I know the posts have been too sporadic since past few months now that I am back I will be more regular with the posts . Whenever we go India Thekua

 is one delicacy which my mother loves to prepare and ya we love to indulge ,this time I was around when she was preparing so could see the procedure

. Thekua tastes good with red chili pickle and a cup of ginger tea .

Janmashtami Celebration with Poori and Spiced Stir fried Potato

Wish all the readers of Asan Khana Happy Shri Krishna Janmashtami
Sharing with you all Janmashtami Jhanki pic decorated at my mothers place
I did this simple rangoli for the festival

and prepared meal of Poori and Aloo Sabzi

Recipe name - Spiced potatoes/Masaledar aloo/Heeng Jeera wale aloo
Recipe source cook book
Preparation time 30 mins
Cooking time 15 mins
Ingredient
Boiled potato six
dried red chili three
ginger chopped one fourth inch
cumin seed one tsp
asafoetida pinch
red chili powder half tsp
turmeric powder one fourth tsp
grounded pomegranate seed powder one tbsp
salt as per taste
oil to cook

Procedure
Heat oil in non stick wok
lower the flame and add asafoetida and cumin seeds
once it starts spluttering add ginger and dried red chili
fry for a minute and add boiled potato followed by
salt,red chili powder ,turmeric powder and pomegranate seeds powder
keep stirring till everything mixes together
fry for 5 to 7 minutes
serve warm with pooris.

Sweet start with Bitter truth

 I guess Gazar Ka Halwa ,

is the perfect post to start the new year ,I know I am bit late with my first post of the yr 2010,reason being my trip to Agra to celebrate Ganesh Chauth also known as Sankat Chauth at my inlaws place ,I am back with a lesson which I learnt and ya I gonna share with you all too ,we went for trip to FatehpurSikri,I had kept my purse beside me on the steps of Salim Chisthi Dargah, Advay was busy running around so my whole attention was towards him,I was so engrossed watching  him that I didn’t realize when my purse was picked from the steps, no guys I didn’t get it back,but ya as Shakespear said Sweet are the uses of adversity I learnt a lotz from this incident.
Never to carry purse or shoulder bag at tourist place always sling back or back pack,not to carry goodies like fav specs,perfume and other unnecessary stuff,not to carry key of wardrobe outside ,Car is always safe to leave things behind.Its not the first time that this happened with me I Lost my cell phone first time in Bangalore while shopping,second time in London I forgot my handbag in tube didn’t get it back and the third time the recent one.
 Yesterday Neha prepared Gazar Ka Halwa, the way I like I don’t think so anything can be better than this and ya its sweet enough to forget something bitter which happened with me.She prepared it the same way as the basic recipe goes,wash peel and grate carrots keep aside.In a non stick wok add two tbsp of ghee and one or two cardamom pod,lower the flame and fry grated carrots till mushy,add milk and keep stirring till the milk is not seen,add amul mithaimate ,no need to add sugar ,keep stirring till mithai mate is mixed with the carrots,ghee has to be added whenever mixture starts sticking to the vessel.Once done add finely chopped dryfruits,mix well and serve warm.

