Sita Ram Diwan Chands Chola Curry from Pamelas space

Tried Chana recipe of Sita Ram Diwan Chand from Pamelas space ,followed the same recipe,didnt add fried potatoes ,
enjoyed chola with plain roti,dahi and ,sweet mango pickle
do hop in at eat and dust for recipe of chana bhatura with pickled carrot,..;-)
Thanks a lotz Pamela for sharing such yummy recipes,...:-)
Did some changes to this curry to suit my taste,this curry is my second entry for blog bites adaptation 3 hosted by Nupur of One Hot Stove
this is my second entry for the event celebrating delhi cuisine/delhi ka khana

Refreshing post for Summers

 As Srivalli is on with Thanda Mela , i thought of sharing these two refreshing drinks
 First platter has balloon cake,egg omelet,herbed bread and mango shake
 For Mango shake - just blend chopped mango pieces with milk and sugar. 
 Second platter has sattu , pudina aam chutney, red chili pickle and matha. 
Thats all frens,enjoy the summers,cee u all soon,..:-)

Malaidar chicken curry aam chutney ke sath with Coconut icecream with mango sauce

In my last post I had mentioned about something special which I had prepared  for my cousins who had come to visit us,..as they are very fond of chicken I thought of preparing chicken curry for them.Thought of going through tried and tasted recipes in my blog,but then thought of experimenting with the ingredients around,I had cream in fridge so thought of experimenting with cream and chicken
Chicken Malaidar
Ingredient needed
Chicken one kg
 Onion four chopped
Tomato two copped
Green chili one chopped
Ginger garlic paste one tbsp
Cumin seeds one tsp
Green cardamom crushed two
Salt as per taste
Oil to cook
Cream half cup
Garam masala powder one tsp
Mixture of half tsp each of red chili ,coriander and turmeric powder.
Preparation
In a clean bowl mix chicken with cream,Ginger garlic paste , mixture of masalas and crushed cardamom.
Keep aside,
Procedure
Step 1
In a non stick wok heat one tbsp of oil
Once the oil is hot add cumin seeds
Followed by chopped onion and green chili
Keep frying till onions are semi brown .
Step 2
Now add chopped tomatoes and salt
Mix well on low flame ad scrape ff from the sides.
Once oil is seen along the sides
Step 3
Add marinated chicken to the wok
And mix well with the tomato onion mixture.
Keep stirring cover and cook on low flame for few minutes.
Step 4
Remove from flame and serve hot with chapatti or rice
Add few drops of cream before serving.
Served with chapati,aam chutney and sirke wala pyaz.
For Keri ni Chutney(from my parsi cookbook)
Ingredient needed
Raw mango peeled and chopped one
Green chili one deseeded
Chopped ginger one tbsp
Chopped garlic one tbsp
Grated coconut two tbsp
Coriander leaves half cup
Salt as per taste
Procedure
Grind all the ingredients till soft.
Serve with dal chawal or sabji roti.
For dessert I had prepared Coconut icecream with mango sauce from my icecream book
Here goes the recipe of it
Ingredient needed
150gm grated coconut or coconut milk
cornflour one tbsp
egg yolk four
milk 600ml
caster sugar 115gm
cream 300ml
almond essence one tsp
Ingredient needed for the sauce
Ripe mango one
Sugar 2tbsp(I didnt add)
Lemon juice one tbsp
Orange juice 4 tbsp
Procedure
Step 1
Beat the egg yolk,sugar cornflour,almond essence,and one tbsp of milk.
Step 2
Prepare coconut milk of the grated coconut by running it in blender with 300 ml milk
Step 3
Pour the fresh coconut milk into heavy saucepan and stir in the rest of the milk.Bring the milk almost to a boil.
Step 4
Pour the milk over the egg yolks whisking constantly.Return the mixture to the pan and cook very gently ,stirring until thickened.
Step 5
Pour the custard into a bowl and cover it with greaseproof paper and leave to cool.
Step 6
Transfer into a freezer container and freeze for 3-4 hours,beating twice as it thickens.
For the sauce
Remove the stone from the mango  and put it in the food processor
Add the sugar,lemon juice and orange juice and process until smooth.
Pour it into a small jug and chill.
Serving suggestion
To serve,scoop the prepared ice cream into serving dish.
Add mango sauce and serve immediately.

