Kala Chana Ghughni

During our childhood days kala chana ghughni with poori was one of the frequently prepared breakfast specially on sundays,..prepared the same last sunday paired with plain paratha,here goes the recipe as told by my mother

Recipe Name Kala chana Ghughni /Ghugni
Recipe source my mother
Ingredient
black chickpea half cup (soaked overnight )
onion one chopped coarsely
ginger half inch chopped coarsely
green chili one chopped
salt as per taste
mustard oil two tsp
red chili poweder pinch
turmeric powder one fourth tsp
coriander powder one fourth tsp
cumin seeds half tsp
asafoetida pinch
Procedure
Heat oil in pressure cooker
lower the flame and add cumin seeds and asafoetida
followed by chopped onion,ginger and green chili
keep stirring till onion start changing its colour
add salt,powdered masalas underlined above
followed by drained chickepeas
mix everything together add one cup of water
and pressure cook for one to two whistles
serve garnished with coriander leaves and lemon juice.

Chana Masala - spiced chickpeas

Hubby never gets chance to cook these days,but yesterday he had to because i am down with flu and cold.He prepared this simple Chickpea curry which we had with plain rice.As i had already boiled the soaked chickpeas he stir fried them with onion and tomato and dash of spices.Intead of tomato paste he added tomato this time ,and just one onion.

Sita Ram Diwan Chands Chola Curry from Pamelas space

Tried Chana recipe of Sita Ram Diwan Chand from Pamelas space ,followed the same recipe,didnt add fried potatoes ,
enjoyed chola with plain roti,dahi and ,sweet mango pickle
do hop in at eat and dust for recipe of chana bhatura with pickled carrot,..;-)

One Pot Meal Spiced veggies with couscous

I got introduced to Couscous through food blogs,so reluctantly i picked the box of couscous  during my last grocery shopping,saw the recipe of spiced vegetable couscous in one of the cookbooks,so thought of giving this a try
Recipe Name - Vegetable Couscous
Recipe Source - Cookbook
Cuisine moroccan
Preparation time 15 mins
Cooking time 30 mins
Ingredient for Vegetable Couscous
400gm chickpeas(boiled and drained)
green pepper one sliced
carrot one sliced
cauliflower 200gm
onion chopped one
tomato chopped one
garlic cloves crushed two
salt as per taste
pepper half tsp
turmeric half tsp
one tsp each of coriander and cumin 
oil two tbsp
For the couscous
salt half tsp
one cup couscous
butter one tbsp
Procedure for veggies
heat oil in non stick wok
fry onion and garlic till soft
followed by turmeric,coriander and cumin
keep stirring for few minutes
now add the chopped veggies fry for a minute
add enough water to cover the veggies halfway
bring to boil,lower the heat and let it simmer for few minutes
once the veggies re half done add chickpeas and cook for further 10 mins
season with salt and pepper.
Procedure for couscous
to cook the couscous boil water in saucepan
add salt and half tsp of oil
remove from the heat and mix couscous
keep stirring
allow to swell for 2 minutes,add butter and heat through gently
stirring to separate the grains
For serving
Serve cooked veggies on couscous garnuished with coriander leaves.

Dinner meal of Chola Bhatura from Pamelas Space


While going through recipes on internet i saw this recipe of Bhatura on Pamelas Blog,i liked the recipe of Chana too at her space,so prepared the combo yesterday from her space,original recipe is of Anita Dhanda who runs a cookery class in American Embassy Delhi.Thanks a ton Pamela for sharing this recipe,both me and Neha enjoyed the meal and ya Advay luved the bhaturas too.

These days i enjoy eating soaked beaten rice with milk for breakfast,and that too without sugar,sometime i add gud or dried dryfruits like cranberry,hazelnut,almond,this simple breakfast of Chuda ya thats what we call beaten rice and milk gives me good start for the cold day ahead.Every year weather used to change after 15th of Jan.ie Makar Sankranti but this year its not the same weather has gone worse and i guess we gonna face more cold days ahead,...:-(thats all folks,tk cre cee u all soon,...:-)

Bachpan ki yad Ghugni ke sath




Kala chana ghughni with poori or parantha reminds me of the frequent Sunday brunch during our childhood days . Easy to prepare and good to taste this simple dish of black chickpeas tastes good with poori ,and the side dish are curd and pickle.I still remember how eagerly we used to wait for this particular breakfast. When on nehas demand mother prepared this I had to ask her  the recipe for two simple reasons reason one being I needed the recipe and the second reason I wanted to  share the  recipe with you guys,…so here goes the recipe of GHUGHNI up style,..:-) prepared in pressure cooker.



