Fresh Fruits in Cheery Sauce

With temperature soaring by each passing day , i just dont feel like eating noon time,so these days my lunch is fresh fruits,today i prepared this bowl of fruits for myself ,and i truly enjoyed it to the last piece sharing with u all the recipe of
Fresh fruits in cherry sauce
Ingredient needed for the fresh fruits bowl
slice of mango chopped
handful of cherries deseeded and sliced
lychees deseeded and sliced
sugar a pinch
lemon juice half tsp
vodka one tbsp
Procedure
In a mixing bowl mix the above ingredients together and keep in fridge to chill
For cherry sauce
crush handful of cherries and pass the pulp through sieve to get the sauce.
Before serving
place the fruits in a serving dish
top it with cherry sauce and half tsp of vodka

The above bowl of fresh fruits in cherry sauce is off for Thanda Mela hosted by Srivalli and to my own event which celebrates Delhi Food .
I goona miss mangoes a lotz in Singapore so these days i am feasting on this one almost everyday,thats all frens,..tk cre and happy blogging

Malaidar chicken curry aam chutney ke sath with Coconut icecream with mango sauce

In my last post I had mentioned about something special which I had prepared  for my cousins who had come to visit us,..as they are very fond of chicken I thought of preparing chicken curry for them.Thought of going through tried and tasted recipes in my blog,but then thought of experimenting with the ingredients around,I had cream in fridge so thought of experimenting with cream and chicken
Chicken Malaidar
Ingredient needed
Chicken one kg
 Onion four chopped
Tomato two copped
Green chili one chopped
Ginger garlic paste one tbsp
Cumin seeds one tsp
Green cardamom crushed two
Salt as per taste
Oil to cook
Cream half cup
Garam masala powder one tsp
Mixture of half tsp each of red chili ,coriander and turmeric powder.
Preparation
In a clean bowl mix chicken with cream,Ginger garlic paste , mixture of masalas and crushed cardamom.
Keep aside,
Procedure
Step 1
In a non stick wok heat one tbsp of oil
Once the oil is hot add cumin seeds
Followed by chopped onion and green chili
Keep frying till onions are semi brown .
Step 2
Now add chopped tomatoes and salt
Mix well on low flame ad scrape ff from the sides.
Once oil is seen along the sides
Step 3
Add marinated chicken to the wok
And mix well with the tomato onion mixture.
Keep stirring cover and cook on low flame for few minutes.
Step 4
Remove from flame and serve hot with chapatti or rice
Add few drops of cream before serving.
Served with chapati,aam chutney and sirke wala pyaz.
For Keri ni Chutney(from my parsi cookbook)
Ingredient needed
Raw mango peeled and chopped one
Green chili one deseeded
Chopped ginger one tbsp
Chopped garlic one tbsp
Grated coconut two tbsp
Coriander leaves half cup
Salt as per taste
Procedure
Grind all the ingredients till soft.
Serve with dal chawal or sabji roti.
For dessert I had prepared Coconut icecream with mango sauce from my icecream book
Here goes the recipe of it
Ingredient needed
150gm grated coconut or coconut milk
cornflour one tbsp
egg yolk four
milk 600ml
caster sugar 115gm
cream 300ml
almond essence one tsp
Ingredient needed for the sauce
Ripe mango one
Sugar 2tbsp(I didnt add)
Lemon juice one tbsp
Orange juice 4 tbsp
Procedure
Step 1
Beat the egg yolk,sugar cornflour,almond essence,and one tbsp of milk.
Step 2
Prepare coconut milk of the grated coconut by running it in blender with 300 ml milk
Step 3
Pour the fresh coconut milk into heavy saucepan and stir in the rest of the milk.Bring the milk almost to a boil.
Step 4
Pour the milk over the egg yolks whisking constantly.Return the mixture to the pan and cook very gently ,stirring until thickened.
Step 5
Pour the custard into a bowl and cover it with greaseproof paper and leave to cool.
Step 6
Transfer into a freezer container and freeze for 3-4 hours,beating twice as it thickens.
For the sauce
Remove the stone from the mango  and put it in the food processor
Add the sugar,lemon juice and orange juice and process until smooth.
Pour it into a small jug and chill.
Serving suggestion
To serve,scoop the prepared ice cream into serving dish.
Add mango sauce and serve immediately.

