Japanese Sugar Rusk with Coffee - perfect way to start the day,

Today i am not feeling good,
but i am hoping that
tomorrows sun will be different one
Tomorrow things will be better
i am hoping that
my prayers will be answered
as always,

I am hoping that tomorrow
i will feel good and better
just like i am everyday
but today i am not feeling good,..;-(

sharing with you all simple platter of Sugar Rusk which i prepared few days back

i followed the same recipe as given at her space,baked at 100 degree centigrade for seven minutes.
,perfect with morning coffee preferably Nescafe for me ,this combo is perfect to start the day ,thats how i start my day with hot mug of coffee and some toasts

Blissful Sunday with dinner rolls

Today was Baking day for me ,for lunch baked pizzas and for evening tea prepared dinner rolls
Now when i have become used to of the oven,i feel like baking more often ;-)
Recipe Name Dinner Rolls
Recipe Source Baking Book
Baking temperature 120 degree centigrade
Baking time 10 to 12 mins
Ingredient
One cup all purpose flour
salt half tsp
sugar one tsp
yeast one tsp
milk powder one tbsp
 oil one tbsp
milk one tsp to glaze
Preparation
Line a baking tray and keep aside
In one cup of warm water mix yeast and sugar and keep aside for 10 mins

Procedure
In a mixing bowl put all the dry ingredients together
make a well in the centre and add oil and yeast mixture
add half cup of warm water and knead to form a soft dough
place the dough in oiled bowl ,cover and leave to rise for one to two hour
knead back the dough by punching it gently ,
turn on a lightly floured work surface and knead for a minute
divide into even portions and shape into rolls
space the rolls apart on baking tray and cover with damp cloth
leave to rise for 20 mins
preheat the oven to 120 degree centigarde
brush the rolls with milk and bake for 10 to 12 mins.
Serve warm

Celebrating Rain with platter of Nectarine Coconut Pound Cake and Ginger Tea

Rain always reminds me of sizzling hot onion fritters with steaming cup of  hot tea
Rain always reminds me of the small paper boats which we used to float during our childhood days
Rain always reminds me of the rainy day due to which our school had to be closed
Rain always reminds me of the Shri Krishna Janmashtami stories which Dadi used to tell us,
Rain always reminds of the chicken roll sold at commercial street in bangalore and my college freinds
Rain always reminds me of roasted bhutta sold on the streets of Delhi
Rain always reminds me of the beautiful nos like Rimjhim rimjhim and ,.
Rain always,...
if i go on i know the list will never end ...;-)
today noon when it started drizzling and when hubby told that he will be back home early i had the perfect reason to bake this perfect looking Nectarine Coconut Pound Cake ,most of the time its fritters or soemdeep fried goodie but today was cake day :-)
i have varied the quantitiy of ingredient

Recipe name Nectarine Coconut Pound Cake
baking temperature - i started with 150 degree centi and then after 5 mins lowered to 120 degree centi
baking time 15 mins
ingredient
nectarine chopped 1
all purpose flour half cup
dessicated coconut one fourth cup
powdered brown sugar three fouth cup
vanilla essence half tsp
egg one
unsalted butter half cup

preparation
preheat oven to 150 degree centigrade
prepare a cake tin and keep aside
procedure
cream the butter and sugar together till fluffy
add vanilla extract and mix everything together
add egg beat well
add all purpose flour and dessicated coconut
and gently mix everything together
pour the batter in the prepared pan
arrange the nectarine slices on the batter
and bake till skewer inserted in the middle comes out clean.