Ingredient needed
Soaked black chick pea one cup approx. 250gm
Onion three chopped
Garlic cloves chopped three
One tsp ginger
Green chili three
Cumin seeds one tsp
Asafetida pinch
Mustard oil one tbsp
Salt as per taste
Red chili powder a pinch
Turmeric powder half tsp
Coriander powder half tsp
Garam masala powder half tsp
Procedure
Heat oil in the pressure cook .
Once hot add cumin seeds and asafetida and let them splutter for a minute
Add all the ingredients together stir fry for a minute or two till everything mixes well.
Once done add one cup of water and pressure cook till 2 to 3 whistles.
Check for tenderness and serve hot with Poori or Parantha.

thoda thoda khatta thoda thoda teekha chola kulche ke sath or babycorn salad hai saath


Its been a very long time since i prepared chickpea in my kitchen so today when i got the opportunity again to experiment in kitchen thanks to Advays afternoon nap,i thought of preparing chickpea curry,salad and ginger rice  ,though i have tried sindhi style and punjabi style and have my own chola recipe i wanted to try something different this time,,something which is spicy and tangy too,..i could imagine the taste while i was thinking what to add and what not,..sounds strange na,..i know but thats how i cook whenever i am experimenting,..:-)most of the time i start the tadka with cumin seeds but this time i thought of going ahead without them,and ya for the first time i used chola masala so the ingredient needed for
khatta and teekha chola curry-
boiled chickpea two cup
onion three chopped
garlic six cloves chopped
ginger one inch chopped
salt to taste
red chili powder one tsp
catch chola masala three tsp
cloves half tsp
black pepper half tsp
dried red chili three
bay leave two crushed
black cardamom two
tamarind pulp two tbsp
procedure
heat one tbsp oil in non stick wok
once oil is hot lower the flame and add clove,black pepper,red chili,crushed bay leaves and black cardamom,
once they start spluttering add chopped ginger,garlic followed by onion
keep frying till onions start changing their colour,once done add catch chole masala and red chili powder
fry further till oil is seen along the sides,now add tamarind pulp and fry further for a minute,.
add boiled chickpea and mix well with the masala
once done add one cup of water and cover and cook
remove from flame and serve hot s with kulcha or pulao
i served with ready made kulcha and ginger rice and salad
Ginger rice-
for ginger rice heat one tsp oil in non stick wok,add half tsp of cumin seeds once they start spluttering add one tbsp of grated ginger,once ginger starts changing colour add cooked rice and fry to mix well ,once done add orange colour and mix properly to attain uniformity.
for Salad
steam chopped mushroom and babycorn in microwave for two minutes,once done drain and keep aside,mix salt,pepper,chopped lemon leaves and chopped tomato ,toss well and serve chilled,guys thanks to my memory loss i have really forgotten what these herbs are known as they have lemon like flavour,when i bought them yesterday i saw the name but as soon as i reached the home i was blank,..:-(do let me know if u guys know the other name of these leaves...
Hubby is big fan of chola curry and i knew he was missing chola since  long time because at one particular time before our marriage chola curry with rice    was his regular meal so tangy and spicy chola curry is dedicated to him , chola curry  off to Alka of sindhi rasoi where she is on with Just for you event.
  Lakshmi is on with SWC salad where she is asking everyone to prepare quick and healthy salad within 15 minutes so steamed salad is off to her space
Chola bhatura combo is famous pair but chola also goes equally well with rice too,..so i am sending  Khatta and teekha chola curry with ginger rice combo to made for each other event hosted by Asvadha.

Republic Day Special salad,..:-) and virtual treat of past posts in Yellow,..enjoy,..

These days morning is very busy after preparing morning 6am tea which i share with my sis,,.my next agenda is to pack tiffin for both of us,..most of the time its Salad and we keep trying different dressing or it becomes too monotonous,..;-) Tody i will share recipe of Mix Veg Salad in Red Wine dressing

to prepare the Mix veg Salad i have used chooped cabbage,carrot,capsicum,and other leftover ingredients from fridge which included torn pieces of bread,boiled egg white,cottage cheese,
mix all the veggies together with egg,bread pieces and cottge cheese,half tsp each of salt,pepper,sprinkle few drops of red wine vinegar ,add dash of oregano..:-),chopping veggies is the only time it takes to prepare this Salad,..;-) as all the three colours orange,white and green are there and Republic day is round i hve named this Salad Republic Day special-tricoloured Salad

Prepared Vangi bhath from Vanis blog  recipe here,..paired it with onion raitha,allo fry,bharwa mircha and chana fry

for alloo fry just heat one tsp of oil in non stick wok ,add cumin seeds once they start spluttering add chooped potatoes,salt ,turmeric powder and pinch of red chilli powder,..keep fryin potatoes till done,..serve hot with rice...
for kala chana or desi chana fry-heat half tsp oil in non stick pan ,add half tsp cumin seeds ,once they start spluttering add chopped onion and green chilli,followed by sprouted black gram,add dash of black pepper and salt,keep stirring,..serve hot...

