
this thick milk can be used in two ways
Once the thick milk cools down it can be served chilled or warm as Kulhad wala doodh topped with Malai
Kulhad wala doodh is another common street food of delhi ,mostly available in winters.
or can be poured in kulfi mould and freezed for few hrs .
Kulfi can served alone or topped with falooda.

Dinner meal of Chola Bhatura from Pamelas Space


While going through recipes on internet i saw this recipe of Bhatura on Pamelas Blog,i liked the recipe of Chana too at her space,so prepared the combo yesterday from her space,original recipe is of Anita Dhanda who runs a cookery class in American Embassy Delhi.Thanks a ton Pamela for sharing this recipe,both me and Neha enjoyed the meal and ya Advay luved the bhaturas too.

These days i enjoy eating soaked beaten rice with milk for breakfast,and that too without sugar,sometime i add gud or dried dryfruits like cranberry,hazelnut,almond,this simple breakfast of Chuda ya thats what we call beaten rice and milk gives me good start for the cold day ahead.Every year weather used to change after 15th of Jan.ie Makar Sankranti but this year its not the same weather has gone worse and i guess we gonna face more cold days ahead,...:-(thats all folks,tk cre cee u all soon,...:-)

Sweet start with Bitter truth

 I guess Gazar Ka Halwa ,

is the perfect post to start the new year ,I know I am bit late with my first post of the yr 2010,reason being my trip to Agra to celebrate Ganesh Chauth also known as Sankat Chauth at my inlaws place ,I am back with a lesson which I learnt and ya I gonna share with you all too ,we went for trip to FatehpurSikri,I had kept my purse beside me on the steps of Salim Chisthi Dargah, Advay was busy running around so my whole attention was towards him,I was so engrossed watching  him that I didn’t realize when my purse was picked from the steps, no guys I didn’t get it back,but ya as Shakespear said Sweet are the uses of adversity I learnt a lotz from this incident.
Never to carry purse or shoulder bag at tourist place always sling back or back pack,not to carry goodies like fav specs,perfume and other unnecessary stuff,not to carry key of wardrobe outside ,Car is always safe to leave things behind.Its not the first time that this happened with me I Lost my cell phone first time in Bangalore while shopping,second time in London I forgot my handbag in tube didn’t get it back and the third time the recent one.
 Yesterday Neha prepared Gazar Ka Halwa, the way I like I don’t think so anything can be better than this and ya its sweet enough to forget something bitter which happened with me.She prepared it the same way as the basic recipe goes,wash peel and grate carrots keep aside.In a non stick wok add two tbsp of ghee and one or two cardamom pod,lower the flame and fry grated carrots till mushy,add milk and keep stirring till the milk is not seen,add amul mithaimate ,no need to add sugar ,keep stirring till mithai mate is mixed with the carrots,ghee has to be added whenever mixture starts sticking to the vessel.Once done add finely chopped dryfruits,mix well and serve warm.

Good old days are back again,...




Good old days are back again, ya guys my younger sis is back with bag and baggage from London, so now I wont be sighing  and feeling bad that I don’t have company ,I know  I can count on her for the monthly trip to the parlour, or can catch Friday night movie, go for coffee break and do so many other things,I guess sisters are the best gift god has given us isn’t it,…I prepared kheer for her the day she arrived,here goes the recipe
Ingredient needed- rice half cup, milk two cup, mithai mate three tbsp, saffron strands a pinch, cardamom two, ghee one tbsp,two tbsp coconut powder blanched almonds to garnish
Procedure- Heat ghee in non stick wok, add green cardamom, and the soaked rice fry for a minute or two, add milk and keep stirring on low flame once the milk boils add amul mithai mate, followed by saffron strands and coconut powder, let it simmer for 15 to 20 mins till the kheer thickens. Consistency can vary depending on ur need I usually like thick consistency.Once done remove from flame and serve garnished with blanched almonds.

Nani wale aate ke ladoo Advay ke liye,....

