Morning was not feeling good,blamed it to the rain,as i woke up with running nose and swollen eyes,had to eat medicine so thought of quick breakfast of butter toast and coffee,did me good,:-) as the weather is quiet pleasentt today went for walk and soon it was time to fetch Advay,came back fresh and saw this recipe of
Garlic Bun in Raks Kitchen blog,who had tried from My Singapore Kitchen blog, now i had to try this today
ya i was bit scared as i am still not used to of the new oven ;-( and i am so glad i did,my buns turned out to be more like dinner rolls ;-(
i didnt do any topping as i just wanted plain ones to have with hot rasam which my neighbour has sent me no guys i didnt tell her that i was sick in the morning :-)

Blueberry Crisp with Icecream ,....
I just luv blueberries so when i saw the recipe of Blackberry Crisp in Nigella Lawsons book,i had to try it,had blueberries in my fridge and when Advay slept today noon, had all the opportunity to work peacefully in kitchen,,,:-)
Recipe name Blueberry Crisp
Recipe source Nigella Express Book
Recipe style Baking
baking temperature 200 degree centigrade
baking time 15 to 20 mins
Ingredient needed
half cup plus one tablespoon butter'
three fourth cup rolled oat
half cup flour
half cup light brown sugar ( i used brown sugar )
half cup flaked almond
one fourth cup sunflower kernel ( i didnt had :-( )
ground cinnamon one tsp
blueberries one cup ( original recipe blackberries four cup)
one fouth cup vanilla or granulated sugar ( i used normal sugar)
two tsp cornstarch ( substituted with all purpose flour )
Procedure
preheat the oven to 200 degree centigrade
melt butter and keep aside
In a mixing bowl combine oat with flour,brown sugar,cinnamon,sunflower kernel and almond
In a baking dish preferably wide shallow one ,mix blueberries with sugar and cornstarch (i used all purpose flour)
stir melted butter over crisp topping and spoon over the blueberries
bake for 20 mins and serve warm with icecream or cream.
this one is for u frens,just curl up on ur couch and enjoy this bowl thats wht i did. u will experience sheer bliss,tastes best served warm with dollop of ciecream or cream.

Momos Platter
I was introduced to momos
in lajpat nagar market of delhi,thanks to my sis Pallavi,i know which area is good for sweets,where to buy fresh veggies and fruits,whts famous in delhi haat and so many other things regarding Delhi and its food culture,..;-)and i knw there is lotz to be discovered,its like a never ending journey,,,coming back to todays post i gonna share with you guys recipe of Momo
recipe source my friend Pema
recipe name Chicken Momo
ingredient for filling
onion chopped one
ginger garlic paste one tbsp
chopped coriander leaves handful
minced chicken one cup
butter two tbsp

procedure
in a mixing bowl mix everything together
keep aside for sometime
add salt before making momo
for the crust
all purpose flour one cup
water
procedure
knead the dough and keep aside
once the filling is prepared
roll out small circles as shown in the pic
fill in the mixture and join the two ends together

since i dont have the tratditional momo steamer,we steamed the momos in idli steamer :-)
some momos were fried too,..

for the red chutney
one dried red chili, few coriander leaves and salt,blend in a blender
serve momos with chutney and soup.

Microwave Lemon Sponge Cake For MEC Kids Party Food
Yesterday tried this simple microwave cake recipe from here ,

I didnt sandwich the cake with cream and jam instead topped it with Fudge frosting and silver and colourful edible balls.

Advay liked it a lotz so this one gonna be a regular one in my kitchen

Holi festival delights Namkin and Mathri from my moms kitchen
Its almost holi time ,everyday there is some festive cooking going on in our kitchen,from past two days Mathris and Namkins is being fried ,..so todays post gonna be Holi Special post ;-)
First recipe is of
Recipe name NAMKIN
Recipe source my mother
Preparation time 15mins
Cooking time 30 mins (depends on the quantity)
Recipe category snack
Ingredient
one kg all purpose flour
water to knead the dough
salt as per taste
asafoetida pinch
carom seeds two tbsp

Preparation
Mix three to four tbsp of refined oil in the flour
mix to the consistency that ball can be made of the dough by hand
add salt,asafoetida and carom seeds
slowly add water and knead smooth dough
keep aside.
Procedure
with the help of rolling pin and pastry board roll out the dough
pierce through the rolled out dough with help of fork
cut in one direction with help of knife
and then in opposite direction
heat oil in wok
once oil is hot lower the flame
and fry the nimkis till brown in colour
they can be shaped out in diferent shapes too with the help of cookie cutter .

