Hubby never gets chance to cook these days,but yesterday he had to because i am down with flu and cold.He prepared this simple Chickpea curry which we had with plain rice.As i had already boiled the soaked chickpeas he stir fried them with onion and tomato and dash of spices.Intead of tomato paste he added tomato this time ,and just one onion.

Butter Chicken with Missi Roti and Spinach Salad
I had this last when my sis prepared
two year back had prepared this way
with time recipe has evolved too
prepared this again in a very simple way
paired the curry with missi roti and salad
Recipe name Butter Chicken /Murgh Makhni
Recipe source kitchen experiment
Preparation 3 to 4 hrs
Cooking time one hr
Ingredient
Boneless chicken 300gm
paste of one onion
paste of one tomato
ginger garlic and green chili paste one tbsp
kasori methi one tsp
salt as per taste
oil to cook one tbsp
ghee one stp
red chili powder half tsp
turmeric powder pinch
red food colour pinch
curd three tbsp
to dry roast
cumin seeds half tsp
coriander seed half tsp
black cardamom two
black pepper four
clove three
cinnamon stick one inch
kabab chini three
Preparation
powder the dry roasted whole seeds,keep aside
in a bowl mix chicken pieces with ginger garlic and green chili paste
followed by powdered whole seeds,curd and red colour
cover and keep in fridge for three to four hours
Procedure
heat ghee in non stick wok
add cumin seeds and let it splutter
add onion paste and keep frying till it starts turning brown
add oil ,followed by tomato paste and salt and keep stirring
till the mixture becomes mushy and oil is seen along the sides
add marinated chicken pieces and keep stiiring for two minutes
add kasori methi ,mix and cover and cook on low flame
if needed add half cup of water
when done add one tbsp of cream ,let it simmer for two to three mins
serve warm with missi roti and salad .
missi roti
ingredient needed
one cup gram flour
one cup whole wheat flour
two tbsp oil or ghee
one tbsp kasoori methi
pinch of asafoetida
pinch of turmeric powder
half tsp cumin seeds,salt and red chili powder
Preparation
mix all the ingredients
add enough water to make a dough of rolling consistency
cover and keep aside for half an hour
Procedure
make equal sized balls
roll each ball into chapati ,but thicker than usual chapati
cook on a hot tava from both sides
For the salad
Spinach with Blue Cheese
Ingredient
blue cheese one cube
spinach leaves half cup
purple cabbage one fourth cup
salt as per taste
pinch of pepper
Procedure
mix blue cheese,spinach leaves and purple cabbage add dash of salt and pepper.

Of the train journeys and Pori with Aloo Bhaji,...;-)
Its been so long since i had this,
this meal reminds me of
the train journeys when some 10 to 15
of us would travel together
when as soon as we were setteled
paper would be passed to us
which would have poori sabzi
and occasionaly chutney.
talking,chatting we would devour our meal
relishing each bite till we finish,..:-)

Platter with Chili chicken with veg fried rice and spinach salad
Since the day i have seen Chili Paneer recipe on Edible Garden
It was on my mind,tempting me to prepare
and thus i tried but with chicken
and paired with simple fried rice and spinach salad.
For the fried rice
Ingredient
cooked rice one and a half cup
onion half chopped
green chili one
carrot half sliced
one fourth of purple cabbage chopped
oil one tsp
salt as per taste
pepper pinch
Procedure
Heat oil in non stick wok
add green chili once it starts spluttering
lower the flame and add onions
once onions start turning brown
add carrot followed by cabbage
keep stirring add salt,pepper
afer three minutes add cooked rice
mix everything together and remove from flame
For Spinach and Cottage cheese salad
Ingredeint
baby spinach leaves handful
cottage chesse half cup
salt as per taste
pepper pinch
onion half chopped
olive oil half tsp
peanuts one tsp
Procedure
In a mixing bowl mix everything together
keep in fridge till serving