Crispy ajwain kachori with paneer sabji

Yesterday felt like having Paneer curry for dinner and together with ajwain kachori combo was perfect,Pallavi was craving since a long time for Kachoris,so i asked mother to prepare Kachori specially for her while i prepared cottage cheese curry.
This recipe is very simple and quiet apt for beginners in cooking,i am posting this recipe specially for Pallavi :-) so that she can try this recipe whenever she wants,marraige thought me cooking and i guess thats what is inspiring my Sis to cook .
coming to the recipe of Paneer curry
ingredient needed
cottage cheese 125gm chopped 
onion chopped three
tomato two chopped
grated ginger half tsp
garli clove chopped three
green chilli chopped one
salt as per taste
oil to cook one tbsp
half tsp each of red chilli ,turmeric and coriander powder
pinch of garam masala powder.
chopped coriander leaves to garnish one tbsp
cumin seeds half tsp
procedure
heat oil in wok and add cumin seeds
once cumin seeds start spluttering
add ginger,garlic,green chilli and onions
keep frying till onions start changing their colour
add tomatoes and mix well
once tomatoes gets mixed with onions add
salt and masala mixture(red chilli,turmeric and corinader powder)
keep stirring on low flame till oil is seen along the sides
if the masala starts sticking add few drops of water and scrap from the sides
add required amount of water as desired (i usually like thick gravy so i add less water )
let the gravy boil ,once gravy starts boiling lower the flame and add chopped cottage cheese.
mix well and let it simmer for few minutes.
before removing from flame add pinch of garam masala and coriander leaves.
mix well and serve hot with pori or chapatis.
Recipe of Ajwain kachori
ingredient needed
wheat flour depending on your need
water to need the dough
salt as per taste
one tsp oil (for the dough)
ajwain seeds one tsp
procedure
mix all the ingredients and knead smooth dough
roll out in the shape of pooris but slightly thicker than pooris
heat oil in wok
once oil is hot lower the flame and slowly slide the kachodis
keep turning till the kachodis are brown from both side
serve hot with curry of choice .

Festive Food Event -Onam Festival Roundup


Onam-harvesting festival, after troiling for months, it’s the reaping time for the farmers. All our ancestors had a time to celebrate would have been like the aka pay-day though after few months.
The beautiful Pooklam by Shreya
 marks the joyous expression of Onam Festival.
Onam sadya the tradition of grandeous meal, maintains deep roots in every Indian. Still every family has its own way of making it, inspiring the food bloggers to share their feelings and tradition.
Things have changed over generations but we continue the celebrations. A time to maintain our traditions ,tribute to motherland and our ancestors as well.
All of us had different way of celebrating the festival this year the entries here are just a representation of the festivity though with individuality .After celebrating rakshabandhan at PritisIndian khana and Krishna ashtami and Ganesha chaturthi at Purvas daawat i present before you all delicacies prepared for the Harvesting Festival ONAM

JAYASHREE OF LUVGOODFOOD SENT AUTHENTIC PAZHAM NURUKKU
An integral part of a traditional Onam Sadya, this dish has now also become a part of most festivals celebrated in the Thrissur district of Kerala. , according to her no sadya (feast) is complete without some pazhamurukku.

Paruppu Pradaman which is sweet porridge prepared from coconut milk and split moong bean.
Uma maheswarinon blogger from Malaysia has sent Olan, Eriseery,Pineapple pachdi,Cucumber pachdi and Beans thoran