Second recipe is of Mathri
for mathri dough diffrence is addition of chickpea flour and red chili powder while kneading the dough.

Delhis street food Palak Papdi Chaat recreated at home
Everytime i crave to eat Palak Papdi Chaat i cant go to Prince Chaat shop at GK m block market ,so today when i felt like eating this chaat,i thought of giving this recipe a try,and i am so glad i tried this out today,here goes the recipe of Palak Papdi Chaat recreated at home,

For Chaat
Tamarind Jaggery chutney
Coriander chutney
salt
red chili powder
cumin powder
bhujia
boiled potato
papdi
curd
For Palak Papdi
Palak leaves washed and dried
gram flour three tbsp
water
refined oil four tbsp
salt as per taste
red chili powder half tsp
cumin powder half tsp
amchur powder half tsp
Procedure
mix gramflour with water and salt,red chili powder,amchur powder and cumin powder.
heat oil in wok
lower the flame and dip the dried palak leaves in the besan batter and fry till brown from both sides
drain and keep aside
To Assemble
In a serving dish place the palak papdis
top them with curd,boiled potatoes,papdis,coriander and tamarind chutney,bhujia,red chili powder,cumin powder.

As this was the first time i tried this at home this is what i learnt
- batter should have been more watery
- papdis should be served warm,as they loose their crispiness if serving time is prolonged.
Papdis can be served hot with tea or coffee also

street food karela papdi chaat
Karela Chaat is one of my favourite street food form my hometown,yesterday mother prepared karela papdis ,

Ingredient needed
all purpose flour
water
Procedure
to prepare karela papdi knead dough ,roll out poori shape from maida dough,in the centre make vertical lines with help of knife,seal from both the edges.In a non stick wok,heat oil and once oil is hot lower the flame and fry the papdis till crisp.

Ingredient needed for Chat
Karela papdi
Coriander chutney
curd
Bhujia
chopped onion
boiled potato or boiled chickpea
red chili powder
cumin powder
salt
To assemble
In a serving dish place papdis,followed by boiled potatoes,tamarind chutney,coriander chutney,bhujia,onion,red chili powder,salt and cumin powder.

Dinner meal of Chola Bhatura from Pamelas Space
While going through recipes on internet i saw this recipe of Bhatura on Pamelas Blog,i liked the recipe of Chana too at her space,so prepared the combo yesterday from her space,original recipe is of Anita Dhanda who runs a cookery class in American Embassy Delhi.Thanks a ton Pamela for sharing this recipe,both me and Neha enjoyed the meal and ya Advay luved the bhaturas too.

These days i enjoy eating soaked beaten rice with milk for breakfast,and that too without sugar,sometime i add gud or dried dryfruits like cranberry,hazelnut,almond,this simple breakfast of Chuda ya thats what we call beaten rice and milk gives me good start for the cold day ahead.Every year weather used to change after 15th of Jan.ie Makar Sankranti but this year its not the same weather has gone worse and i guess we gonna face more cold days ahead,...:-(thats all folks,tk cre cee u all soon,...:-)

quick fix meal - rice with veggies
Bowl of leftover rice,few veggies ,dash of salt and pepper,pinch of dried chives and few drops of olive oil thats how i prepared this Veggie fried rice,these days i am not giving much time to cooking because of my exams,:-( thats the sad part thats why my posts are flooded since past few days with quick fix meal specially when i am alone in the kitchen cant help ....