Winter memories and Matar Paneer Curry,....
Winters remind me of Posta Halwa prepared by my mom
Spicy Chicken Curry prepared at our home every weekend
Warm Bowl of Gazar Halwa slowly cooked on Angeethi
and fresh green pea straight from our farm
Because there was a time when green pea was available only during winter,i remember Dadi used to stock green peas and tomatoes ,those were the days.Sharing with you all simple and flavourful curry ,my all time favourite :)
Recipe name Matar Paneer
Recipe source kitchen experiment
Preparation time one hour
Cooking time 30 mins
Ingredient
One cup cottage cheese
paste of two onion ,two garlic and one green chili
pearl onion five
paste of one tomato
green pea one tbsp
salt as per taste
oil to cook
red chili powder half tsp
turmeric powder pinch
cumin seeds half tsp
coriander seed one fourth tsp
black pepper four
clove three
kabab chini four
Preparation
Shallow fry cottage cheese and keep aside
shallow fry pearl onion and keep aside
Procedure
Heat oil in non stick wok,once hot lower the flame
add the whole seeds which are underlined above
let them splutter ,add onion ,garlic and green chili paste
keep stirring till onions start changing their colour
add tomato paste ,red chili and turmeric powder
followed by salt.
keep stirring till oil is seen along the sides.
add pearl onion and let it simmer for few minutes
add requiered amount of water for the gravy
once the gravy thickens add pea and cottage cheese
let it simmer for five minutes
serve warm garnished with coriander leaves.

Inspired from Skype and Cooked at Home - Gazar Ka Halwa
Me - " Should i fry the grated carrots first in ghee ?
Hubby - "for what ? "
Me - " i am going to prepare Gazar Halwa."
Hubby - " Halwa,..? No no leave it , i will prepare . "
Me - " ummm okay,.."
Once milk starts boiling and the grated carrots are in the kadhai,
Hubby-" From where did you get the idea to prepare Halwa , who prepared at home ? "( he knows me so well . and he is so correct ,when it comes to sweet dishes he knows i dont have any interest unless ,.. .)
Me- ( blushing ) " today while talking to Neha on skype she told me that she got khoa and fresh carrots from nearby farm and she prepared halwa,..so you see and thus i got carrots and ,.."
This was the conversation we had in kitchen few days back,and i was really awed when hubby asked me this question how come Halwa suddenly,.i mean he knows me so well ,..:-)
coming back to the recipe Last year I had shared bowl of Gazar Halwa which Neha my sister had prepared ,so i had the same recipe in my mind,thus i asked the question of frying the carrots as per her recipe , but hubbys preparation is slightly different
Recipe Name Carrot Halwa
Recipe source Hubby
Preparaton time 10 mins
Procedure two hours
Ingredient
Carrots four ( peeled and grated )
milk one litre
sugar as per taste
ghee three tbsp ( can be altered)
dryfruits chopped almond ,cashew and raisin
Procedure
In a vessel keep milk for boiling on low flame
add grated carrots and keep stirring
cover and leave on low flame
keep checking and stirring in between
so that carrot doesnt stick to the bottom
add sugar and give a good stir
(this gonna take an hour or so)
once the milk is absorbed completely
add ghee and fry the carrots
keep stirring for five to 10 mins
dry fruits can be added while frying
or halwa can be served topped with dry fruits.

Platter with Baked and Fried Nimki
Its been too long since i baked anything
i know i am not perfect in baking
but sometimes i try to do things on my own
which results in something like this

is baked Nimki,..;-)
How i did
Followed the same procedure for Nimki ,
preheated oven to 100 degree centigrade
baked the cut out nimki for four minutes.

Thali with Stir fried Cauliflower with Poatatoes and Tadka Dal
I have never prepared cauliflower without onions,so one noon when i didnt had onions I asked my sister for recipe,she told me this simple stir fried recipe of Cauliflower with Potato
Recipe Name Stir fried Cauliflower with potato
Recipe source Neha ( my sis )
Preparation time 15 mins
Cooking time20 mins
Ingredient
Cauliflower florets chopped and kept in hot water for 10mins one cup
Potato peeled and chopped one
green chili two
cumin seeds half tsp
asafoetida pinch
salt as per taste
turmeric powder pinch
red chili powder pinch
kasoori methi one tsp
oil to cook
Procedure
Heat oil in non stick wok
add cumin seeds,followed by asafoetida seeds
let it splutter add green chili and lower the flame
add chopped potatoes,salt ,red chili and turmeric powder
fry for five minutes and add cauliflower and kasoori methi
cover and cook on low flame
add two tbsp of water and let it simmer till its done.
serve warm .
For Tadka Dal
Ingredient needed
Cooked toor dal
cumin seeds half tsp
garlic clove chopped two
green chili one chopped
ghee half tsp
Procedure
Heat ghee in a wok
add cumin seeds and asafoetida
let it splutter and lower the flame
add chopped garlic and green chili
fry for a minute
add the temperring to the cooked dal.
serve warm.