Parents are joining us tomorrow morning ,neha my younger sis will be reaching delhi tomorrow midnight,nayani my cousion is here so from tomorrow its gonna be more fun,btw i have already packed my suitcase ,done with most of the shadi preparation,and ya before i forget today is our third marraige anniversary,..havent planned anything special maybe all three of us uhh sorry including Advay four we will dine out,..:-)chalo tk cre cee u guys soon,....

Another spicy treat from Ushas space,..;-)


When i prepared Hyerabadi Mutton Biryani from Ushas space i knew that i would be trying recipe of Hyderabadi chicken biryani from her blog soon and thats what i did today for dinner,...together with chicken shorva,fresh pomegranate in curd,..combo was yum,..thanks again Usha for sharing such yummy recipes in your space,
..i followed her recipe from scratch except for the last part ,i followed the procedures mentioned in my mutton biryani post ie the layering technique .

Usha has shared recipe for chicken shorva too,this is how i prepared

ingredient

two to three pieces of chicken

onion one chopped lengthwise

cumin seed half tsp

salt as per taste

red chilli powder half tsp

turmeric powder a pich

freshly grounded black pepper a pinch

corinader powder half tsp

half tsp oil to cook

procedure

heat oil in non stick wok

add cumin seeds oce they start spluttering

add chopped onions and keep frying till onions start changing their colour

now add salt,turmeric powder,black pepper powder,red chilli powder and coriander powder

keep stirring till oil is seen along the sides now add chicken pieces and fry further for few minutes

add half cup of water and cover and cook

once done remove from flame and serve hot with roti or biryani.

for fresh pomegranate in curd-beat curd and add fresh pomegranate seeds,i didnt add any seasoning to the mix and ya believe me it was perfect.

Teekha murgir jhol,meetha aam sandesh,chatpata allo ,makhmali murgh and few handpainted tshirts

Have heard lots about murgir jhol or bengali style chicken curry,so when i got this recipe

while searching for bengali recipes,i didnt had any second thoughts,i thought if trying and i am so glad i tried,had with plain rice ,

intentionally i had added more water to the gravy to make the gravy thin,..otherwise always in my cooking i prefer thick gravy...gonna make this again for my sisters,..because just like me even they like spicy curry.

Plain paratha with aam(mango) sandesh and aloo bhona was the dinner which i had packed for hubbys tiffin when he was on night call,addition of panch phoran to the potatoes imparts nice aromatic flavour and to finish off there was sweet aam sandesh

,for the first time i experimented with mango pulp and cottage cheese together,..it was difficult to bind together but somehow i managed ,after preparing kept in freezer for 5 minutes so that shere.weet sets,..i have already blogged in detail with pics procedure to prepare sandesh,,in badami sandesh post,have followed the same procedure, aloo bhona recipe is taken from here

BENGALI STYLE CHICKEN REZALA-addition of wheat flour to this curry imparts distinct flavour to the curry,..,,,for the first time i had added wheat flour to any curry,,so was scared too,..but when i had with rice

,,,it was total yum,,,try and u wil know the differencegravy was soft like velvet so makhmali murgh :-) ,recipe is taken from here,,i followed the same recipe,..