When i first read about Cooking for kids with love event i knew what i was going to share ,in the last year event JHIVA FOR LOVE I had dedicate the post to my dadi whom i really miss a lot at times,..coming back to this post i will share recipe of aate ka ladoo
which is loved by Advay lotz,.whenever my mother comes to visit us she gets box full of them,..easy to prepare recipe was passed to her by her mom ie our nani and now she being nani of Advay she prepares for him along with nimki which is another of his hot favourite

ingredients needed for Aate ke laddoo-
wheat flour 500gmsieved and fried in two tbsp of ghee,sugar 200gm grounded quantity may be increased or decreased as per requirement,dry fruits 100gm almond,raisins chopped and shallow fried in ghee,freshly grounded green cardamom two
procedure- mix the above mentioned ingredients together ,if needed add one tbsp of ghee to the mixture and make small table tennis shaped balls.
Aate ka ladoo is ready :-)
Its been more than a year since i have met Nani ,she cant travel much as she has got arthritis,so i guess i will go soon to meet her in my hometown,she is 80 plus but still she manages everything on her own,last year when we were in Delhi she had come down to visit us,she saw Advay for the first time and as Advay is her first great garnd child she dotes on him a lot,below pic is of Nani and Advay taken one year back
So Nani this post is dedicated to you,will meet u soon when weather is fine and i can manage Advay in train,...:-)tk care of your health

sardiyo wali tehari masla raitha ke sath,..or meetha mai aam shrikhand....

In my last post of bharwa baingan i wrote about TEHARI,..TEHARI reminds of short winter days.and.long.cold nights,,,of december,,,as the veggies used in making tehari are cauliflower and peas,..these veggies are readily available in winter..and i still remember my father used to ask my mother to prepare this,,,the side dishes used to be tamatar ki chutney,dhania chutney,curd ,papad and onion salad,..what a saturday meal....i literally used to lick my fingers...and can still remember the taste which used to be spicy enough,..i am stil learnin cooking,..and i know i have to still learn a lot,..whenever i prepare TEHARI back here.,..i try to create the same recipe which my mother prepares,...she prepares in cooker,,,but i use nonstick kadai,,as it is convenient for me..and the masala doesnt stick while cooking,,,
back here in singapore,..i usually prepare Tehari when i feel like eating something spicy with raita,.as cauliflower is available here all the yr around its not a winer dish for me here.easy to cook and good to taste here goes the recipe of tehari

ingredients

cauliflower chopped depending on your need half will do (i usually boil for 4 minutes before using)
potato chopped and boiled for three minutes
onion chopped one
tomato one chopped
ginger garlic chopped one tablespoon
(i didnt use green peas as it was out of stock,can use green peas too)

cumin seeds half teaspoon
bayleaves crushed two
green cardamom two
salt to taste
mixture of red chilli powder,turmeric powder and dhania powder one tablespoon
oil to cook one tablespoon
rice one cup soaked

procedure

heat oil in wok
add cumin seeds once it starts spluttering add garlic,chilli and chopped onions ,green cardamom and bayleaves
once the onions change their shape add chopped tomatoes
add the masala mixture followed by salt,keep frying till u see oil along the sides of the wok
now add the poataoes

and cauliflower,mix well keep frying

now add the soaked rice ,fry for a minute or two
add water

,cover and cook
keep checking,,,once the whole water is dried,,check whether rice is cooked or not

I HAD TEHARI WITH MASALA WALA RAITA

INGREDIENTS

YOGURT ONE CUP
MUSTARD SEEDS 1/4TH tsp
cumin seeds 1/4th tsp
curry leaves 6
asafoetida a pinch
ground turmeric a pinch
salt to taste
powder of fennel seeds half tsp

procedure

mix the yogurt with salt,sugar and fennel powder
give tadka of remaining ingredients and mix

tried making mango shrikhand the same day ..finished almost whole of it.,,was feelin really bad,,,couldnt save much for hubby,..as i told mango in any form is delicious...

prepared strawberry smoothie this sunday..thick,nutritious nd filling...

one cup strawberry
curd one cup
orange juice one cup
ice cubes

procedure

blend all the ingredients together
enjoy chilled

we used to drink mango lassi almost everyday,..during the summers,..infact our mornin glass of milk was replaced by the glass of mango lassi,,hve added coconut milk..to the mango pulp..and curd..blend together..and enjoy..nd ya don forget to add ice cubes