Coming to this recipeof Veggie Rice
Ingredient needed
Leftover rice one bowl
mushroom 3-4 chopped
brussel sprout two chopped
cabbage chopped handful
olive oil half tsp
salt and pepper as per taste
dried chives a pinch

procedure
heat oil in non stick wok
lower the flame
add the veggies followed by salt and pepper
stir fry till the veggies are tender
add left over rice,mix well,followed by addition of chives
Serve hot .
These days while studying i like to munch on these

Thili Dosai from Lakshmis kitchen and Wholewheat Walnut Bread
Since past two months,life has been really busy with so much to do and just 24hrs in a day, sometimes i feel i need more time to catch up with the pending work,yet whenever i feel like like cooking or get the opportunity to cook i dont miss it,first half of the day i am busy in hospital doing projects and the second half is for home,Advay,sudying,cooking and so many other things,its tough managing both home and work but i am doing the best i can,Advay has become very naughty,he keeps me on my toes,evening is spent running after him and as soon i am back from work he gets his books out from his school bag for revision,ya he luvs alphabets and is in luv with them ,he has started conversing in his own language and tries to catch up with us not to miss he luvs chatting with his father on Skype which is our daily routine these days,coming back to cooking
I tried Thili Dose
from Lakshmis space which is yum i am going to make this again,perfect for beakfast and brunch we enjoyed this with mango pickle ,thanks Lakshmi for the recipe gonna try ur moong dosai soon,..;-)

and ya i did bake whole loaf of Walnut Bread
from my baking dairy ,this is ow the recipe goes,...
Ingredient needed
420gm wholewheat flour
150gm whitebread flour
12.5ml salt
550ml lukewarm water
15ml clear honey
15ml active yeast
150gm walnut pieces
1 beaten egg to glaze

Procedure
STEP 1
Combine wholemeal and whiteflour and salt in a large bowl,make well n the centre and add 250ml of water ,honey and yeast.
set aside until yeast dissolves and becomes frothy.
STEP 2
Add more water,and mix to form smooth dough.
STEP 3
Transfer to a floured board and knead,adding flour is necessary,until the dough is smooth and elastic.Place in a greased bowl and roll the dough around in the bowl to coat thoroughly on all sides,cover with clear film and leave in warm place until it doubles in volume for about one and half hrs.
STEP 4
Knock back ( punch down ) the dough and knead in the Walnuts evenly.
STEP 5
Grease a baking sheet,shape the dough into a round loaf and place on the baking sheet .Press in walnut pieces to decorate the the top.Covel loosely with a damp cloth or clear film and leave to rise in a warm place until it doubles in size .
Step 6
Preheat the oven to 220 degree centigrade,bake for 15 minutes,lower the heat to 190 degree centigarde and bake until the base sounds hollowwhen tapped for about 40 minutes.

Holi ki mubarakbad pakwano ke saath,.......:-)

In North India Holi Celebration starts one month before the festival by preparing Chips,papads,mathri,nimki at home,bulk amount is prepared and distributed to friends and relatives. Gujhia which is the traditional sweet of Holi is prepared two days before the festival and ya fresh ones are prepared to offer to god on the festival day.Recipe of Gujhia i have blogged in my last years post here goes the pictorial
of the Ghujia which me and hubby prepared this year,along with Ghujia Thekua
is must sweet dish prepared in our kitchen on holi day ,Thekua goes well with Red chili pickle or can be eaten alone too .To prepare Thekua mix half kg whloe wheat flour and 250gm all purpose flour ,sugar 250 gm or as per taste,half tsp baking powder ,finely chopped almond,raisin,cashewnut,grounded green cardamom.In another vessel boil 2 ltr milk and let it thicken ,once done cool the thickened milk and mix it to the flour mixture .Keep the milk and flour mixture for two hrs before preparing thekua,after two hours heat oil in non stick wok and once the oil is hot ,prepare thekua by the same way wada is prepared i mean same wet hand technique,have blogged the recipe for wada here,slide the thekua once oil is hot into the oil and lower the flame ,keep turning the thekua till it becomes brown from both side,drain on kitchen towel and serve with red chili pickle.
Priti of Indian Khana asked me recipe of Bharwa Lal Mirch ka Aachar ingredient needed for Red chili pickle 2kg red chili ,50 gm cumin seeds,50gm onion seeds,50 gm ajwain ,50gm fennel ,2 tsp fenugreek seeds,250 gm yellow mustard seeds ,250 gm dry mango,salt as per taste,turmeric powder two tsp,100gm coriander seeds,asafoetida a pinch,mustard oil 200gm.Procedure-Wash and dry Red Chili in sun for three days ,dry roast cumin,ajwain,fennel,onion seeds,fenugreek ,coriander seeds,to the dry roasted ingredient add grounded mustard powder and dry mango powder ,in another vessel mix this masala mixture with asafoetida,turmeric powder and salt .Slit the red chillies with help of scissors,scoop out the seeds and mix in the prepared masala,followed by mustard oil,with help of clean sterile stick push in the masala mixture into the red chillies ,to preserve the pickle in clean and sterile jar dip each pickled chilli in mustard oil and place in the jar ,whatever oil is left fill in the jar,shake well.Bharwa Lal Mirch ka Achar is ready to use.
Holi Special Snacks Platter which has Ghujia,Thekua,Mathri already blogged ,Nimki and Red Chili Pickle .
To prepare Nimki knead dough same way as done for mathri,roll out with help of rolling pin,cut in one direction and then cut in opposite direction resulting in diagonal shaped NIMKI,shallow fry and serve hot with tea or coffee.