BUSY WEEKEND AND RAKHI FESTIVAL WITH MALAI WALA LADOO,SWEET RICE WITH STRAWBERRIES AND BREAD DAHIWADA

Last weekend was busy one 15th was spent IN making laddoo recipe from here ,i further decorated laddo with inely chopped almond and did some design on the ladoo with orange food colour.
for RAKSHABANDHAN FESTIVAL
,dinner was out at friends place which was really yummy,i took malai wala laddos for her
16th morning was fast forward one,..had to go bank with hubby...and he told me bank will close by 12,..so i had to rush with everything including tieing rAKHI TO ADVAY SENT BY HIS COUSION SIS misha ,THE BELOW PIC IS OF RAKHI THALI IT CONTAINS LIGHTED OIL DIYA ,KUMKUM FEW RICE GRAINS AND RAKHI SENT BY ADVAYS COUSION MISHA,MALAI LADDO,CHOCOLATE GIVEN BY MY FREN AND A SMALL DISH TO MIX KUMKUM ,RICE GRAIN AND CURD TOGETHER FOR APPLYING TIKA.I TIED MISHAS RAKHI TO ADVAY.
finally at 11:30 when i asked him,..why arent we leaving he told me bank open till 1pm he knows i am very slow,..so to manage everything he told me time 12...i got so angry...i had missed my morning tea,..because of rakshabandhan festival had to do other things too,..:-(,..anyways after the bank work,,,we had lunch out and then had to meet workshop group frens,..so evening was spent with them,..hubby had some other chores so he went home,..after meeting my frens,,,took advay to temple near my home,...and by seven reached home.,..tired and all,..but was glad cuase hubby was waiting with hot coffee,,,huh ,,,what a relief,..
after such a tiring day,,thought of preparing sweet rice with dryfruits with bread dahi wada and bread fries
for bread fries ingredients-brown side of bread which was not needed for dahi wada,oil,salt,pinch of turmeric,red chilli powder hal tsp,crushed red chili two,pinch of asafoetida,mustard seeds half tsp,curry leaves few.
procedure-heat oil in wok,add mustard seeds followed by asafoetida,curryleaves,dried red chilli followed by bread sides,stir fry for a minute,add salt ,turmeric and redchilli serve hot with rice and dahi wada.

i got the original recipe from here for dryfruits i used raisins,cranberries and chopped almonds and before serving decorated with fresh strawberries.
,..as ADVAY was tired chasing pigeons at boat quay
he slept early...so night we spent watching SINGH is king,..nice movie,,worth watching...do watch for good laugh and decent family movie with good message for all..

MANGO KULFI WITH CRANBERRIES TO BEAT THE HEAT AND SOME COOLERS TO QUENCH UR THIRST

Back in India,..monsoon has already arrived but here in Singapore,.its the same weather with sudden rain showers when it becomes too hot..one hot summer afternoon i felt like having kulfi,,.i got the recipe from here,,..thanks to lakshmi for suggesting me this recipe,..i followed the same recipe
,..instead of adding dryfruits and saffron i added chopped cranberries,..thus the name mango kulfi with cranberries,..thanks Namratha for sharing this yummy recipe,,,will prepare soon again,,,,;-)
AFTER AASONDI I TRIED SUNFLOWER SEEDS AGAIN ,FOR THIS ENERGY BOOSTER DRINK,..BADAM MILK WITH MELON SEEDS...
INGREDIENTS
60gm melon seeds
one litre milk
pinch of saffron strands
one tablespoon of chopped almond
two cardamom pounds grounded
pinch of balck pepper
one tablespoon of poppy seeds
sugar four tbsp
procedure
soak the melon seeds with poppy seeds for 15 minutes,drain and blend in a blender
soak saffron strands in a tsp of milk and keep aside
boil milk and add chopped almonds,grounded cardamom powder,pepper powder and sugar
now add poppy almond mixture,and saffron infused water to the milk.
let it simmer for a minute or two,..remove from flame.
serve chilled

FRAPPE AND SMOOTHIES FOR THE FIBRE RICH EVENT,,, ND COMICS,.WITH CLICKS,..

when i prepared banana frappe,.i didnt knw that i gonna like it...thought of giving it a try cause when i saw the recipe...i just couldnt stop myself from giving a try

ingredients

banana one
milk one cup
vanilla ice cream one scoop
coffee powder half teaspoon
sugar half teaspoon
ice cubes half cup

procedure

prepare cold coffee
add vanilla icecream,banana
blend again after adding ice cubes
enjoy chilled

some smoothies recipe

apple carrot smoothie with twist of ginger

apple peeled and chopped
ginger grated less than half inch
juce of lemon half tsp

procedure

blend all the ingredients except lemon juice
add lemon juice before serving
enjoy chilled

orange and grapefruit smoothie with dash of lemon

tilda to tan-Tan u r so lucky,u stay with granny and eat all farm fresh food,..i wish i could stay here forever,,i just love the fresh veggies which grany grows in the backyard,,,specially the brinjals....,


tan totilda-Tilda why u so depressed,..ur holidays are not over yet,,nd aunt hilda seems like a great cook,,she keeps readin cokkin book still..infact i asked aunt hilda to teach my mom too,.