Thali with fried spinach with potato and tomato dal,.
Since the day i have started cooking , i have tried almost all the veggies prepared at my home,trying to replicate the same aroma which comes when my mother cooks, spinach is something with which i havent experimented much ,way back in 2008 when i had started this space i tried Palak Paneer from a cook book which i have shared here , since then nothing new in my blog with spinach,but now since Advay has started eating vegetables , i try to introduce more of yellow and green vegetable to him whenever i can, December i experimented with spinach and chicken to prepare this curry , and recreated Aloo Palak Paratha from Shvetas Cooking Blog .Last week when i saw spinach leaves in my fridge , i thought of preparing potato spinach sabzi the same way my mother prepares , paired the sabzi with chapathi,curd rice,tamatar dal and pickle.
Recipe name - Potato Spinach Sabzi
Recipe source - my mother
Prearation time 10 mins
Cooking time 20 mins
Ingredient
Spinach leaves one cup chopped
potato one chopped
salt as per taste
oil to cook one tbsp
garlic cloves two chopped
fenugreek seeds half tsp
asafoetida pinch
dried red chili two crushed
half cup of water
turmeric powder pinch
Procedure
Heat oil in non stick wok ,once oil is hot lower the flame
add garlic, fenugreek seeds,dried red chili and asafoetida
stir for a minute and add chopped potatoes
fry for two minutes and add salt and turmeric powder
once potatoes are start changing their texture
add spinach ,mix everything together
and cover and cook on low flame.
after two minutes add water and let it simmer .
serve warm.
Tamatar Dal/Tomato dal
Ingredient
Cooked Toor dal
for tempering
chopped tomato one
cumin seeds half tsp
garam masala powder half tsp
ghee one tsp
Procedure
heat ghee in non stick wok
once hot lower the flame
add cumin seeds followed by tomatoes
keep stirring and add garam masala powder
once the tomatoes turn mushy
add the tempering to the cooked dal.

Srilankan Egg Curry from Rajes Culinary Adventure

I truly enjoyed hosting the event Its time to Jingle Again 2010 and it wouldnt have been possible without your support friends, thanks a ton friends for sending such yummy entries for the event,we have everything here cookies,christmas cake,eggless cakes too,scones,gingerbread house,and so many other things,sit back and enjoy the round up with a mug of warm coffee,..:-)

New Year Eve Special - Mughlai Biryani with Boondi Raita
I spent new year eve cooking,wanted to prepare something special for the evening meal, something rich and exotic so played with the ingredients available in my pantry to create this meal
Recipe Name Mughlai Biryani with Boondi Raita
Recipe source Kitchen experiment
Preparation time 1hr
Cooking time 2 hr
Ingredient for Chicken
Chicken breast four
almond eight
pistachio eight
salt as per taste
green chili two
ginger half inch
garlic clove two
green cardamom crushed two
coriander powder one tsp
red chili powder half tsp
chicken masala one tsp
cream two tbsp
onion one chopped
Ingredient for rice
rice two cup
ghee one tsp
star anise two
black cardamom two
cumin seed half tsp
cinnamon stick half inch crushed
coriander seeds one fourth tsp
black pepper four
clove three
pinch of saffron strands dissolved in one tsp of milk
salt ( i forgot to add )
Paste 1
Soak almond and Pistachio in warm water for 10 mins
make paste and keep aside
Paste 2
Make coarse paste of ginger,garlic and green chili keep aside.
Preparation
- In a mixing bowl mix chicken breast pieces with paste 1 and 2,followed by cream,coriander powder,red chili powder,salt and chicken masala,cover and keep aside.
- Soak rice and keep aside
- fry half of the onions and keep aside
Prcocedure for rice
In a non stick wok heat ghee
lower the flame and add cumin,coriander,black pepper,clove,cinnamon,cardamom and star anise
followed by soaked rice
fry for a minute and add four cups of water and salt as per taste
keep stirring when water starts boiling ,lower the flame and add saffron strands.
once the rice is done ,remove from flame and keep aside.
Procedure for chicken
heat oil in non stick wok
add green cardamom followed by half of the chopped onion
keep stirring till the onions are done
add marinated chicken pieces ,keep stirring for five minutes
cover and cook till the chicken is done.
Boondi Raita
In a bowl beat curd,mix boondi and keep in fridge
before serving add pinch of salt and red chili powder.
To serve
In a serving dish arrange layer of rice,followed by chicken pieces and fried onion
repeat the same layer and serve with boondi raita.
