Blueberry Crisp with Icecream ,....

I just luv blueberries so when i saw the recipe of Blackberry Crisp in Nigella Lawsons book,i had to try it,had blueberries in my fridge and when Advay slept today noon, had all the opportunity to work peacefully in kitchen,,,:-)
Recipe name Blueberry Crisp
Recipe source Nigella Express Book
Recipe style Baking
baking temperature 200 degree centigrade
baking time 15 to 20 mins
Ingredient needed
half cup plus one tablespoon butter'
three fourth cup rolled oat
half cup flour
half cup light brown sugar ( i used brown sugar )
half cup flaked almond
one fourth cup sunflower kernel ( i didnt had  :-( )
ground cinnamon one tsp
blueberries one cup ( original recipe blackberries four cup)
one fouth cup vanilla or granulated sugar ( i used normal sugar)
two tsp cornstarch ( substituted with all purpose flour )
Procedure
preheat the oven to 200 degree centigrade
melt butter and keep aside
In a mixing bowl combine oat with flour,brown sugar,cinnamon,sunflower kernel and almond
In a baking dish preferably wide shallow one ,mix blueberries with sugar and cornstarch (i used all purpose flour)
stir melted butter over crisp topping and spoon over the blueberries
bake for 20 mins and serve warm with icecream or cream.
this one is for u frens,just curl up on ur couch and enjoy this bowl  thats wht i did. u will experience sheer bliss,tastes best served warm with dollop of ciecream or cream.

One Pot Meal Spiced veggies with couscous

I got introduced to Couscous through food blogs,so reluctantly i picked the box of couscous  during my last grocery shopping,saw the recipe of spiced vegetable couscous in one of the cookbooks,so thought of giving this a try
Recipe Name - Vegetable Couscous
Recipe Source - Cookbook
Cuisine moroccan
Preparation time 15 mins
Cooking time 30 mins
Ingredient for Vegetable Couscous
400gm chickpeas(boiled and drained)
green pepper one sliced
carrot one sliced
cauliflower 200gm
onion chopped one
tomato chopped one
garlic cloves crushed two
salt as per taste
pepper half tsp
turmeric half tsp
one tsp each of coriander and cumin 
oil two tbsp
For the couscous
salt half tsp
one cup couscous
butter one tbsp
Procedure for veggies
heat oil in non stick wok
fry onion and garlic till soft
followed by turmeric,coriander and cumin
keep stirring for few minutes
now add the chopped veggies fry for a minute
add enough water to cover the veggies halfway
bring to boil,lower the heat and let it simmer for few minutes
once the veggies re half done add chickpeas and cook for further 10 mins
season with salt and pepper.
Procedure for couscous
to cook the couscous boil water in saucepan
add salt and half tsp of oil
remove from the heat and mix couscous
keep stirring
allow to swell for 2 minutes,add butter and heat through gently
stirring to separate the grains
For serving
Serve cooked veggies on couscous garnuished with coriander leaves.

Thili Dosai from Lakshmis kitchen and Wholewheat Walnut Bread

Since past two months,life has been really busy with so much to do and just 24hrs in a day, sometimes i feel i need more time to catch up with the pending work,yet whenever i feel like like cooking or get the opportunity to cook i dont miss it,first half of the day i am busy in hospital doing projects and the second half is for home,Advay,sudying,cooking and so many other things,its tough managing both home and work but i am doing the best i can,Advay has become very naughty,he keeps me on my toes,evening is spent running after him and as soon i am back from work he gets his books out from his school bag for revision,ya he luvs alphabets and is in luv with them ,he has started conversing in his own language and tries to catch up with us not to miss he luvs chatting with his father on Skype which is our daily routine these days,coming back to cooking

I tried Thili Dose
from Lakshmis space which is yum i am going to make this again,perfect for beakfast and brunch we enjoyed this with mango pickle ,thanks Lakshmi for the recipe gonna try ur moong dosai soon,..;-)




and ya i did bake whole loaf of Walnut Bread
from my baking dairy ,this is ow the recipe goes,...