tilda thinks-hmm poor boy,..he doesnt knw what he gonna get in his tiffin if my mom is teaching his mom,why should i bother he will understand himself,....

tan to his mother-"mother what did u gave today for lunch,..i couldnt make out the ingredient,..smell was so bad,..that everybody was asking me whether it was stalefood,..i asked u to take aunt hildas help ,..for cookin"


mother to tan-"Tan as i was feeling sick in the morning Hilda prepared lunch for u,..she told me she prepared cold brinjal in tomato sauce,..infact she got up early toprepare for u,wasit not good,.??"

tilda to tan-"Tan how was ur day at school...i made mashed brinjal with grannys help u wann try,..i am learning recipes from her...so that i can cook if need arises"

tan to tilda-"ohh thats great,..and i tasted aunts hilda cooking today,..so can understand your condition ,feel bad for u ,..how u manage to survive there..imean i don knw wht she cooks,."


tilda to tan-"hehe,..now u knw ,don worry about me,..i have my own smart ways to escape from her cooking,..u r not used of these things,..nd no need to coz i don think aunt milda experiments.."

tan to tilda -"yeah,.u r right..that ways i amon safe side,..monotonous cooking is better than to eat something tasteless,..and unrecognisable.."

tan to his mother-"Mom,again aunt hilda prepared my lunch today.?if u not feeling well dont bother her,..i will eat in canteen,..sauce of the dish was so tangy,..nd wht was tht,.i couldnt make out..."


tans mother to tan -"ohh no son,..i prepared lunch..actually hild atold methe recipe...i am really inspired by her cooking experiments,.nd i knw u don like my monotomous cookin,..thats why...i bet ur dad will like it.."

simple dish of chicken curry and rice,..in between jalebi nd to end with strawberry shrikhand with comic strip

since past few days i had been preparing chicken curry in various ways ,..somehow had forgotten the traditional way we used to prepare before...so today before going to gym,..i asked my hubby to prepare chicken curry..,..it had been long time,..since he had cooked chicken curry in his own traditional way,..he readily agreed,,.when i got married..i didn't know how to cook chicken ,..hubby thought me the way he used to cook,..after that i started experimenting ,..with different kind of recipes,..
today when i reached home i was really hungry,..chicken curry looked good,..couldn't resist myself,..rice had to be cooked,,,.prepared plain rice...tasted great with rice,.this curry reminds me of the thick chicken curry we get in dhaba..

recipe is very simple
heat oil
add cumin seeds
add chopped onion,ginger,garlic and green chilli
once onion starts changing colour add tomato puree,,followed by salt nd chicken masala
once you see oil along the sides add chicken,.keep frying till brown from both sides
now add water and cover nd cook for few minutes
enjoy with rice or chapati..

yesterday prepared jalebi for the first time,..recipe goes here...jalebi is my favourite sweet..back here i used to crave a lot,.but now after tryin out the recipe..can prepare anytime,..\\

prepare strawberry shrikhand,,after dinner yeterday..had already seived the curd and kept in fridge so it didnt take much time..mixed finely chopped starwberry...and kept in fridge for some time before serving

hilda to tilda (her daughter) tilda,..hope u have packed ur bag,.we are going back home,,ur dad must be missing us,..and we are gng to give him surprise oky,..i knw he must hve missed my cooking,..

tilda hmm so soon,,i wann stay here,,its so nice here with mountains and all,,and my vacationis still not over....

hilda hmm oky,..btw ur grandma has gone to church today for the weekly meeting...so what u wann to hve for dinner..me thinking to make baked brinjal in ginger sauce,..

tilda thinks omg hve to think of something fast or grandma will again fall sick,,..umm ut what..nd wht she wants toprepare,..must have picked from the cook ook she was reading last night,..

tilda mama,,u remember the pizza shop,..the one where u used to go when u were kid,...granny told me before leaving to wait for her there,..she wanted to give you surprise treat,..thats why she didnt tell u

hilda ohh really so nice of her..ya even i can revive old memories,..thats a good idea,..lets hurry or we will be late...