Moong dal chilla aam ke achar ke sath

These days as the heat is really on in Delhi ,most of the days i am skipping lunch and surviving on heavy breakfast some snack in between or juice followed by again dinner in the night cant help it weather is like that just don't feel like eating or cooking elaborate meal,..but since June is marriage time  and there are frequent relatives and friends coming down every second day there is always excuse there to prepare a spread,..:-) and ya i did prepare something nice for my cousins which i will be posting soon,..:-)
Coming back to today's post i will be sharing pic of breakfast platter
prepared by Pallavi on Sunday morning,she was asking me  from a long time how to prepare Hari moong chila but i didn't had any clue of the recipe...finally she searched on net and prepared it from Ashwinis blog Food for Thought.
She prepared it the same way,she didn't add green peas and to make the batter workable she added one tsp of gram flour to the batter mix.Tired after coming back from Singapore this was a perfect treat fro me,..as there in Singapore i was really craving for simple home cooked food,..
She served chilla with aam achar,tamarind chutney,mixed fruit juice and mango slice.This plate was heaven for me specially after consuming junk food and all for a continuous week .
Mil prepared aam pickle and sent full jar of it from Agra
Recipe of Mango pickle as told by mil
ingredient needed
salt as per taste
red chili powder one tsp
asafoetida half tsp
green mango peeled and stone removed 150gm
procedure
make thin slice of the mango
mix everything together and keep in oven vessel
cover it with wheat flour strainer also known as chalni
keep the pickle in sun for 8 to 10 days
keep mixing everyday.
Pickle will be ready once the mangoes become tender.
This pickle goes well with dal chawal and khichdi.
Just two weeks left for the wedding ,neha my younger sis will be coming this weekend so soon all three of us will be together,...umm days can be counted now ,..i am excited but sad too,...gonna miss Pallavi lotz,...:-( anyways that's what life is,...oops sorry,,,i got carried away,.:-)

AAM PANNA REMINDS ME OF BIG EARTHEN POTS ON MOVABE STALLS ,COVERED WITH DAMP RED CLOTH AND DECORATED WITH GREEN CHILLIES,MANGO AND PUDINA LEAVES,..THE SIGHT OF AAM PANNA STALL IS COMMON IN NORTH INDIA,,,DUE TO HOT SUMMER AND HEAT WAVES..TANGY AAM PANNA ,,,QUENCHES THIRST,..AND COOLS DOWN THUS HELPING IN BEATING THE HEAT..THANKS NUPUR FOR THE RECIPE,PREPARED FOR THE FIRTS TIME .
AND MY LAST ENTRY BUT REAL YUMMY IS
SALAD DIP FROM LAKSHMI FROM TASTE OF MYSORE
ACCORDING TO LAKSHMI ,,ON THE STREETS OF MYSORE.,FRESHLY CUT CUCUMBERS ARE SOLD WITH MANGO CHUTNEY,..WOW THAT SURE WILL TASTE GREAT,..I PREPARED SANDWHICH WITH THE MANGO DIP,..AND LIKED IT with MY LUnCH TOO AS U CAN SEE IN THE PIC..THANKS LAKSHMI FOR THE CHUTNEY RECIPE,.PREPARED FOR THE FIRST TIME,..THE ONLY CHANGE I DID WAS THAT I ADDED MORE OF HOT OF CHILLIES