Ingredient needed

420gm wholewheat flour

150gm whitebread flour

12.5ml salt

550ml lukewarm water

15ml clear honey

15ml active yeast

150gm walnut pieces

1 beaten egg to glaze


Procedure

STEP 1

Combine wholemeal and whiteflour and salt in a large bowl,make well n the centre and add 250ml of water ,honey and yeast.

set aside until yeast dissolves and becomes frothy.

STEP 2

Add more water,and mix to form smooth dough.

STEP 3

Transfer to a floured board and knead,adding flour is necessary,until the dough is smooth and elastic.Place in a greased bowl and roll the dough around in the bowl to coat thoroughly on all sides,cover with clear film and leave in warm place until it doubles in volume for about one and half hrs.

STEP 4

Knock back ( punch down ) the dough and knead in the Walnuts evenly.

STEP 5

Grease a baking sheet,shape the dough into a round loaf and place on the baking sheet .Press in walnut pieces to decorate the the top.Covel loosely with a damp cloth or clear film and leave to rise in a warm place until it doubles in size .

Step 6

Preheat the oven to 220 degree centigrade,bake for 15 minutes,lower the heat to 190 degree centigarde and bake until the base sounds hollowwhen tapped for about 40 minutes.

I had baked this loaf for my sis,..and ya she did liked it,..

hope u guys r doing good,weather is quiet pleasent from past few days,so feeling good,otherwise i guess we had the longest summers this year,.

Malaidar chicken curry aam chutney ke sath with Coconut icecream with mango sauce

In my last post I had mentioned about something special which I had prepared  for my cousins who had come to visit us,..as they are very fond of chicken I thought of preparing chicken curry for them.Thought of going through tried and tasted recipes in my blog,but then thought of experimenting with the ingredients around,I had cream in fridge so thought of experimenting with cream and chicken
Chicken Malaidar
Ingredient needed
Chicken one kg
 Onion four chopped
Tomato two copped
Green chili one chopped
Ginger garlic paste one tbsp
Cumin seeds one tsp
Green cardamom crushed two
Salt as per taste
Oil to cook
Cream half cup
Garam masala powder one tsp
Mixture of half tsp each of red chili ,coriander and turmeric powder.
Preparation
In a clean bowl mix chicken with cream,Ginger garlic paste , mixture of masalas and crushed cardamom.
Keep aside,
Procedure
Step 1
In a non stick wok heat one tbsp of oil
Once the oil is hot add cumin seeds
Followed by chopped onion and green chili
Keep frying till onions are semi brown .
Step 2
Now add chopped tomatoes and salt
Mix well on low flame ad scrape ff from the sides.
Once oil is seen along the sides
Step 3
Add marinated chicken to the wok
And mix well with the tomato onion mixture.
Keep stirring cover and cook on low flame for few minutes.
Step 4
Remove from flame and serve hot with chapatti or rice
Add few drops of cream before serving.
Served with chapati,aam chutney and sirke wala pyaz.
For Keri ni Chutney(from my parsi cookbook)
Ingredient needed
Raw mango peeled and chopped one
Green chili one deseeded
Chopped ginger one tbsp
Chopped garlic one tbsp
Grated coconut two tbsp
Coriander leaves half cup
Salt as per taste
Procedure
Grind all the ingredients till soft.
Serve with dal chawal or sabji roti.
For dessert I had prepared Coconut icecream with mango sauce from my icecream book
Here goes the recipe of it
Ingredient needed
150gm grated coconut or coconut milk
cornflour one tbsp
egg yolk four
milk 600ml
caster sugar 115gm
cream 300ml
almond essence one tsp
Ingredient needed for the sauce
Ripe mango one
Sugar 2tbsp(I didnt add)
Lemon juice one tbsp
Orange juice 4 tbsp
Procedure
Step 1
Beat the egg yolk,sugar cornflour,almond essence,and one tbsp of milk.
Step 2
Prepare coconut milk of the grated coconut by running it in blender with 300 ml milk
Step 3
Pour the fresh coconut milk into heavy saucepan and stir in the rest of the milk.Bring the milk almost to a boil.
Step 4
Pour the milk over the egg yolks whisking constantly.Return the mixture to the pan and cook very gently ,stirring until thickened.
Step 5
Pour the custard into a bowl and cover it with greaseproof paper and leave to cool.
Step 6
Transfer into a freezer container and freeze for 3-4 hours,beating twice as it thickens.
For the sauce
Remove the stone from the mango  and put it in the food processor
Add the sugar,lemon juice and orange juice and process until smooth.
Pour it into a small jug and chill.
Serving suggestion
To serve,scoop the prepared ice cream into serving dish.
Add mango sauce and serve immediately.