Our holi dinner was of Urad Kachodi,Malpua,kathal sabji,Dahi wada,colurful salad in red wine vinegar dressing ya we washed it all down with another Holi delicacy Thandai :-)

For Raw Jackfruit Curry ingredient needed -raw jackfruit chopped one kg,onion paste of three onions,onion chopped lenghtwise three,garlic cloves 12 chopped,ginger one inch chopped,potato cubed three,green cardamom,four,black cardamom three,cloves six,bay leaves crushed two,salt as per taste,oil to cook,mixture of one tsp each of coriander,turmeric and red chilli powder ,mix and keep aside and one tsp garam masala powder.
Procedure- Heat half tsp oil in non stick wok ,once oil is hot add crushed bay leaves ,followed by onions and fry potatoes and jackfruit,once half done remove from falme and keep aside.In the same wok heat half tsp more oil and once the oil is hot ,lower the flame and add green cardamom,black cardamom,clove and onc ethey start spluttering add onion ,ginger-garlic paste and keep frying till paste starts changing colour,once half done add the masla mixture followed by salt and fry further till oil is seed along the sides,now add already fried jackfruit and potato mixture ,fry for a minute or two and transfer to pressure cooker ,add require amount ofwater and and pressure cook for two whistles.Serve hot with rice or Kachodis.

- mix chopped carrot,cabbage,low fat cottage cheese ,fresh parsley leaf ,lettuce leaf together ,add the vinegar and toss well,
I prepared thandai from Haldirams thandai mixture just add two tbsp of thandai mixture in chilled milk and serve garnished with chopped almonds.Another look at the DINNER Platter :-)

Petit pains au lait and winner of the giveaway ,....
I tried Petit pains au lait better known as Classic French Round Milk Rolls from my Baking book,as i am new into baking ,remeber my first cake :-),i was quiet skeptical about the outcome,still i didnt give up,i followed the instructions properly given in the book,without looking for tips on the net :-(,..anyways today before publishing i thought of doing search on net and saw so many links which could have helped me,..ya guys i am feeling sorry for myself,

ingredient for Petit Pains Au Lait
Four cup all purpose flour
salt half tsp
sugar one tablespoon
half cup butter softened
half ounce fresh yeast
one cup warm milk

procedure
Dissolve yeast in four tbs of milk and keep aside.
Sift the flour and salt together in a large bowl,stir in sugar followed by softened butter in the flour.
Mix the yeast mixture followed by the rest of the milk and knead to soft dough,till it is smooth and elastic.
Keep in a lightly oiled bowl and cover with lightly oiled plastic wrap and keep in warm place for an hr or more till the dough rises to its double
after an hour divide the dough into 12 equal parts ,shape into ball shape and keep on greased baking sheet
Using a sharp knife cut a cross on top of each roll,cover with lightly oiled plasti wrap and let it rise in warm place for 20 mins till it doubles in size
Preheat theoven to 400 degree fahrenheit ,brush the rolls with milk and bake for 20 -25 mins till golden
transfer to rack,cool and serve with tea or cofee,

after an hour divide the dough into 12 equal parts ,shape into ball shape and keep on greased baking sheet
Using a sharp knife cut a cross on top of each roll,cover with lightly oiled plasti wrap and let it rise in warm place for 20 mins till it doubles in size
Preheat theoven to 400 degree fahrenheit ,brush the rolls with milk and bake for 20 -25 mins till golden
transfer to rack,cool and serve with tea or cofee,
I dont know how successful i was in Baking but taste wise these milk rolls were good ,soft and sweet from inside :-)