Olan
Ingredients
1 small cup kidney beans
1 small White Pumpkin
1/4 piece of Sweet Pumpkin
4-5 Green Chillies
small packet of Cocunut milk / or u can extact from the coconut if u want
curry leaves
1tps of Cocunut oil
Salt to taste
Preparation
1. Soak the Kidney beans for 1hr and then cook in the cooker for 4 or 5 whistle keep it aside
2. Cut the white and Sweet Pumpkin in rectangle shape and very think slice
3. slit the Green Chilles
4. Boil the pumpkin and the chilles with just 1/2 cup water and salt to taste
5. Once the pumpkin is cooked add the kidney beans to it bring to a boil , add curry leaves also
6. put off the stove keep it covered
7. take the coconut milk around 1cup or as required add to the above mixture dont boil it
8. Before u Serve pls add 1tsp of Cocunut oil
Olan is done
Eliserry
Ingredients
1 small cup kidney beans/ or kadalla
1 small sweet pumpkin
1 full cup coconut grated
3-4 Red dry chilli
1/2 tps jeera
a pinch of Turmeric
salt to taste
curry leaves
2 tsp of cocunut oil
mustard
Preparation of Cocunut mixture
grind 1/2 cup of cocunut, Dry Red chillies, jeera to a fine paste
Soak the Kidney beans for 1hr and then cook in the cooker for 4 or 5 whistle keep it aside
cut Pumpkin in a small square pieces( or any shape), boil the pumpkin with just 1/2 cup of water, add water as required to cook, with a pinch of turmeric and salt as per taste,
once boiled add the above mixture of cocunut to the pumpkin and even add the boiled kindey beans(or Kadalla). put off the stove keep aside
put 2 tsp of Coconut oil in a kadai, add mustard , then add curry leaves and 1/2 cup of coconut, fry for sometime till the coconut turns brownish,
u will get a nice smell of the coconut ( tip - the oil which u added in the beginning will start to come out from the coconut -then it is done)
Add the fried coconut to the mixture and mix wel -
Eliserry is done
Pine Apple Pachadi
Ingredients
1 pine apple cut into small pieces
1/2 cup coconut
3 Green Chillies
1/4 tsp mustard
curry leaves
salt to taste
Preparation of coconut mixture
grind 1/2 cup of cocunut, green chillies and mustard to a fine paste
boil the pine apple with salt, once the pine apple is boiled, add the above coconut mixture to the pine apple mix well and put off the stove, and add the curry leaves,
take 1tsp of oil(coconut oil) add mustard once the mustard is spalttered add that to the Pine apple pachadi
Pine apple Pachadi is done
Cucumber Pachadi
Ingredients
1 cucumber cut into small pieces of u can scrap it
1/4 cup coconut
1/4 tsp mustard
2 green chilles
salt to take
Prearation of Coconut Mixture
grind 1/2 cup of cocunut, green chillies and mustard to a fine paste
Add the cocunut mixture to the cucumber mix well
Thadaka
1tsp oil, add 1/4 tsp mustard, add 1/4 urdu dal , 3-4 dry red chillies
Add the thadaka to the above mixture of cucumber
Add salt before u serve
Cucumber Pachadi is done
Beans - Toran
Ingredients
Beans as required
salt to taste
3-4 dry red chilles
1/4 cup of less than that coconut
1/4 tsp mustard
Preparation
Take oil in a kadai, add mustared, red chilles, fry and then add beans to it, add required amount of water for beans to boil, add salt as required
once the water is evopoarted and beans is cooked put off the stove and add grated coconut to the beans
Beans -Toran is Done

Dinner of Onam sadya dishes with pics of palawan beach

now busy clearing almirahs,..
dont know what i am talking about na :-),,,friends i am moving back to India forever on 15th of october,so since past few days i have been really busy doing packing and other things,
after spending two yr three months in Singapore which is worlds safest place,going back to Delhi ncr gives me goosebumps specially after the recent bomb blast which took place in delhi markets,but then this is something which has no solution,,,for few days after the blasts i was really depressed,but i know the more i think ,the more depressed i gonna be,..and i think a lot when i am not doing anything,..best way is to keep myself busy so that i dont think negative things,..:-) ,after tiring myself by doing packing whole day,..cooking is something which i look forward to destress myself ,ya ,cooking acts like therapy for me specially these days when i am busy with packing and all..all i want is hot dal chawal with subji,..one such tiring day i felt like trying Onam sadya dishes
,and trust me what a meal it was ,i tried sothi which is lightly spiced coconut soup
ingredients for sothi -
onion chopped one
green chilli sliced two
curry leaves few
salt to taste
oil to cook
half cup thickcoconut milk
four cup thin coconut milk
tomato one chopped
pinch of turmeric powder
pinch of cumin powder
one teaspoon each of fenugreek and mustard seed
half tsp each of cumin and fennel seeds
crushed dried red chilli two
procedure
heat oil in wok
fry fenugreek,mustard,cumin and fennel seeds along with red chilli,
further add chopped onions,green chillies and curry leaves,frytill onions turn translucent
add thin coconut milk,chopped tomatoes,cumin and turmeric powder followed by salt
boil for 10 to 15 minutes
add thick coconut milk and boil further for five minutes.
serve hot .
which is ,potato podimas -spiced mashed potato
from Sukanyas blog and tomato rasam, injithair -ginger in curd
,dryfruit kesari here,i am not good in preparing halwa ,..so asked hubby to prepare for which he agreed,to enjoy the meal in traditional way had on banana leaf,i was not sure whether i would get banana leaf in the nearby grocery shop,..but when hubby returned with banana leaves i was realy happy,..