Parents are joining us tomorrow morning ,neha my younger sis will be reaching delhi tomorrow midnight,nayani my cousion is here so from tomorrow its gonna be more fun,btw i have already packed my suitcase ,done with most of the shadi preparation,and ya before i forget today is our third marraige anniversary,..havent planned anything special maybe all three of us uhh sorry including Advay four we will dine out,..:-)chalo tk cre cee u guys soon,....

curry mela ke liye egg curry..gajarachi koshambri ke sath..

Have prepared egg curry many times,,but this version tried for the first time..got this recipe while browsing through cooking books,..liked it,,.so thought of giving it a try yesterday...together with plain rice and gajarachi koushambri taste was amazing,..altered few ingredients to suit our taste

here goes the recipe

ingredients

one cup of prepared paste of onion,ginger and garlic

chopped onion one

cumin seeds one tsp

bay leaf one crushed

pepper seeds half tsp

cloves half tsp

cinnamon stick one cm

black cardamom one

lemon juice one tbsp

tomato paste two tbsp

salt to taste

oil to cook

coconut dessicated three tbsp

half tsp each of red chilli,turmeric and coriander

chopped green chilli and coriander

garam masala powder half tsp

egg four boiled and cut into half

procedure

heat one tbsp of oil in the wok

add cumin seeds once they start spluttering

add chopped onion followed by cloves,pepper,bayleaf

black cardamom and cinnamomstick,keep frying till

onions start changing colour

now add the onion,garlic and ginger paste

keep stirring till paste blends well with other ingredients

add grated cocoonut and keep frying till brown in colour

now add red chilli,salt,turmeric , tomato paste and coriander powder

keep stirring till oil is seen along the sides of the wok

add half cup of water and lemon juice

bring to boil

keep stirring,add the boiled eggs and lower the flame.

add garam masala,..stir for two minutes and remove from flame

garnish with chopped green chilli and coriander leaves.

serve hot with plain rice.

pudina wala murgh

As i was busy updating the post of foodies meet in my blog,.,,hubby prepared PUDINA CHICKEN THAT DAY,..NOT MANY PICS,..AS I WAS BUSY ON COM,,.AND HE WAS ALONE IN KITCHEN..WE HAD WITH PLAIN parantha,,AND THE TASTE WAS GREAT...MAYBE CAUSE PUDINA LEAVES WERE FRESH THANKS LAKSHMI FOR PUDINA LEAVES FROM YOUR KITCHEN GARDEN...,..PREPARED FOR THE FIRST TIME...REALLY LIKED IT,...COMING TO THE INGREDIENTS

CHICKEN WASHED,CLEANED AND CUT 450 gm
water 300ml
salt to taste
oil to cook
tomato puree two tbsp
pudina leaves chopped two tbsp
onion chopped two
ginger grated one teaspoon
lemon juice of half lemon
crushed red chilli 2

procedure

boil chicken in water ,till the water evaporates and chicken becomes tender.
keep aside
heat oil in wok add chopped onions and fry till onions change their colour
now add boiled chicken to chopped onions and keep frying till chicken becomes brown fromboth side
once done add grated ginger,red chili,lemon juice,mint leaves and salt ,,keep stirring
once everything blends well,,serve hot with rice or chapati

another version of garlic chicken and cucumber raita

PREPARED another version of garlic chicken few day back,garlic is good for health and has got many health benefits few of which are-