 
Served the cake with ginger tea ,i am going to bake this cake again ,i luved the taste of baked nectarine

Tea Party ,theres good news deadline has been extended to 15th september,..;-)

Ghar wala Chicken curry ,Barish wala chai pakoda or Mallika ka Miss Masala

How do you feel when you go to library and see book of someone whom u know staring back at you  from the rack waiting to be picked up,no guys i am not talking about Sanjeev Kapoor or Tarla Dalal,i am  talking about our very own Mallika Basu of Quick Indian Cooking ,since the day i have started blogging i have been following her blog ;-) I am in luv with her writing and her simple and yum recipes .So today when i saw Miss Masala in the indian cook book section together with other known food authors i felt so good,i ahve just turned few pages ,book is awesome ,just looking at it made me feel so good u guys can imagine,...:-)

Coming back to todays post two days back prepared this simple chicken curry ,this recipe is very simple guys and takes hardly half an hour to prepare,while chopping onions and tomatoes i didnt ahd any recipe in my mind,i just wanted to prepare some chicken curry with rice,..and i am so happy that i didnt try anything fancy for this recipe,..:-) or it wouldnt have tasted that yum i know,..;-) while eating this i missed my sisters as this chicken curry reminded me of the sunday meal during our childhood days,.:-)

Recipe name ghar wala chicken curry
Ingredient
chicken pieces 250gm
green chili one finely chopped
garlic clove two (thick one)
ginger one inch finely chopped
onion four chopped
tomato one chopped
mdh chicken masala two tbsp
salt as per taste
oil to cook
bay leaves two crushed
cumin seeds one tsp
dried red chili two
black cardamom two
black pepper two
Procedure
In a non stick wok heat one tbsp oil
lower the flame and add chopped ginger ,garlic and green chili
keep frying add onions and fry till the onions are done
now add tomatoes ,salt and chicken masala mix everything together
keep stirring till oil is seen along the sides
now add chicken and fry for five minutes
remove from flame and keep aside
In a pressure cooker heat haf tsp of oil
add cumin seeds,bay leaves,dried red chili,black pepper and cardamom
once it starts spluttering lower the flame and fried chicken
mix everything together ,add hlaf cup of water
and pressure cook for 2 to 3 whistles.
Serve hot with rice,..;-)

Eggless Blueberry Muffins and the jinx ends,..:-)

I thought blueberries are jinxed ,i can never bake something perfect with these ,but then  i was all wrong ,
when i tried the recipe of Eggless Blueberry Muffins from Trying Our Best Blog i got the perfect muffins,i followed her recipe without any change ;-)

these superyum eggless blueberries muffins are off for the following event

lets munch light tea time snacks event hosted at sharmi passions
Anita has invited us for Tea Party these muffins are off for the party too,.:-)
 also joins Bake Off event hosted by Champa of Versatile Kitchen

Cook when it rains - Chicken roll

hi guys i think its time i post about what i did with the leftover lahsuni chicken...but before that will share some memories which inspired me for this recipe,
back in my college days...whenever i used to go shopping with my friends,,,this was one of the regular thing which i used to have in blore...i am talking about frankies if i am not wrong but my short memory suggests me this name,,,Frankie's chicken roll...priced at 15rs each,,or maybe 20...real good rolls...and when they used to prepare i used to watch how they are preparing ,...so my recipe is my version of what i had seen there,,,really miss those days,,and friends,...
roll in one hand ...shopping bag in other hand,,,we used to walk,talk,or wait for the movie show,..cause most of the time,,,we had to rush,,,before time to get the tickets,...or even if we were not shopping..we were just window shopping and thinking of the time ,,when we will earn so that we need not think about money...roll was always there...and sometimes we had to drench in rain to get the roll,,,or stand in queue long one,,,but the first bite and u forget everything,...that was the taste,.
.now place is different...friends are different,...and even roll is different....sigh...
miss those days and my frens....know enough of memories...sorry i don't want to bore u more,,

ingredients for one person

one leftover roti
one egg'
leftover lahsuni chicken or u can use any leftover veggie or chicken(cooked)
chopped small onion one
half lemon juice

chat masala
one tsp oil

procedure

heat oil in pan.
add roti on the pan and keep turning till it starts turning brown and crispy from both side.

now add the egg on top of the roti and spread it evenly,..on the roti.

once the egg gels with the roti

add the chicken in the center followed by the chopped onions,lemonjuice and chat masala.

and slowly fold the roti from both sides to form roll

once done remove from the pan,fold the roll in paper napkin and enjoy with ur favourite sauce,..