INSTANT CHOLA CURRY AND OTHER CURRIES FOR CURRY MELA

Ever heard of instant chola,,no na even i never tried preparing but one fine evening i was not in mood to prepare dinner tired and all so asked hubby to prepare dinner for which he agreed...before our marriage during his bachleor days he used to survive on chola,rajma and chicken curry with rice,..whenever we used to speak on phone before our marraige i always used to ask him what he had for dinner,..and the answer was always..chola chawal,rajma chawal or chicken curry with rice , i had told him already that i dont know even abc of cooking...when i reached Singapore after my marraige kitchen was a big shock for me,..there was just garam masala,meat masala and salt ,..no jeera,methi,sarso,..no turmeric,coriander,red chilli,,nothing next day was spent shopping for small containers for masalas and other kitchen stuff,..once i got all the basic things which are needed for kitchen i saw there was no tava,..how to make roti,,,cause unlike hubby i cant survive on rice ,..i need to eat chapati or any other indian bread,,without which meal is incomplete..finally got tava form little inida..but so heavy that i have to use both my hand to lift it,..and since then my experiments in kitchen started,,as hubby had no idea about sabji preparation i had to take help from my mother...imagine even basics like rice dal,..i didnt knw ,..its been two yrs now,..i always used to crib i cant work here cause my dentist degree is not recognised,,,but now i feel happy that my time is not wasted i learnt so many things,..:-)
Coming back to the recipe hubby decided to prepare chola
we already had heat and eat nan,..before writing this post i asked how he prepared cause hen he cooks i dont go in the kitchen :-)
ingredient for instant chola
chickpea 200gm
salt to taste
onion three chopped
garlic clove ten chopped
tomato paste one tbsp
green chilli 3 chopped
ginger one inch chopped
cumin seed one tsp
garam twotbsp
oil to cook
procedure
slow cook chickpea in water for fifteen minutes
after slow cooking if chickpeas are still hard fast cook further for seven minutes in microave
heat oil in pressure cooker once oil is hot add cumin seeds ,followed by chopped onion,garlic,ginger and green chilli.
once onions start changing colour ,add garam masala and fry further for three minute,add salt followed by cooked chickpeas
fry everything for 5 to 6 minutes so that everything blends,add tomato paste and fry for a minute
finally add water and close the lid and pressure cook for 6 to 7 whistles.
serve hot ganished with coriander leaves.
we had with heat and eat nan...for a change and the curry was delicious try for a change with nan.

SINDHI STYLE CHOLA BHATURA KE SAATH

The term chola bhatura reminds me of spicy chola and fluffy bhatura which my mother prepares at home,..then i heard about PINDI CHOLA,..which was something new for me,..tried for the first time,..liked a lot,..few days back got recipe for sindhi chola while browsing through books in library,..sindhi chola is something which i have never heard of,..so thought of givin it a try,,
ingredients needed are
300gm overnight soaked chickpeas
onion two chopped
one cup onion ginger garlic paste
tomato paste half cup
salt to taste
oil to cook
one tsp each of coriander ,turmeric,garam masala
half tsp of amchur and black pepper powder
pinch of asafoetida
cumin seeds one tsp
black pepper 6
cloves 5
bay leaf two crushed
black cardamom one
procedure
In a cooking wok transfer the soaked chickpeas along with the water,half of chopped onions,cloves,pepper,bay leaf,cardamom,cumin seeds,salt and asafoetida,bring to boil for half an hour,keep stirring,reserve the drained liquid after removing from flame
In another cooking wok,heat one tablespoon of oil,add the leftover chopped onions and keep frying ,till onions start losing their shape,now add onion ginger garlic paste,keep frying till the paste blend s well with the onions
Now add coriander,turmeric,garammasala,amchur and blackpepper powder,.keep stirring..add the tomato paste
followed by salt,..
mix well and keep stirring,now add the cooked chickpeas followed by the water in which they were cooked
serve hot with bhatura or rice

Pindi chole tried it nad liked it,..

this is my last post for rci punjabi hosted by lakshmi ,,,
had heard lotz about pindi chole but cooked today for the first time ,..so now i know the difference between the normal chola and pindi chola,.otherwise i used to think that both are same its just that the names are different
so here goes the recipe of pindi chola ,i followed the recipe of malti jindal from the book a new menu everyday,...had chola with roghni roti which is kashmiri roti,,combi tasted good,..will post roti recipe tomorrow

ingredients

one cup overnight soaked chickpea
tea liqueur one 3 cup
salt to taste

potato one chopped
onion two chopped
ginger one inch chopped
green chilli two chopped
black pepper one teaspoon
roasted cumin powder one teaspoon
amchur half teaspoon
garam masala one teaspoon
salt to taste

preparation

pressure cook the chickpea in tea liqueur with salt