- assists in managing high cholestrol level
-healthy antioxidant
-powerful antibiotic
medicinal properties of garllic is strongest when raw,crushed or finely chopped.

coming to the recipe of garlic chicken
ingredients are-

cloves 2
green cardamom pods 2
cinnamon stick 2.5cm
half tsp cumin seeds
onion one chopped
tomato one chopped

ginger pulp one teaspoon
grated garlic three teaspoon
salt to taste
one teaspoon each of coriander,turmeric and red chilli powder
500gm chicken
one tablespoon cream
garammasala one teaspoon
5 to 6 clove of garlic sliced
oil to cook

procedure

heat oil in wok,..
add cuminseeds followed by cloves,cardamompods and cinnamomstick
when they start spluttering add onions followed by ginger garlic pulp,turmeric,chilli and coriander powder

keep frying till u see oil along the sides ,now add salt and chopped tomatoes

once tomatoes start changing shape,add chicken and continue frying till chicken starts turning brown
now add fresh cream and garammasala,fry for a minute or two,add water if needed..cover and cook

in another vessel heat one fourth tsp of oil,..add chopped garlic,fry till golden brown
mix in the cooked chicken and serve hot.

prepared CUCUMBER RAITA along with garlic chicken,,add chopped cucumber and green chillies in the serving dish,curd,chat masala and salt..mix well cucumber raita is ready.

CHICKEN KORMA AND FEW AWARDS..

time to tell whats peeping through the rice,..its chicken korma prepared in white gravy ,chicken korma is the second dish i prepared the day Pallak had come for dinner,never thought preparing chicken korma will be so easy...with plain rice and jeera murgh,,tasted great,..

ingredients for chicken korma

25gm almonds
2 garlic clove crushed
ginger choped 2.5cm

oil to cook
675 gm chicken chopped with bone
cardamom pods 3
onion 1 chopped
2tsp cumin
salt to tatse
plain yogurt 150ml
fresh cream two tbsp

procedure

make paste of almond,ginger and garlic in 2 tbsp of water

in one tsp of oil fry chicken for 10 minutes and keep aside
in the same oil add cardamom pods,followed by onion

add the almond paste ,followed by cumin,and add salt

keep stirring,now add yogurt,..keep cooking till it mixes well
time to add cooked chicken,followed by fresh cream..

simmer for few minutes,remove from heat.
serve garnished with fresh cream chopped almonds,..

JEERA MURGH

JEERA MURGH
prepared dry version of chicken ,,for a friend of mine who had come down for dinner,..had with rice and another version of chicken,,chk my tomorrows post for the recipe
here goes the recipe of jeera murgh, before that some thoughts to share when i first heard of this recipe,,,i thought may be preparation will be like jeera alloo ,,but i was wrong...was really anxious about the taste cause my sis friend was coming home for the first time,,and my sis had told her lotz about my blog and cooking,..thank god taste was great,.and together with plain rice..and...?...taste was awesome,..even pallak liked,,:-) which was really encouraging for someone like me who is still learning cooking,..
INGREDIENTS for jeera murgh
chicken 450GM
ground cumin and coriander 1tsp
salt to taste
garam masala half tsp
green chilli,ginger,garlic chopped one tbsp
3tbsp cumin seeds
half tsp pepper seeds
cardamom pod 4
oil one tbsp
procedure
heat wok,and dry roast one tbsp of cumi seeds ,.keep aside
heta oil add remaining cumin seeds,pepper and cardamom pods
add ginger,garlic and green chilies and fry for 2 minutes

add ground coriander and salt and cook over medium heat
add chicken pieces,simmer for 20minutes,
add water if it starts sticking.
add gramamasala and dry roasted cumin seeds before serving