Lazy sunday with bengali meal

today prepared bengali dishes for lunch ,everything tasted good,.and yummy,..infact i was licking my fingers,..as i had prepared everything for the first time,..really enjoyed cooking,..ya it was tiring..but after eating i forgot everything,..felt so relaxed after eating,.that i didnt realize when i slept off while doing the strip for the comic event...:-)..

had prepared green mango curry yesterday which went well with the other dishes

ingredients

three medium green mangoes(peeled and cut into wedges)
2.5cm piece fresh ginger(peeled and chopped)
two green chilli chopped
one tsp mustard oil
one tsp panch phoran
two dried red chillies
one tsp turmeric
one tsp coriander powder
half tsp ground cumin
one tsp granulated sugar
salt to taste

procedure

grind the ginger and green chilli to taste,keep aside

heat oil in wok,add panch phoran and dried chilli,and allow to crackle

now add ginger and green chilli paste,followed by turmeric,cumin and coriander

keep frying,add water if it starts sticking

now add sugar,mango and fry for another five minutes

now add water nad bring to boil

cover and cook...for 10 minutes

advay playing with veggies while i was cooking

ripe tomato and green mango chutney

i still remember the mango chutney my dadi used to prepare during summer holidays,have to still prepare this mango chutney ,,have to ask my mother for the recipe,..this chutney which i prepared yesterday tasted really good with other dishes...

ingredients

one tomato chopped
half of green mango peeled and chopped
10 to 12 raisins
one cm ginger chopped
20gm jaggery
one tbsp sugar
half tsp red chilli
half tsp turmeric
salt to taste
one tsp mustard oil
one tsp panch phoran
red chilli two dried one

procedure

put one cup water in saucepan and add the tomato,mango,raisin,ginger,jaggery,sugar ,redchilli and turmeric

bring to boil and simmer for 30 minutes

mix salt

consistency should be thick,
remove from heat
now heat mustard oil in another vessel
add panch phoran and dried red chilli

when they start crackling pour the tomato mixture in this vessel
mix well

enjoy with parantha of your choice ,..this chutney tasted really good,..

potato with poppy seeds

prepared this finally ,.this dish is one of the regular one at my younger sis place in london...her flatmate and friend is bengali,..i always used to think how this recipe will taste,..today tried and it came out real well ,specially with misti pulao,,the combo rocked,..

ingredients

poppy seeds one tbsp soak for aN hour ,..and make paste
salt to taste
one inch of ginger,peeled and chopped
green chilli chopped
two potato peeled and hopped into wedges
mustard oil to cook
onion chopped one
pinch of sugar

procedure

make paste of ginger and green chilli and keep aside
heat oil and fry the potato wedges,keep aside

remove excess oil,in the same wok add sugar and sliced onion followed by ginger and green chilli paste

now add poppy paste
keep stirring
now add potato wedges,.followed by salt

keep frying for 10minutes
enjoy with puri of your choice

the last one is misti pulao

ingredients

rice two cups soak for half an hour
soaked dryfruits like cashewnut and raisins
half of cauliflower broken into small pieces
one tsp sugar
cloves 5
green cardamom 4
cinnamon stick two inch broken into pieces
one small piece of mace

for the crispy fried onions

salt
chopped onion one
oil for frying

procedure for crispy fried onion

sprinkle half tsp of salt on the chopped onion

after five minutes drain the water
heat oil in wok,fry the onion

spread on kitchen towel and dry the oil

for the rice

heat oil
add whole spices,followed by sugar,..
after a minute add soaked dryfruits and cauliflower

when the nuts start changing colour add soaked rice,,fry for few minute,add salt
add water cover and cook
delicious rice is ready...:-)

mother-honey..i have prepared begun shorshe and parantha for todays tiffin,..i know u love begun thats why i have prepared,..:-)


daughter thinks-hmm,,even i know why u have prepared...i have seen the list of events and menu list u have prepared and stuck on fridge,..thank god i can plan ahead

daughter meets her friend during lunch
